I have always loved tapioca pudding and coconut, so this dish is perfect for me! One time, for a 'Southeast Asian Cuisine Night,' I served this as dessert alongside pho, spring rolls, and steamed dumplings. For a Southeast Asian touch, top the pudding with chopped mango or chopped peanuts.

⅔ cup quick cooking pearl tapioca
2 (14 ounce) cans coconut milk
¼ teaspoon salt
½ cup white sugar
1 egg
1 teaspoon vanilla extract

Steps:

  • Bring the tapioca, coconut milk, and salt to a boil in a saucepan over medium-high heat, stirring constantly. Reduce heat to medium-low, and simmer for 5 minutes. Stir in the sugar until dissolved.
  • Beat the egg in a bowl until smooth. Whisk in about 1/2 cup of the hot tapioca mixture, 1 tablespoon at a time, then scrape the egg mixture into the simmering pudding, and stir. Simmer gently until thickened, 3 to 5 minutes , then remove from the heat and allow to cool for 10 minutes before stirring in the vanilla extract. Serve either warm or chilled.

1 can (13 1/2 ounces) coconut milk
1 1/2 cups milk
1/2 cup sugar
3 tablespoons quick-cooking tapioca
1 teaspoon vanilla extract
1/3 cup sweetened shredded coconut
1/2 cup small pieces of fresh pineapple, or 1 can (5 1/2 ounces) pineapple chunks, drained and cut into smaller pieces

Steps:

  • In a medium saucepan, lightly beat egg. Add coconut milk, milk, sugar, and tapioca; whisk to combine. Set aside, at least 5 minutes, until tapioca is slightly softened.
  • Stirring constantly, bring mixture to a boil over medium heat; stir in vanilla. Transfer mixture to a bowl; cover with plastic wrap. Let cool until no longer hot, about 30 minutes. Refrigerate until cold, 2 to 3 hours (or up to 3 days).
  • Meanwhile, preheat oven to 350 degrees. Spread coconut in a single layer on a rimmed baking sheet. Toast, tossing once or twice, until golden, 10 to 15 minutes; let cool.
  • Just before serving, whisk pudding to loosen. Divide among four serving glasses or dishes; top with pineapple and toasted coconut.

6 1/4 cups water
1 cup (1/8-inch) pearl tapioca (not quick-cooking)
1 pandan leaf, thawed if frozen (optional)
1/2 cup grated or crumbled dark palm sugar (4 oz) or packed dark brown sugar
1 (14-oz) can unsweetened coconut milk (do not shake)

Steps:

  • Make pudding:
  • Bring 6 cups water to a boil in a large saucepan and add tapioca in a slow stream, stirring constantly. Gently boil, stirring frequently, 5 minutes.
  • Remove from heat and let stand, covered, until tapioca is translucent, about 15 minutes.
  • Add 3 cups cold water to tapioca, then drain in a large sieve. Transfer tapioca to a large bowl. Add cold water to cover by 2 inches and swirl tapioca to remove excess starch. Drain tapioca in sieve and repeat rinsing. Drain tapioca again and divide among 6 serving dishes. Chill, loosely covered, 10 minutes, or until set.
  • Make syrup:
  • Tear pandan leaf into strips and tie strips together in a knot. Simmer pandan with sugar and remaining 1/4 cup water in a small saucepan, stirring until sugar is dissolved, until slightly thickened, about 5 minutes. Discard pandan and pour syrup through a fine sieve into a small bowl. Cool to room temperature.
  • Make coconut cream:
  • Scoop out thick layer of coconut cream from top of can, reserving thin liquid in bottom. Whisk ‚ cup coconut cream until smooth, whisking in 1 to 1‚ tablespoons thin coconut liquid if necessary to get a pourable consistency. Drizzle some of syrup over tapioca and top with some coconut cream. Serve remaining syrup and cream on the side.

8 bananas
4 cups water
1/2 cup tapioca
1 cup coconut milk
1/4 cup sugar
The sugar is optional but I do recommend it. Make sure you pull the inner strings off the bananas before boiling! The riper the banana the stronger the banana flavor.
Our family's personal taste is to use an entire can of purchased coconut milk and reduce the water accordingly. Or if using homemade coconut milk to reduce the water by a half a cup and increase the coconut milk a half a cup.

Steps:

  • Peel the bananas and place in a medium saucepan. Add the water and then bring to the boil. Turn the heat down and simmer for about 20 minutes. Break the bananas up with a wooden spoon, fork or masher. Sprinkle the tapioca into the saucepan while stirring. Add the coconut milk and then simmer over low/medium heat until the tapioca is cooked, about 15 minutes. Stir frequently. Finally, taste the suafa'i. If you like a little more sweetness, then add sugar to taste. Remove from the heat, leave for about 30 minutes to cool and then serve in a bowl or cup. You can also cool suafa'i completely, and refrigerate it. Once cooled, serve it as a snack or dessert.

3 1/4 cups canned unsweetened coconut milk
3/4 cup small pearl tapioca
3/4 cup sugar
1 large egg, beaten
1 pinch salt

Uber-creamy, rich and dreamy, vanilla-scented tapioca pudding of my childhood dreams. But without the dairy or eggs! Plus: not much sweetener at all! Bonus!

1/3 cup small pearl tapioca (I use this brand)
3/4 cup unsweetened almond milk
1 15-ounce can lite coconut milk
2-3 tablespoons honey or pure maple syrup*
1/8 teaspoon fine-grain sea salt
1 teaspoon vanilla bean paste or pure vanilla extract*
Diced strawberries (pomegranate arils, and an extra drizzle of honey for serving (optional) (or whatever fruit you like, really!))

Steps:

  • Add pearl tapioca to a medium saucepan. Add almond milk. Let soak, off burner, for 30 minutes.
  • Add coconut milk, 2 tablespoons maple syrup or honey, salt, and vanilla if using paste (if using extract, add after cooking).
  • Place pan over medium heat and bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, until thickened. Stir in vanilla extract if using. Taste and add additional honey if you desire a sweeter tapioca.
  • Pour into heat-proof individual containers. Transfer to refrigerator and chill for at least 1 hour.
  • Serve topped with fresh fruit and an extra drizzle of honey, if desired.

1 tablespoon sliced lemongrass*
2 cups water
2 cups whole milk
1/2 cup sugar
1/2 cup small pearl tapioca* (not quick-cooking)

Steps:

  • Combine first 6 ingredients in food processor; blend 20 seconds. Transfer to medium saucepan; add 2 cups water and bring to boil. Remove pan from heat and let steep uncovered 20 minutes. Pour mixture into strainer set over heavy large saucepan; press on solids to release flavored liquid. Discard solids in strainer.
  • Add milk and sugar to flavored liquid in pan; bring to boil. Stir in tapioca; return to boil. Reduce heat to medium and simmer uncovered until pudding thickens and is reduced to 2 1/4 cups, stirring frequently, about 35 minutes. Stir in coconut milk (pudding will be runny). Transfer to bowl. Cover and refrigerate overnight.
  • Toss mango cubes, lime juice, and cayenne in medium bowl. Divide tapioca among 6 stemmed glasses or bowls. Top with mango mixture; garnish with basil sprigs.

2 1/2 cups milk
1/2 vanilla bean, split, seeds scraped, or 1/2 teaspoon vanilla extract
Pinch of salt
2 large eggs
2 tablespoons sugar
1/2 cup cream of coconut
2 cups sliced grapes
Zest of 1 lime

Steps:

  • Combine tapioca, milk, vanilla bean and seeds, and salt in a medium saucepan, and place over medium heat until steaming, about 3 minutes. Remove and discard vanilla bean.
  • Combine eggs, sugar, and cream of coconut in a medium bowl, and whisk to combine. Whisking constantly, slowly add half of milk mixture. Return to pot, and stir to combine. Cook over medium heat, stirring frequently, until thick and puddinglike, about 7 minutes. Spoon pudding into four serving dishes, and set aside until ready to serve. Top with grapes and lime zest. This dish can be served warm or at room temperature, but the grapes and limezest should be added just before serving.

TRUVIA COCONUT TAPIOCA PUDDING

I'm on a sugar-free, dairy-free diet for health reasons (it was a last resort, believe me!) and got sick of soymilk. This recipe is based on Minute Tapioca's classic recipe for Tapioca Pudding. I hope you enjoy it as much as I do!

1/4 cup quick-cooking tapioca (I use Let's Do...Organic's Tapioca granules)
4 packets of truvia artificial sweetener
1 egg, lightly beaten
1/8 teaspoon nutmeg
1 (14 ounce) can unsweetened coconut milk
1 cup water (or 1 cup milk)
1 teaspoon vanilla
1/4 cup shredded coconut (optional)

Steps:

  • In a saucepan, whisk ingredients together.
  • Let sit for 5 minutes.
  • Then, bring mixture to a boil over medium heat, stirring often.
  • Boil gently while stirring for 3 minutes, or until tapioca granules are clear and soft.
  • Remove from heat; add vanilla and coconut if desired. Mixture thickens as it cools.
  • Enjoy!
  • Note: If you aren't used to sugar substitutes, you might hate the end result! You can try this recipe with 1/3 cup sugar or 1/4 cup Agave sweetener for a tasty treat. I am using Truvia (like Stevia but a more specific part of the plant?) because it is supposed to be "safe" and is plant-derived. It has a slight, licorice-like aftertaste (not as strong as that of Stevia, thankfully) but the nutmeg helps to balance that. *If you are on a anti-Candida diet, this dessert is particularly good because coconut milk is a natural source of caprylic acid, which helps to kill the little guys off.
