COLD BEET SALAD
This grated beet wonder will be sure to spice up any meal. This is a sweet and savory salad with a fine crunch form the walnuts. This recipe can be a little messy to work with because the boiled beets tend to dye everything red, so be sure that you are equipped with an apron.

Steps:
- Place the beets into a large saucepan with enough water to cover the beets by 1 inch. Bring to a boil. Reduce heat to medium-low, cover, and simmer until the beets are easily pierced with a fork, about 40 minutes; drain. Chill beets in refrigerator until cool enough to handle.
- Peel the beets and grate into a large bowl. Stir the prunes, walnuts, and pickle with the beets. Add the mayonnaise and stir until all the ingredients are evenly coated. Chill completely before serving.

- Open cans of beets and string beans and discard the water from each Slice the onion into circles and separate each circle into smaller ones Crush and chop garlic Add spices and dressing Add to large serving bowl and mix everything together. let sit at least 1/2 hour before serving. Serve right away or preferably Keep in refrigerator till cold. Serves up to 8 people This very quick side dish is easy to make and can be served right away or better at least 1 hour refrigerated to blend the taste of the spices and dressing...Before serving, mix well from bottom of bowl to blend spices and dressings. You can sit the bowl into a larger ice-filled bowl when seving outdoors.
WARM OR COLD BEET SALAD
Simple beet salad passed down from my mom. Ingredients are approximate since she never cooks from a recipe!

Steps:
- Cook beats in boiling watter for approximatley 20-30 minutes, or until soft.
- Peel and grate beets. Add chopped onion, grated apple and grated pickle.
- Season with salt, lemon juice and sugar to taste.
- Either serve immediately or place in fridge until ready to use.
