COLD AVOCADO CORN SOUP WITH CILANTRO OIL



Cold Avocado Corn Soup With Cilantro Oil image

Crema - a Mexican cultured heavy cream similar to sour cream - is often drizzled over enchiladas and tostadas and added to side dishes and sauces. Here it lends a tangy balance to rich avocado and sweet corn.

Number Of Ingredients 16

For soup
1 fresh or frozen ear of corn, shucked
4 cups plus 2 tablespoons water
1 garlic clove, smashed
1 1/2 teaspoons salt
1 1/4 cups chopped white onion
1 fresh serrano chile, stemmed and coarsely chopped (including seeds)
2 firm-ripe California avocados (1 to 1 1/4 lb total)
3 tablespoons fresh lime juice
1/4 cup crema or sour cream
For cilantro oil
1 cup coarsely chopped fresh cilantro
1/4 cup olive oil
1/2 teaspoon salt
Special Equipment
a 3/4-inch melon-ball cutter

Steps:

  • Make soup:
  • Roast corn on rack of gas burner over high heat, turning occasionally with tongs, until kernels are charred in spots, 4 to 5 minutes. (Alternatively, heat a dry well-seasoned cast-iron skillet and roast corn over moderately high heat, turning occasionally, about 10 minutes.) Transfer corn to a cutting board and, when cool enough to handle, cut kernels from cob with a sharp knife, then cut cob into thirds.
  • Bring kernels, cob pieces, 4 cups water, garlic, salt, and 1/2 cup onion to a boil in a 3-quart saucepan and boil until liquid is reduced to about 3 cups, about 20 minutes. Remove from heat and cool, uncovered. Discard cob pieces.
  • Purée corn mixture along with chile and remaining 3/4 cup onion in a blender, then pour through a fine-mesh sieve into a bowl, pressing hard on and then discarding solids. Return broth to cleaned blender.
  • Quarter, pit, and peel 1 avocado, then add to blender with 2 tablespoons lime juice and purée until smooth. Transfer soup to a bowl and cover surface with plastic wrap. Cover bowl with plastic wrap and chill soup at least 1 hour.
  • Prepare cilantro oil while soup chills:
  • Purée cilantro, oil, and salt in cleaned blender, scraping down sides of blender several times. Pour oil into cleaned fine-mesh sieve set over a bowl and let drain 15 minutes (do not press on solids). Discard solids.
  • Assemble soup:
  • Halve and pit remaining avocado and scoop small balls from flesh with melon-ball cutter, then toss gently with remaining tablespoon lime juice in a bowl.
  • Whisk together crema and remaining 2 tablespoons water in a small bowl until smooth.
  • Season soup with salt and ladle into 6 shallow soup bowls. Divide avocado balls among bowls, then drizzle with crema and cilantro oil.

4 packages (10 ounces each) frozen corn kernels, thawed
1 cup low-fat yogurt
1 cup milk
1/3 cup fresh lime juice (from 2 or 3 limes)
1 teaspoon ground coriander
Pinch cayenne, pepper
1 pound cooked frozen shrimp, thawed, roughly chopped, reserving 4 whole shrimp
Coarse salt and ground pepper
1 cup grape tomatoes, halved
1 avocado, halved, pitted, peeled, and diced

Steps:

  • In a blender, working in two batches, puree corn, yogurt, milk, lime juice, coriander, and cayenne. Strain through a fine-mesh sieve into a large bowl, pressing to extract as much liquid as possible; discard solids. Stir in chopped shrimp, and season with salt and pepper.
  • Serve garnished with tomatoes, avocado, and reserved whole shrimp.

2 ripe Haas avocados
1/2 cup fresh lime juice
6 cups defatted chicken stock
Kernels from 6 ears fresh corn on the cob
1 jalapeno pepper, seeded and minced
Salt to taste
2 tablespoons chopped coriander leaves
Baked white corn tortilla chips

Steps:

  • Split one of the avocados, remove the pit, peel and dice it. Place it in a food processor with the lime juice. Process until smoothly pureed.
  • Place the avocado puree in a saucepan. Stir in the stock. Bring to a simmer. Stir in the corn and jalapeno pepper and cook five minutes.
  • Split the second avocado and remove the pit and the peel. Quarter the halves and slice them thin. Add the sliced avocado to the soup. Remove from the heat, cover and refrigerate until cold. To serve, check seasoning and add the coriander. Serve with tortilla chips on the side.

1 teaspoon vegetable oil
1/2 yellow onion, finely chopped (about 1 cup)
1/2 poblano chile, seeded and finely chopped (about 1/2 cup)
1 large garlic clove, minced
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/8 teaspoon ground turmeric
2 1/4 cups corn kernels (about 4 ears)
3 cups nonfat buttermilk
3/4 teaspoon coarse salt

Steps:

  • Heat oil in a medium saucepan over medium heat. Add onion, poblano chile, and garlic; saute until onion is soft and translucent and chile and garlic are tender and fragrant, about 5 minutes.
  • Add coriander, cumin, and turmeric, and cook until they are toasted and fragrant, about 2 minutes. Add corn, and saute until kernels are lightly browned, about 5 minutes. Remove from heat, and let cool slightly.
  • Transfer 1 1/2 cups corn mixture to the bowl of a food processor fitted with the metal blade, and add buttermilk and salt; puree until mixture is smooth. Transfer to a large bowl or plastic storage container; stir in remaining corn mixture. Cover with plastic wrap, and place in refrigerator until soup is well chilled, at least 2 to 3 hours. Remove from refrigerator; ladle into bowls, and serve.

4 plump and generous ears sweet corn, shucked with all silk removed
2 medium sweet onions, peeled and thinly sliced
2 quarts water
Salt to taste
Fresh basil, tarragon, chervil or other fresh soft herb for garnish, optional

Steps:

  • 1. Bring two quarts water to boil. Add corn. Cook for two minutes. Remove. Reserve cooking water. 2. Run corn under cold water to cool. With a sharp knife, slice all corn kernels away from cob. Using the blunt side of your knife's blade, scrape along the naked cob to extract any corn nuggets and milk. Reserve and set aside. A dough scraper is a handy tool here to scoop up the milky mass. 3. Return corn cobs along with onion to cooking water. Simmer for 30 minutes. 4. Remove cob, taking care to pull off and save cooked onions. Strain out onions reserving both the onions and corn stock. 5. Add reserved corn and onions to blender jar. Add half of stock and blend and blend and blend until soup is creamy and smooth. Add more stock as necessary to blender and obtain a soupy consistency. Add stock slowly as you can always add more, but once it gets too thin there's not much you can do except make more to add to your too thin batch. 6. Add salt to taste remembering that is things get cold, saltiness reduces. Chill until cold, at least two hours. Taste for salt and adjust to taste. Garnish with a little chopped fresh herbs. You can also serve this in a demitasse or sake cup as an hors d'oeuvres. Half the recipe to serve 12-15, depending on size of your cups. I served mine with a sweet and hot pepper and red onion relish, but that's a blog for tomorrow's post. Check in early-before you head to your local farmers' market.
