This salad is like no other. I "threw" it together one day, using what I had in the refrigerator/pantry. I didn't realizing how big of a hit it would become. I am constantly asked to make it, no matter what the occasion. This salad will go nicely with any sort of meal. I've experimented with other Poppy seed dressings, but Brianna's is the best tasting. I would not recommend using any other dressing for this salad! Enjoy!

Number Of Ingredients 6

1 (5 ounce) bag of spring mixed salad greens
1/2 pint fresh raspberry (do not use frozen)
1 (11 ounce) can mandarin orange segments, drained
1 cup of crumbled feta cheese (or regular container)
1 1/2 cups walnut pieces, toasted
6 -9 ounces brianna rich poppy seed dressing

Steps:

  • In a non-stick frying pan, toast the walnuts on low heat, stirring occasionally (they will be toasted as soon as they give an arroma) Set aside.
  • In a large bowl, rinse and drain salad mix and refrigerate.
  • Just before serving, drain salad mix again to make sure it is completely dry.
  • Toss all ingredients together and serve.
  • note: use enough dressing to cover the ingredients, but not too much that the salad will become"mushy".

9 ounces each all-purpose and cake flour
2 teaspoons baking powder
2 sticks (8 ounces) unsalted butter, room temperature
21 ounces sugar
3/4 teaspoon salt
2 teaspoons vanilla extract
1 cup egg whites, room temperature
1 1/2 cups milk, room temperature

Steps:

  • Pre-heat the oven to 325 degrees. Grease and flour 2 (8 or 9)-inch round pans. Sift together the flours and baking powder.
  • Cream the butter and sugar in a large mixer bowl until fluffy. Add the salt and vanilla and mix well. Add the eggs, scraping the sides of the bowl, and mix until light and fluffy. Add the flour mixture in 3 batches alternating with the milk, mixing after each addition and ending with the flour. Mix just until combined. Do not overmix.
  • Pour the batter into the prepared pans. Bake 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Cool the cakes in the pans on wire racks for 15 minutes. Invert the cakes onto the racks and remove the pans. Let the cakes cool completely. Wrap and refrigerate before decorating.

This tangy potato salad is beautiful served at room temperature on a hot summer night. Tastes even better the next day. Great for those who want a potato side that isn't too heavy.

6 red potatoes, boiled in skins
1/3 cup apple cider vinegar
1/2 cup olive oil
1 teaspoon Dijon mustard

1 small sweet onion, thinly sliced

Steps:

  • Slice potatoes and place in bowl.

1 lb boneless, skinless chicken breast
½ cup all-purpose flour
3 large eggs
2 cups bread crumbs
2 tablespoons fresh flat-leaf parsley, chopped
1 clove garlic, minced
2 tablespoons milk
kosher salt, to taste
black pepper, to taste
½ cup grated parmesan cheese
2 tablespoons unsalted butter
olive oil, for frying
lemon wedge, for serving

Steps:

  • Slice the chicken breast in half lengthwise to create thinner cutlets. Using the bumpy side of a meat mallet, pound the chicken until ¼-inch (6 mm) thick.
  • Add the flour, eggs, and bread crumbs to 3 separate, shallow dishes.
  • To the dish with the eggs, add the parsley, garlic, and milk. Season with salt and pepper. Mix with a fork to combine.
  • Add the Parmesan cheese to the bread crumbs and stir to combine.
  • Working 1 piece at a time, coat the chicken cutlets in the flour, shaking off any excess, then the egg mixture, then the bread crumbs. Set the coated chicken on a baking sheet lined with parchment paper and refrigerate for 1 hour.
