Steps:
- Crust: Combine ingredients and press into a 10 inch pie pan (deep pan) Filling: Peal and dice peaches. Place in a bowl and sprinkle with 1/4 cup sugar and let stand. Combine 3/4 cup sugar and all other ingredients. Fold in sour cream. Stir into peaches and pour into crust. Bake 400F 15 mins. Then 350F 20 mins. Remove and add sprinkle topping on the pie. Bake at 400F for another 10 mins. Cool and enjoy!
COLORADO PECAN PIE
Steps:
- Bring 1/2 C. sugar + corn syrup to a boil, stirring occasionally--stir in butter. Meanwhile, in a medium size mixing bowl, beat eggs just until yolks & whites are combined. Slowly pour hot mixture over beaten eggs, stirring vigorously. Stir in salt vanilla and pecans. Mix the flour + 1 Tbsp. sugar & sprinkle over bottom of unbaked pastry shell. Pour filling in and bake 350 degrees (glass) or 375 degrees (metal) for 45 min. Cool pie. Whip cream with 2 Tbsp (or more) powdered sugar and serve on or with pie.
COLORADO MUD PIE RECIPE

Steps:
- Crush oreos in food processor. Mix with 1/3 cup melted butter. Grease 9 x 13 inch pan and put oreo mix in bottom of pan. Add softened chocolate chip mint or coffee ice cream and spread on top. Re-freeze. Chocolate sauce: Melt 3 ounces unsweetened chocolate with 2 Tb. butter, 1 1/2 cups evaporated milk, cok and stir untilthickened. Remove from heat and add 1/2 tsp vanilla and cool a little. Pour over ice cream and re-freeze. Mix 8 oz. of whipped cream...(Cool Whip) .... with 1/2 oz. of liquor. Spread over hot fudge. Sprinkle with slivered chocolate...unsweet or semi-sweet. Cover with saran wrap or Al foil and freeze until hard.
COLORADO PIE
This is my adopted recipe and I haven't made it yet. This main dish pie is a family favourite from The More-with-Less Cookbook. Make 2 pies and freeze one for a busy weeknight.

Steps:
- Prepare pastry for double crust pie.
- Line 9 inch pie plate with half the pastry.
- Roll out top crust.
- Preheat oven to 400 degrees F.
- Brown ground beef and onions in frying pan.
- Stir in remaining ingredients.
- Pour mixture into pastry-lined pie plate.
- Add top crust and cut slits in it.
- Bake for 25 minutes.
- Freezes well.

- Slice peaches into a bowl, sprinkle with 1/4 cup sugar. Let stand while preparing rest of filling. Combine 3/4 cup sugar, flour, egg, salt and vanilla. Fold in sour cream. Stir into peaches and pour into crust. Bake 15 minutes at 400 degrees then bake at 350 degrees for 20 minutes. Sprinkle topping over pie. Bake at 400 for 10 minutes. Best peach pie you have ever tasted.
