BRAISED COLLARD GREENS, MUSTARD GREENS, AND RED SWISS CHARD

Steps:
- In a large pot heat oil and bacon over high heat until bacon is well browned. Stir in garlic and cook 45 seconds. Deglaze with chicken stock and vinegar. Add sugar and greens and partially cover. Lower heat to medium and cook for 30 minutes. Season with salt and pepper, to taste.
COLLARD AND MUSTARD GREENS

- Fill a 4-quart pot halfway with water and season, to taste, with salt and pepper. Bring water to a boil. Meanwhile, chop all greens into medium pieces. Place greens into boiling water, remove pot from heat, and let sit 2 to 3 minutes. Drain and let cool. Heat oil in a large saute pan and cook garlic gently until it begins to turn light brown, being careful not to burn. Add blanched greens, vinegar, sugar 2 teaspoons salt and 2 teaspoons pepper.

TURNIP, MUSTARD, AND COLLARD GREENS WITH BACON

Steps:
- Saute bacon in a large stockpot over high heat for 5 minutes. Add onions and saute, stirring often, until transparent, about 5 minutes.
- Add turnip, collard, and mustard greens, then pour in chicken broth. Add water, if needed, to cover. Stir in sugar, salt, and garlic powder. Bring to a boil.
- Reduce heat and simmer until greens are tender, about 3 hours.

MUSTARD AND COLLARD GREENS
Steps:
- In a large skillet, cook the bacon in the olive oil, until rendered but not totally crispy. Add the greens and season with salt and pepper. Toss to coat in the oil. Add the broth and cook until wilted. Add more broth, if necessary.
- Re-season, to taste. Serve immediately.
SLOW COOKED COLLARD AND MUSTARD GREENS

- 1. in a large stock pot bring vegetable stock, chicken and vegetable base, onion, crushed red pepper flakes,sugar,apple cider vinegar, to a boil.
- 2. taste the broth to make sure it is seasoning well, just in case you need to add addtional seasoning.
- 3. brown your diced proscuitto then add it to the broth. Mix the green and cook on medium heat for 1hour 1/2 are till green are tender.
SAUTEED COLLARD GREENS AND BLACK-EYED PEAS WITH DIJON MUSTARD
This is one my mother, who's a very good cook, found in her local paper and adapted. I've not made it yet, but she swears by it.

Steps:
- Remove coarse stems from greens and discard. Wash and spin dry, then cross cut into 1" square pieces.
- Drop greens into a pot of boiling, lightly salted water. Cook uncovered 5-10 minutes, or until just tender. Timing will depend on the age and size of the greens. Very young greens will need only 1 or 2 minutes. Drain thoroughly.
- Meanwhile, in a large non-aluminum skillet, melt butter and oil over medium heat. Add onion, stirring frequently, 5 minutes or until softened and slightly browned. Add black-eyed peas and drained greens. Toss to coat.
- In a small bowl, combine sour cream, mustard (or horseradish if using), and cayenne pepper with a whisk or fork. Add to peas and greens and cook, stirring frequently, 3-5 minutes or until liquid has almost evaporated. Season with salt and pepper and serve warm. Have a little more sour cream/mustard (or horseradish) to serve on the side.
