DIET COKE CAKE

A friend in college gave me this recipe, if you can even call it that! Since then, I've shared it with pretty much everyone I know: friends, coworkers, family, EVERYONE! Finally, a relatively healthy alternative to chocolate cake! This cake comes out so moist and delicious! For those of you who are worried, it doesn't taste like Diet Coke - I promise!

1 (18 ounce) chocolate cake mix (I prefer a "fudge" cake mix with pudding in the mix, but this recipe will work with whatever you hav)
1 (12 ounce) can Diet Coke
1 (8 ounce) container Cool Whip Free or 1 (8 ounce) container Cool Whip Lite

Steps:

  • Preheat oven to temperature on cake mix box.
  • Grease a 9x13 pan.
  • Combine cake mix and Diet Coke in large mixing bowl. Mix according to directions on box. (For example, my favorite brand says to mix at medium speed for 2 minutes!).
  • Pour into 9x13 pan. Bake 5 minutes less than the recommended time on the box. For example, if the box says to bake a 9x13 cake for 28 minutes, bake your Diet Coke Cake for 23. Cake is done when a fork or toothpick inserted in the middle of the cake comes out clean.
  • Cool in pan on wire rack.
  • When cooled, frost with Cool Whip topping.
  • Refrigerate leftovers. (I never have any!).
  • Enjoy!

Nonstick cooking spray, for the cake pan
One 15.25-ounce box devil's food cake mix, such as Duncan Hines
One 3.9-ounce package instant chocolate pudding mix
4 large egg whites
3/4 cup cherry cola, such as Cherry Coke ®
1/2 cup vegetable oil
1/2 cups finely chopped maraschino cherries
5 1/4 cups confectioners' sugar
6 sticks (1 1/2 pounds) unsalted butter, at room temperature
1/4 teaspoon kosher salt
5 tablespoons maraschino cherry liquid plus 1 cup finely chopped maraschino cherries
8 ounces semisweet chocolate, chopped
3/4 cup heavy cream
1 1/2 cups whole maraschino cherries with stems

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Coat two 8-inch round cake pans with cooking spray, then line with parchment and spray the parchment.
  • Combine the cake mix and pudding mix in a stand mixer fitted with the paddle attachment and mix on low speed to blend. With the mixer still running, add the egg whites, cherry cola and vegetable oil and mix until combined. Raise the speed to medium and mix until increased in volume, lighter in color and smooth, about 5 minutes. Fold in the maraschino cherries. Divide the batter between the prepared baking pans; smooth into even layers using an offset spatula.
  • Bake until a skewer inserted in the center comes out clean and the edges pull away from the sides of the pan, about 15 minutes. Transfer to a rack and let cool in the pans, about 10 minutes, then turn out onto racks and let cool completely, about 1 hour.??
  • For the frosting: Mix the confectioners' sugar, butter and salt together in a stand mixer fitted with the whisk attachment. Mix on low speed until well blended, then increase the speed to high and whip until light and fluffy, 3 to 5 minutes. Add the maraschino cherry liquid and continue to whip until bright pink and spreadable. Add the chopped cherries and mix on low speed until evenly distributed.
  • Using a serrated knife and sawing in long, even strokes, carefully halve the cake layers horizontally. Place 1 layer, cut-side up, on a platter or cake stand; spread 1 1/2 cups frosting on top. Stack another cake layer on top and spread another 1 1/2 cups frosting on top. Repeat with the remaining 2 cake layers, then cover the top and sides with a thin layer of frosting (this is the crumb coat) and use a bench scraper or large offset spatula to smooth out the sides and top (it's okay if some cake shows through). Refrigerate 15 minutes, then add another 1/2-inch layer of frosting to the top of the cake and smooth out to make a perfectly flat top. Refrigerate until ready to cover with ganache.
  • For the ganache: Meanwhile, place the chocolate in a heatproof bowl and heat the cream in a small saucepan over medium-high heat until beginning to boil. Pour the cream over the chocolate and let sit, stirring occasionally, until the mixture is completely smooth and the chocolate is melted, about 5 minutes. Let cool 30 minutes, then pour over the chilled cake so that the top is completely coated and chocolate drips decoratively down the sides. Let set at room temperature 30 minutes, then top with the whole cherries in the center of the cake and serve.

  • Sift Together:.
  • 2cups flour or cake flour with 2 cups sugar

  • Mix in a saucepan and bring to a boil
  • 2 Sticks Margarine or butter, 3 TBLS Cocoa, and 1 cup coke.
  • Pour this over the dry ingredients you sat aside. and mix in:.
  • 1/2cup buttermilk w/1TSP soda; 2 well beaten eggs; 1 TSPS vanilla; 1 1/2cups minature marshmallows.
  • Bake 350 for 30 minutes.
  • When the cake is half done begin making the
  • icing.
  • Mix:.
  • 1/2cup Butter or Margarine; 6 TBLS Coke; 3 TBLS Cocoa.
  • Bring to a boil and slowly add the box of powdered sugar (and if you like 1 cup nuts).
  • Once Icing is mixed well and cake is done pour the hot icing over the hot cake.

My husband requests this for his birthday cake every year. My MIL says it's even better than Cracker Barrel! Imagine that, a compliment from the MIL! This cake is amazing warm served with vanilla ice cream but I'm told it's even better the next day.

2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1 cup butter
1 cup cola, beverage

  • Preheat oven to 350°F.
  • Spray a 9x13 glass pan with nonstick spray.

  • In a small saucepan, combine 1/2 cup butter, 3 tablespoons cocoa powder and 9 tablespoons cola beverage. Whisk together. Heat to boiling.
  • Remove from heat, stir in 1 teaspoon vanilla.
  • Pour over 4 cups confectioners' sugar.
  • Mix well with a whisk.
  • Assembly:.
  • Remove cake from oven.
  • Immediately frost with marshmallow cream. Go slow. This will prevent tearing the cake. As the fluff warms a bit it will spread easily.
  • Slowly pour warm coco-cola frosting over marshmallow fluff.
  • It's best to let this cake cool for about an hour before cutting into it.

I get so excited just thinking about this cake! It is so simple to make, especially when camping. All your hungry campers will be drooling when they smell yummy spice cake wafting through the air!!! This recipe is so versatile...we have made it with yellow cake or chocolate cake and cherries, raspberries, or peaches the list goes on and on! I'm sure you could bake this in your oven at home also at 350 degrees in a cake pan.*TIP* Line your dutch oven with parchment paper; one sheet horizontal and another vertical to cover any empty space and press to the sides & bottom as close as you can. Make sure that the paper hangs over the dutch oven. Add ingredients as usual and bake, when done just throw away the paper and no clean up, YAY!

2 (20 ounce) cans apple pie filling
1 (12 ounce) can Coke
1/4 cup margarine or 1/4 cup butter, melted
1/4 cup brown sugar
1 (8 ounce) container Cool Whip, I use the Cool Whip in a spray can

Steps:

  • Start burning 21 briquettes for a 10" dutch oven, if u are using a bigger oven you will need to add more *remember always have more on top then bottom when baking*.
  • Pour melted margarine or butter in dutch oven, if you have no way to melt it just cut into pieces and place around bottom evenly.
  • Sprinkle brown sugar evenly over butter.
  • Add both cans of apple pie filling.
  • Open cake mix and add it (dry) on top of pie filling.
  • Pour can of coke over cake mix.
  • I always lightly stir in coke to the cake mix after pouring (be careful not to mix in apples) but this step is not necessary.
  • Cover with lid.
  • Put 8 briquettes on bottom of dutch oven and 13 on top, this should equal about 350 degrees for a 10" dutch oven.
  • Bake for about 50 min to an hour, or until toothpick comes out clean when inserted in the middle.
  • Scoop out heaping servings and top with Cool Whip, we use the Cool Whip in the spray can.
  • ENJOY!

1 box cake mix, devils food
1 jar(s) maraschino cherries 10oz drained (1/4 cup juice reserved)
1 c cherry coke
1/2 c vegetable oil
3 eggs
12 oz container whipped vanilla frosting
1 c marshmallow cream
24 maraschino cherries with stems

Steps:

  • 1. Preheat oven 350 degrees. Grease and flour 13x9 cake pan. Chop up cherries reserving 1/4 cup of the juice.
  • 2. In a large bowl mix cake mix, coke, cherry juice, oil and eggs on med speed for 2 mins. Stir in chopped cherries.
  • 3. Pour into pan and bake for 35 mins or until toothpick comes out clean. If making cupcakes fill 3/4 of the way full and bake 18-21 minutes. Makes 24 cupcakes. Let cool completely.
  • 4. For frosting mix whipped frosting and marshmallow cream until smooth. Top each piece of cake or cupcakes with a well drained maraschino cherry.

  • 3. For the frosting add the butter and cocoa to a bowl. Beat in the coke chocolate syrup and vanilla. Slowly beat in the powdered sugar until the it reaches the desired consistency
  • 4. Spread on cooled cake and drizzle the caramel topping over top and serve

3 Tbsp cocoa
1 c coca cola (the real thing!)
2 c sugar
2 c flour
1/2 c buttermilk
1 tsp baking soda

TOPPING
1/2 c butter
3 Tbsp cocoa
6 Tbsp coke
1 lb powdered sugar

  • 1. MIX BY HAND! Sift flour and sugar together in large bowl.
  • 2. Combine butter, shortening or oil, coke, cocoa and heat until butter is melted. Pour over flour mixture and stir well.
  • 3. Add buttermilk, baking soda, beaten eggs, vanilla and marshmallows. Mix well and spoon into well greased 13x9 inch pan. Marshmallows will tend to gather together in one section - distribute throughout pan. Bake at 350ºF for 45 minutes or until cake tests done. Spread topping on hot cake.
  • 4. TOPPING DIRECTIONS: About 5 minutes before cake is done, combine butter, coke and cocoa in a sauce pan and bring to boil. Stir in remaining ingredients and pour over hot cake while it is still hot in the pan. Topping will be thin, but it will thicken. Leave in pan until cooled.

1 (12-oz) can coca cola

Steps:

  • Preheat oven to 350°F. Pour cake mix and can of coke into a large bowl and mix until there are no lumps in the batter. It may be easier to use a mixer because it took me a while to get out all the lumps with a hand whisk.
  • Line a 9 x 13-inch pan with parchment paper. Pour batter into pan. Bake for approximately 35 minutes or until knife inserted comes out clean. Cool before cutting. Cake crumbs do fall apart easily so cut carefully with a sharp knife. You can also bake into individual cupcake liners to make it less messy.
