1 can (20 ounces) pineapple chunks
2 tablespoons cornstarch
2 tablespoons sugar
1 cup chicken broth
1 tablespoon lemon juice
1 teaspoon salt
3 cups cubed cooked chicken
1 medium green pepper, julienned
1/4 cup sweetened shredded coconut, toasted
1/2 cup slivered almonds, toasted, divided
1 teaspoon rum extract

Steps:

  • Drain pineapple, reserving juice; set the pineapple aside. In a large skillet, combine the cornstarch, sugar, broth, lemon juice, salt and reserved juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. , Stir in the chicken, green pepper, coconut, pineapple, 1/4 cup almonds and extract. Cook for 8-10 minutes or until chicken is heated through. Sprinkle with remaining almonds.

2 tablespoons lime juice
1 tablespoon brown sugar

6 (6 ounce) skinless, boneless chicken breast halves
1 (16 ounce) container sour cream
½ cup coconut milk
¼ cup lime juice
2 tablespoons chopped cilantro
1 clove crushed garlic
1 pinch salt and pepper to taste
6 slices peeled, cored pineapple

Steps:

  • Whisk together the tequila, 2 tablespoons of lime juice, brown sugar, and cayenne pepper; pour into a resealable plastic bag. Add the chicken breasts, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Meanwhile, make the sauce by whisking together the sour cream , coconut milk, and 1/4 cup of lime juice in a bowl. Add the cilantro and garlic, then season to taste with salt and pepper; set aside.
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate. Remove the chicken from the marinade, and shake off excess. Discard the remaining marinade.

1 cup well-shaken coconut milk

1 teaspoon Turmeric

4 Large Chicken Legs, skin on, legs and thighs separated
3 tablespoons Olive Oil
1 Pineapple, peeled, cored, and cut into 1 inch cubes
4 cloves Garlic
1/2 cup Coconut Flakes
1/2 cup Pineapple Juice
2 cans Coconut Milk (13.5 oz can)
1 stick Cinnamon Stick 3" long
4 Medium Sweet Potatoes or Yams peeled and cut into 1 inch cubes
1 bunch Cilantro, leaves only chopped roughly

Steps:

  • Combine the spices in a small bowl.
  • Coat chicken with 2 tbsp of oil
  • Cover chicken with half the spices and marinate for 2 hours, chilled.
  • Preheat oven to 325.
  • Warm 1 tbsp olive oil in dutch oven over medium heat
  • Add chicken in single layer and brown on all sides.
  • Saute pineapple, garlic, 2/3 of coconut flakes until golden brown (est 4 minutes)
  • Add juice, milk, stock, remaining spices, cinnamon stick, and potatoes. Stir to combine.
  • Arrange chicken on top. Bring to simmer, then transfer to oven, UNCOVERED.
  • Braise for 45 minutes, basting chicken twice.
  • Remove cinnamon stick
  • Adjust salt and pepper seasoning to taste
  • Serve on top of curried rice, garnished with reserved coconut flakes and cilantro.

1 teaspoon salt
1 1/2 teaspoons freshly ground black pepper
1 tablespoon crushed red pepper
1 teaspoon cayenne pepper
1 (4-pound) fryer chicken, cut into 8 pieces
2 ounces smoky bacon, cut into medium dice
3 1/2 tablespoons canola oil
4 cloves garlic, thinly sliced
1 Scotch bonnet chile, stemmed, seeded, and minced
1 large red onion, chopped
2 tablespoons Madras curry powder
1 cup fresh orange juice
2 whole star anise
Pinch saffron threads
1 cup chicken stock
1 vanilla bean, split lengthwise
1 bay leaf, broken in half
1 1/2 cups unsweetened coconut milk
1 European cucumber, peeled, cut lengthwise in half, seeded, and cut into small pieces
2 large ripe tomatoes, peeled, seeded, and diced
1 tablespoon kosher salt

1 1/2 cups 1/2-inch pieces fresh pineapple (golden or regular)

Steps:

  • Preheat the oven to 350 degrees F.
  • For the Seasoned Flour: If you are making the seasoned flour, simply mix together the flour, salt, and the peppers together in a bowl. Dust the chicken with the flour, shaking off any excess. Reserve.
  • For the Chicken: In a large skillet, cook the bacon in the canola oil over medium heat, until it has rendered some of its fat. Add the chicken in batches, skin side down and sear, 2 minutes per side, turning once, until golden on all sides. Transfer the chicken to a roasting pan fitted with a rack; set the skillet aside. Bake the chicken for 25 to 35 minutes.
  • For the Curry Sauce: Set the skillet you seared the chicken in over medium-high heat and add the garlic, Scotch bonnet, and red onion. Stir well to coat and cook until caramelized, about 10 minutes. Add the curry powder, stir well, and cook for 30 seconds. Add the orange juice, star anise, and saffron and cook, stirring for 2 minutes, as the juice reduces by 1/2.
  • Add the chicken stock and stir, then add the vanilla bean, bay leaf, and coconut milk and stir. Bring to a simmer and cook for about 20 minutes until the sauce thickens enough to coat the back of a spoon.
  • While the sauce is simmering, put the cucumber in a colander and toss with salt. Let stand for 20 minutes, stirring now and then to distribute the salt. (The salt will pull excess water out of the cucumber.) Rinse the cucumber well under cold running water and drain. Blot with paper towels.
  • Pass the curry sauce through a fine-mesh strainer into a smaller skillet. Add the tomatoes and heat through. Keep warm over very low heat.
  • To serve, put 2 pieces of chicken on each plate. Spoon the curry sauce over and scatter the cucumber and pineapple over the top.

1/4 c cornstarch
1 Tbsp caribbean jerk seasoning
2 large egg whites
1 c sweetened flaked coconut
1 c panko breadcrumbs
3 Tbsp canola oil
PINEAPPLE-FRIED RICE
3 Tbsp butter
1 c diced fresh pineapple
3/4 c diced sweet onion
1 tsp asian chili-garlic sauce
3 c cooked, cooled basmati rice
1/2 c red bell pepper, diced
3 Tbsp fresh cilantro, chopped
2 tsp fresh lime zest
1/2 c loosely packed fresh cilantro leaves, chopped

Steps:

  • 1. Preheat oven to 325 degrees. Place each chicken breast between 2 sheets of plastic wrap; flatten to 1/2-inch thickness, using a rolling pin or flat side of a meat mallet.
  • 2. Stir together cornstarch and jerk seasoning in a shallow dish. Whisk egg whites just until foamy in another shallow dish. Stir together coconut and breadcrumbs in a third dish.
  • 3. Dredge the chicken breasts, 1 at a time, in cornstarch mixture; dip in egg whites, and dredge in coconut/breadcrumb mixture, pressing gently to adhere.
  • 4. Cook chicken in hot oil in a large, nonstick ovenproof skillet over medum heat 1-2 minutes on each side or until golden. Transfer skillet to oven, and bake at 325 degrees for 15-20 minutes or until chicken is done. sprinkle with salt and black pepper to taste. Serve with fried rice.
  • 5. To make the fried rice - melt 3 tbsp. butter in a large nonstick skillet over medium-high heat. Add 1 cup diced fresh pineapple, 3/4 cup onion and 1 tsp. Asian chili-garlic sauce, and saute 6-8 minutes or until onions are lightly caramelized. Add 3 cups cooked, cooled basmati rice, 1/2 cup red bell pepper, 3 tbsp. chopped cilantro, and 2 tsp. lime zest; stir-fry 5 minutes or until thoroughly heated. Remove from heat, and stir in 1/2 cup loosely packed cilantro leaves. Add salt to taste.

1 cup fresh pineapple chunk
1/2 cup pea aubergines or 1/2 cup berry brinjals
3 -4 kaffir lime leaves, torn
4 tablespoons red curry paste
1 cup thick coconut milk
1 1/2 cups thin coconut milk
1 tablespoon fish sauce
1 tablespoon sugar
2 -3 tablespoons lime juice
1 teaspoon instant chicken bouillon granules
30 g dried red chilies, soaked
25 g thinly sliced lemongrass
1 slice galangal (thick slice)
1 teaspoon sliced kaffir lime zest
1 1/2 tablespoons sliced coriander
1 teaspoon coriander powder
25 g chopped shallots
25 g chopped garlic
1/4 teaspoon pepper

  • Combine red curry paste ingredients (A) in a blender and puree with a little water until you get a paste. Remove and set aside.
  • Simmer thick coconut milk in a saucepan or heavy-based wok over medium low heat for 1-1½ minutes. Work in 4-5 tablespoons of the red curry paste and continue to fry over low heat for about 5-6 minutes or until fragrant and the oil rises.
  • Add the chicken and the thin coconut milk. Bring to a low simmering boil until meat is tender and the coconut cream is rather oily.

Pour marinade over chicken and refridgerate for at least 30 minutes or up to 3 hours, turning occasionally. Preheat grill to medium. Add marinated chicken cube then pineapple cube then another marinated chicken cube to each bamboo skewer. Grill until chicken is slightly golden all over, turning as needed (about 5 minutes each side).

1 onion
4 chicken whites
1 diced pineapple
20 cl of coconut milk
3 tbs of creme fraiche
Rice
Olive oil
Curry
Salt
Pepper

Steps:

  • Mince the onion and sauté them in a pan with olive oil. Cut the chicken in small pieces (it's better) and add them to the onion. Once the onion and the chicken are nicely cooked, add salt, pepper and curry. Add the the diced pineapple and make them cook a few minutes with the chicken and onions. Then, add the coconut milk and the three spoons of creme fraiche. Leave the preparation on low heat while you prepare your rice (I usually add either peas or quinoa to my rice, and in this case, I added quinoa). Once the rice is ready, stop the heat and serve immediately. Enjoy!

Hawaiian Pineapple Coconut Chicken Skewers image

This recipe is based on the marinade of the Hawaiian street food chicken you can get from roadside stalls throughout Hawaii, except I added coconut. Coconut is a brilliant base for marinades because it adds richness into the flesh as well as infusing it with sweetness and coconut flavours. I served this with a Coconut Lime Rice (it uses the balance of coconut milk leftover after this recipe from a standard 14oz/400g can). MARINATING TIME: 3 hrs - overnight recommended, but even 20 minutes is enough.

3/4 cup coconut milk (from a 14oz/400g can, use leftovers for Coconut Lime Rice!)
1/2 cup pineapple juice (Note 1)
3 tbsp brown sugar
2 tbsp tomato sauce/ketchup
3 tbsp soy sauce
Zest and juice of 1 lime
2 garlic cloves, minced
1/2 tsp EACH onion powder, cumin, paprika,
1 tsp ginger powder (or 1/2 tsp grated fresh ginger)
1/2 - 1 tsp cayenne pepper, optional
1/2 tsp salt
1.5lb / 750g chicken thigh fillets, cut into 1"/2.5cm pieces
1 tbsp olive or vegetable oil
8 skewers, soaked in water for 30 minutes if cooking on outdoor BBQ

Steps:

  • Combine Marinade ingredients in a bowl. Remove ½ cup of Marinade (for basting) and set aside in fridge. Add chicken, cover and marinate in the fridge for at least 3 hours, preferably overnight. But even 20 minutes is enough - compensate with extra basting.
  • Drain and discard marinade. Thread chicken onto skewers.
  • Heat oil in a large skillet or on outdoor BBQ over medium high heat. Cook skewers, turning to cook all sides, and basting generously with reserved Marinade. (Note 1)
  • Serve with Coconut Lime Rice.
