5 oz. Bacardi Coconut Rum
1 - 10oz. Frozen Bacardi Mixers Non-alcoholic Margarita concentrate
Watermelon, cubed and frozen (I used about 1/4 of a medium to large watermelon)
1 Lime, cut into wedges
Salt

Steps:

  • Pour 5 oz. of coconut rum into a blender. Add one 10 oz. can of Frozen Bacardi Mixers Non-alcoholic Margarita concentrate. Fill the remainder of the blender with frozen watermelon. Blend until smooth and combined. Wet the rim of 4 - 8 oz. cups with lime and salt the rims. Add the blended mixture to the glasses and garnish with a wedge of lime.

Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

1 tablespoon fine sea salt
1 teaspoon Tajín or 1/2 teaspoon ground cayenne (optional)
Ice, as needed
6 ounces fresh watermelon juice (from about 1 1/2 cups chopped seedless watermelon, blended and strained)
2 ounces tequila, preferably blanco
2 ounces Cointreau (optional)
2 ounces fresh lime juice (from 1 to 2 large limes), rinds reserved
2 to 3 thinly sliced jalapeño rounds (optional)

Steps:

  • Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
  • In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory. If you'd like to compare, first try the mixture without, the liqueur, then add 1 ounce of it per serving.)
  • Using one of the squeezed lime halves, run it along the rim of two rocks glasses, then dip the rims into the salt mixture. Fill the glasses with ice, then strain the margaritas into the glasses and enjoy immediately.

1/3 cup sugar
8 cups cubed seedless watermelon (1 inch)
2 cups ice cubes
2 cups tequila
1 cup Triple Sec
1/4 cup lime juice

Steps:

  • Cut 1 lime into 12 wedges; reserve for garnishes. If desired, coat the rim of each glass with sugar: Cut remaining lime into wedges. Using these wedges, moisten the rims of 12 margarita or cocktail glasses. Sprinkle sugar on a plate; hold each glass upside down and dip rim into sugar. Discard remaining sugar., Place half the watermelon in a blender; cover and process until pureed (this should yield 3 cups). 25ml lime juice
25ml coconut rum

½ tsp sea salt flakes
½ tsp golden caster sugar
1 tsp dessicated coconut
1 lime, zested

Steps:

  • First, make the garnish for the rim. Combine the salt, sugar, dessicated coconut and lime zest on a shallow plate. Dampen the rim of a margarita glass and dip into the mixture. Chill the glass until needed.
