1 (10 ounce) package frozen whole-kernel corn, thawed
¼ cup diced yellow bell pepper
¼ cup diced red bell pepper
¼ cup diced green bell pepper
½ red onion, chopped
¼ cup chopped cucumber
1 small tomato, chopped
½ cup mayonnaise, or to taste

Steps:

  • In a large bowl, mix together the corn, yellow pepper, red pepper, green pepper, red onion, cucumber, tomato and mayonnaise. Adjust the amount of mayonnaise to your liking. Chill until serving.

Secret Recipe Cold Corn Salad image

I definitely recommend doubling this recipe as it is so good that you won't have a kernel left. If you are serving this to kids you don't have to put in the red onion and if you have trouble finding sour pickles a deli will always sell you some sour pickle juice if you just ask. Due to the pickle juice, this will develop a sour taste if left overnight so use within a couple of hours of preparing. Enjoy!

16 ounces corn (if using frozen then steam briefly)
1/2 cup hellman's light mayonnaise or 1/2 cup olive oil mayonnaise
1/4 cup sour pickle juice
1/2 of large red bell pepper, finely diced
1/2 red onion, finely diced
1 cucumber, peeled, seeded, and finely diced
1 tablespoon fresh dill or 1/2 teaspoon dried dill
garlic powder, to taste
salt and pepper, to taste

Steps:

  • Steam corn if using.
  • Drain well.
  • Dice vegetables and add to the corn.
  • Add remaining ingredients and mix well.
  • Chill for 30 minutes before serving.

2 cups instant quick cooking couscous
2 cups really hot water or stock
1 cup roasted corn medley (frozen or canned combination of roasted corn, roasted red peppers, roasted poblano peppers and onions, mild corn salsa works well too)
1/3 cup toasted almond silvers
2 tablespoons chopped parsley
4 green onions, chopped
1/4 cup black beans, canned (drained and rinsed)
Dressing:
1/4 cup red wine or apple cider vinegar
1/4 cup sugar
1/2-3/4 cup olive oil, depdening on how tart you like your dressings
2 tablespoons chopped basil
1 teaspoon minced garlic
salt and pepper to taste

Steps:

  • Place the couscous in a container and pour the hot water/stock on top, cover and let sit for 15 monutes. Fluff the couscous and stir in the remaining ingredients(corn medley, almonds, parsley, green onions and black beans). In a 1 cup jar, place all the ingredients for the dressing and shake until combined. Pour over the couscous and toss to combine. Chill and serve.

If you are traveling with this dish, use the corn partially thawed. If you are serving immediately, use corn completely thawed. This is a good alternative to potato salad at cookouts.

2 bunch green onions, chopped
6 slice bacon, fried crisp and crumbled
1 c colby cheese, grated
2 jalapeno peppers, seeded and chopped
1 c peppercorn ranch dressing
1 clove garlic, crushed

Steps:

  • 1. In a large mixing bowl, combine all chopped vegetables with frozen corn.
  • 2. Stir in the dressing to coat vegetables well.
  • 3. Stir in grated cheese. Sprinkle crumbled bacon on top.
  • 4. The original dressing calls for Ranch Dressing, original. I just like the extra zing that the peppercorn dressing adds.
