COMPANY HAM CASSEROLE

This delicious dish can be made ahead of time and baked later. It's a great way to use up leftover ham. Leftovers freeze well too.

Number Of Ingredients 12

1 (8 ounce) box thin spaghetti
salt
2 tablespoons minced onions
6 tablespoons butter or 6 tablespoons margarine
6 tablespoons all-purpose flour
2 cups milk
1 cup half-and-half
1 cup chicken broth
3 cups diced leftover cooked ham
1 (10 ounce) box frozen peas
1 cup shredded sharp cheddar cheese
1/4 cup grated parmesan cheese

Steps:

  • Cook spaghetti in boiling salted water as directed on label. Drain, rinse and set aside.
  • Saute onion lightly in the butter in large saucepan.
  • Stir in flour. Off heat, stir in milk, half-and-half and broth.
  • Put back over heat. Cook, stirring, until thickened.
  • Add ham, peas and spaghetti.
  • Add salt and pepper to taste. Turn half the mixture into shallow 2-quart baking dish.
  • Sprinkle with half the cheeses.
  • Add remaining spaghetti mixture. Sprinkle with remaining cheeses.
  • Bake at 350 degrees F for 30 minutes until golden.

This recipe has been a family favorite for more than 20 years. It's a very easy dish to make and is a great way to use leftover ham.

1/4 cup chopped onion
2 tablespoons butter
10 ounces fully cooked ham, julienned (about 2 cups)
2 teaspoons all-purpose flour
1 cup (8 ounces) sour cream
1 can (8 ounces) sliced mushrooms, drained
Hot cooked noodles
Chopped fresh parsley, optional

Steps:

  • In a skillet over medium heat, saute onion in butter until tender. Add ham; cook and stir until heated through. Sprinkle with flour and stir for 1 minute. Reduce heat to low; gradually stir in sour cream. Add the mushrooms. Cook and stir until thickened, about 2-3 minutes. Serve over noodles. Garnish with parsley if desired.

2 pounds bulk pork sausage
1 cup chopped celery
1 cup chopped onion
1 unpeeled apple, diced
3 cups soft bread crumbs
1/2 cup prepared mincemeat
1/2 cup chopped fresh parsley
2 teaspoons dried thyme
1 fully cooked boneless ham (6 to 7 pounds)
1/2 cup apple jelly or honey
3 tablespoons Dijon mustard
CHUTNEY BAKED PEARS:
1 cup water
2 tablespoons lemon juice
6 ripe pears, peeled, halved and cored
1 cup chutney
1/2 cup apple juice
2 tablespoons butter, melted

Steps:

  • In a skillet, cook sausage over medium heat until no longer pink; drain. Add the celery, onion and apple; cook over low heat until celery is tender, stirring occasionally. Remove from heat; stir in crumbs, mincemeat, parsley and thyme. Mix well. , On top of ham, cut two full-length wedges, about 1 in. wide and 3/4 in. deep, 3 in. apart. Spoon about 1/2 cup of the stuffing into each wedge. Place remaining stuffing in a greased 1-1/2-qt. covered baking dish; cover and refrigerate. Remove from refrigerator after the ham has baked for 1-3/4 hours. , Place ham on a rack in a shallow roasting pan; cover loosely with foil. Bake at 325° for 2-1/4 hours. In a saucepan, heat jelly and mustard until jelly is melted. Brush some over ham; return ham to oven. Bake, uncovered, for 30 minutes, brushing occasionally with jelly mixture. Place reserved stuffing in the oven and bake covered. , For pears, mix water and lemon juice. Dip pears in water mixture; drain. Place cut side up in a greased 13-in. x 9-in. baking dish. Mix chutney and apple juice; pour over pears. Drizzle with butter. , Remove ham from oven; cover with foil and let stand 30 minutes before slicing. Bake stuffing along with pears 30 minutes longer. Baste pears occasionally.

1/2 - 1 pound(s) boneless smoked ham
3 large potatoes, peeled and thinly sliced
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
1 - 4 ounce jar diced pimentos, drained
3 - eggs, lightly beaten
1 cup(s) total (use 5 oz can evaporated milk plus 3 oz regular milk)
2 tablespoon(s) minced chives
1/4 teaspoon(s) ground coriander
1/8 teaspoon(s) ground clove
1/8 teaspoon(s) ground cinnamon
- additional minced chives to garnish

Steps:

  • Heat oven to 375°F. Grease or spray an 8" x 8" baking dish.
  • Arrange half of the potato slices in a greased 8-in. square baking dish; sprinkle with salt, pepper and half of the ham. Layer remaining potatoes and ham, then sprinkle with pimientos.
  • In a small bowl, whisk the eggs, milk, chives and herbs; carefully pour over potatoes and ham. Cover and bake at 375°F for about 40 minutes or until a knife inserted near the center comes out clean. Uncover; bake 15 minutes longer or until lightly browned on top.
  • Let dish stand for 10 minutes before cutting. Sprinkle with additional chives if desired.
  • Yield: 6 servings
  • Note: You can also substitute pork or turkey sausage for the ham or even use shredded chicken. If you use chicken, be sure to change the coriander, clove and cinnamon to poultry seasoning - this keeps the flavors balanced.

Spoon about 1/2 cup of the stuffing into each wedge. Place remaining stuffing in a greased 1-1/2-qt. covered baking dish refrigerate. Place ham in a roasting pan and cover loosely with a foil tent. Bake at 325° for 2-1/4 hours. In a saucepan, heat jelly and mustard until jelly melts. Brush some over ham return ham to the oven, uncovered, for 30 minutes, brushing occasionally with jelly mixture. Also place covered baking dish of stuffing in the oven at this time. For pears, mix water and lemon juice. Dip pear halves and drain. Place with cut sides up in a greased 13-in. x 9-in. x 2-in. baking pan. Mix chutney and apple juice pour over pears. Drizzle with butter. Remove ham from oven cover with foil and let stand 30 minutes before slicing. 1 12oz beer
1 cup brown sugar
1/2 cup Dijon mustard

Steps:

  • Place ham in roaster. reserve 1/4 cup beer. Pour remaining beer over ham and roast at 325. With approx. 45 minutes left in roasting time, combine remaining beer, brown sugar and mustard in sauce pan. Heat until smooth. Baste ham frequently for remaining 45 minutes. Let rest before slicing.
