Have this Company Cheesecake at the ready for all your guests! This easy-to-make Company Cheesecake includes both cream cheese and cottage cheese.

1 cup graham cracker crumbs
3 Tbsp. sugar
3 Tbsp. butter or margarine, melted
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 container (16 oz.) BREAKSTONE'S or KNUDSEN Cottage Cheese
1/2 cup sugar
1/4 cup flour
1 tsp. vanilla
3 eggs

Steps:

  • Heat oven to 325°F.
  • Mix crumbs, 3 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan. Bake 10 min. Increase oven temperature to 450°F.
  • Beat cream cheese and cottage cheese in large bowl with mixer until blended. Add 1/2 cup sugar, flour and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 15 min. Reduce oven temperature to 250°F; continue baking 1 hour. Run knife around rim of pan to loosen cake; cool before removing rim. Cool completely. Refrigerate 4 hours.

3/4 cup all-purpose flour
1/4 cup sugar
1/4 cup finely chopped pecans
1 teaspoon grated lemon zest
6 tablespoons cold butter
1 large egg yolk
1/2 teaspoon vanilla extract
FILLING:
5 packages (8 ounces each) cream cheese, softened
1-3/4 cups sugar
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
4 large eggs
2 large egg yolks
1/4 cup heavy whipping cream

Steps:

  • In a bowl, combine the flour, sugar, pecans and lemon zest, cut in butter until crumbly. Combine egg yolk and vanilla; stir into flour mixture. Press onto the bottom of a greased 10-in. springform pan. Bake at 400° for 8-11 minutes or until edges are lightly browned. Cool on a wire rack., Fill a 13x9-in. baking dish with 8 cups water; place on lowest oven rack. Reduce heat to 325°., In a bowl, beat cream cheese until smooth. Gradually beat in sugar. Add the flour, vanilla and salt. Lightly beat eggs and egg yolks; add to cream cheese mixture just until blended. Beat in cream just until combined. Pour over crust. , Bake on middle rack at 325° for 70-75 minutes or until center is almost set (top of cheesecake will crack). Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen. Cool 1 hour longer. Refrigerate overnight. Remove sides of pan.

Crust:
1 cup sifted all purpose flour
1/4 cup sugar
1 teaspoon grated lemon peel
1/2 cup butter
1 slightly beaten egg yolk
1/4 teaspoon vanilla
Filling:
5 8-ounce packages cream cheese
1/4 teaspoon vanilla
3/4 teaspoon grated lemon peel
1 3/4 cups sugar
3 tablespoons all purpose flour
1/4 teaspoon salt
4 or 5 eggs (1 cup)
2 egg yolks
1/4 cup whipping cream

Steps:

  • Crust: Combine flower, sugar, and lemon peel. Cut in butter until mixture is crumbly. Add egg yolk and vanilla. Blend thoroughly. Pat 1/3 of dough on bottom of 9-inch spring form pan with sides removed. Bake in 400 degree oven about 8 minutes or till golden; cool. Attach sides to bottom, butter and pat remaining dough on sides to a height of 1 3/4 inches. Filling: Beat room temperature cream cheese until creamy. Add vanilla and lemon peel. Mix lemon peel, sugar, and flour, gradually add to cheese. Add eggs and egg yolks one at a time, beating after each just to blend. Gently stir in whipping cream. Turn into crust lined pan. Bake at 450 degrees for 12 minutes; reduce heat to 300 degrees and continue baking 55 minutes. Remove from oven; cool. Loosen sides with spatula after 1/2 hour. Remove sides at end of 1 hour. Allow to cool 2 hours longer. Glaze with your choice of pie fillings.
