This Aromatic Thai Poached Cod Takes Just 30 Minutes image

Mildly spicy Thai red curry paste adds a deliciously aromatic flavor and a gorgeous pink hue to the coconut milk broth. Cooking the bok choy separately while the cod poaches in the curry keeps it bright green and crisp-tender. Change it up with halibut steaks or even a couple pounds of mussels. If you can't find baby bok choy, thinly sliced white or green chard is a great substitute. Serve with a crusty whole-grain baguette or roll to soak up the extra sauce and a crisp glass of Riesling.

Yield Serves 4 (serving size: 6 oz. cod, 1 cup vegetables, and 3/4 cup broth)

Number Of Ingredients 15

1 tablespoon canola oil
1/2 cup thinly sliced shallots
1 (2-inch) piece fresh ginger, peeled and thinly sliced (about 2 Tbsp.)
2 garlic cloves, minced (about 2 tsp.)
2 teaspoons Thai red curry paste
1/2 cup dry white wine
2 (14-oz.) cans light coconut milk, well shaken
3 tablespoons fresh lime juice
3/4 teaspoon fish sauce
3/4 teaspoon kosher salt, divided
4 (6-oz.) skinless cod fillets
1 tablespoon sesame oil
5 cups thinly sliced baby bok choy (about 10 oz.)
1/4 cup cilantro sprigs
8 lime wedges

Steps:

  • Heat canola oil in a 4-quart Dutch oven over medium-high. Add shallots, ginger, and garlic; cook, stirring often, until shallots are tender, about 5 minutes. Stir in curry paste, and cook until fragrant, about 1 minute. Stir in wine, and cook until liquid almost evaporates, 2 to 3 minutes. Add coconut milk, lime juice, fish sauce, and 1/2 teaspoon salt. Cover and cook until the mixture comes just to a simmer, 5 to 7 minutes.
  • Sprinkle remaining 1/4 teaspoon salt over fish; place fillets in a single layer in simmering liquid in Dutch oven. Cover and cook until fish flakes easily with a fork, 7 to 9 minutes.
  • Meanwhile, heat sesame oil in a large skillet over medium-high. Add bok choy; cook, stirring often, until browned and tender, about 6 minutes.
  • Using a spatula, transfer fish to 4 bowls. Ladle broth evenly over fish; add bok choy. Garnish with cilantro, and serve with lime wedges.

4 individual cod fillets
Salt & pepper
1 1/2 cups coconut milk
2 teaspoons grated fresh ginger
2 teaspoons curry paste
Chopped fresh cilantro (amount to taste)

Steps:

  • Preheat oven to 400˚F (200˚C). Season cod fillets with salt & pepper.
  • In a small saucepan over medium-high heat, whisk together coconut milk, ginger and curry paste until smooth. Pour a thin layer of sauce into a large baking dish. Place fish on top, and pour remaining sauce into the pan.
  • Bake for 20 minutes (cod should be fully opaque and flakes easily with a fork).
  • Top fish with cilantro and serve with a generous portion of sauce.

14 ounces light coconut milk
3 teaspoons green curry paste
1 Thai peppers, seeded and minced
2 inches segment fresh ginger, coarsely grated
2 stalks lemongrass, tough outer leaves removed and bulbs cut into 3-inch segments and split length-wise
1/2 cup Thai basil, cut into thin strips

fresh cilantro (to garnish) (optional)
hot chili oil (to garnish) (optional)

Steps:

  • Preheat oven to 400°F.
  • In medium pan, whisk together coconut milk, curry paste, and minced pepper.
  • Holding ginger over pan, squeeze to extract juice into pan; discard solids. Add lemongrass segments. Cook over medium heat, uncovered, 6 to 8 minutes, until slightly thickened.
  • Stir in basil, and season with salt and white pepper.
  • Pour a small amount of sauce into an 8-inch-square baking dish. Arrange fish on sauce, and pour remaining sauce over fish. Cover dish with foil and bake at 400°F until fish is opaque and flaky, 20 to 25 minutes.
  • Spoon a bit of sauce into the center of four individual plates.
  • Place a piece of fish on each puddle, and spoon additional sauce on top of each portion of fish.
  • Garnish with cilantro sprigs and drops of hot chili oil around plate, if desired, and serve immediately.

An easy-to-prepare midweek one-pot with cod fillet, chickpeas, ginger and spices - it's healthy, low calorie and packed with iron too.

1 tbsp oil
1 onion, chopped
2 tbsp medium curry powder
thumb-sized piece ginger, peeled and finely grated
3 garlic cloves, crushed
2 x 400g cans chopped tomatoes
400g can chickpeas
4 cod fillets (about 125-150g each)
zest 1 lemon, then cut into wedges
handful coriander, roughly chopped

Steps:

  • Heat the oil in a large, lidded frying pan. Cook the onion over a high heat for a few mins, then stir in the curry powder, ginger and garlic. Cook for another 1-2 mins until fragrant, then stir in the tomatoes, chickpeas and some seasoning.
  • Cook for 8-10 mins until thickened slightly, then top with the cod. Cover and cook for another 5-10 mins until the fish is cooked through. Scatter over the lemon zest and coriander, then serve with the lemon wedges to squeeze over.
