¼ cup cream cheese, room temperature
½ cup sugar, plus 1 tablespoon, divided
2 large eggs
1 orange, washed
1 tablespoon lemon juice
1 cup pancake mix
¼ cup butter, melted, plus more for greasing pan

Steps:

  • In a large bowl, combine the cream cheese and 100 g (½ cup) of the sugar. Add the eggs and whisk until combined.
  • Zest one half of the orange over the batter. Add the lemon juice and whisk to combine.
  • Add the pancake mix and melted butter, and whisk until the batter is smooth.
  • Brush the bowl of the rice cooker with melted butter.
  • Sprinkle the remaining tablespoon of sugar on the inside of the bowl so that it is well coated.
  • Slice the orange into 7 thin slices and lay on the inside of the bowl.
  • Pour the batter over the oranges, and cook for 40 minutes.
  • Remove the bowl of the rice cooker and place a plate over the top. Carefully flip the bowl upside-down so that the cake slides onto on the plate with the orange slices on top.
  • Enjoy!

1 cup vegetable oil
3 teaspoons coconut extract, divided

1 cup buttermilk
1 cup sweetened shredded coconut
1 cup chopped pecans
1/2 cup water
2 tablespoons butter
Confectioners' sugar, optional

Steps:

  • In a large bowl, beat the eggs, 2 cups sugar, oil and 2 teaspoons extract. Combine the flour, baking powder and salt; add to egg mixture alternately with buttermilk just until moistened. stir in coconut and pecans. , Spoon into a greased 10-in. fluted tube pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean., Meanwhile, in a small saucepan, combine the water, butter and remaining sugar. Bring to a boil; cook for 5 minutes. Remove from the heat; add remaining extract. , Slowly pour hot syrup over hot cake. Cool in pan for 4 hours before removing to a serving plate. Dust with confectioners' sugar if desired.

Steps:

  • Preheat oven to 350°. Arrange pineapple in a single layer in a well seasoned 12-in. cast-iron or other ovenproof skillet., In a large bowl, cream butter, coconut oil and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. Beat in coconut extract. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with coconut milk, beating well after each addition., With clean beaters, beat egg whites and cream of tartar on high speed just until stiff but not dry. Fold a fourth of the egg whites into batter, then fold in remaining egg whites. Spread over pineapple. Bake until a toothpick inserted in center comes out clean, 55-60 minutes. 1/2 cup dark brown sugar
1/2 cup shredded coconut
2/3 cup chopped pecans
1/2 cup semisweet chocolate
2 tablespoons milk
1 (9 ounce) box jiffy yellow cake mix or 0.5 (18 1/4 ounce) box cake mix

Steps:

  • Melt butter into well prepared rice cooker pan. Spray with Pam very well, or use parchment paper on the bottom of pan.
  • Mix together the brown sugar, coconut, pecan's and semi sweet chocolates with a little milk. spread over the butter.
  • Then mix up the Jiffy cake mix according to the directions on the box.
  • Hit cook and 40 minutes later it will be done.
  • Turn off the cooker and wait a few minutes before removing the pan from the rice cooker. If you have a dish that is slightly smaller than the rice cooker pan, place it in the pan on top of the cake before turning it over. This is the easiest way to take the cake out.
  • Allow it to cool before cutting.

80g unsalted butter , softened, plus extra for the tin
50g light brown soft sugar
8 canned pineapple rings in syrup (syrup reserved)
7 maraschino cherries
2-3 tbsp coconut rum (optional)
2-3 tbsp coconut flakes , toasted
whipped cream or coconut yogurt, to serve
150g unsalted butter , softened
150g golden caster sugar
150g self-raising flour
50g desiccated coconut
4 limes , zested, 1 juiced
2 large eggs

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 20cm square or 22cm round cake tin. Beat 50g of the butter with the brown sugar, then spread into the base and halfway up the sides of the prepared tin. Cut one of the pineapple rings into quarters, then arrange the whole rings in the tin, putting a cherry in the centre of each. Put a pineapple ring quarter into each corner.
  • To make the sponge, tip the butter, sugar, flour, desiccated coconut, ½ tsp fine sea salt, most of the lime zest and the eggs into a large bowl. Beat together using an electric whisk until smooth and creamy. Spoon the batter over the pineapple and level with the back of a spoon. Bake for 35-40 mins. Leave to cool in the tin for 5 mins, then turn out onto a cake board or serving plate.
  • Bring the reserved pineapple syrup to the boil in a medium pan, then stir in the coconut rum (if using), remaining butter and the lime juice. Leave to cool slightly. Drizzle over the cake, then scatter over the coconut flakes and remaining lime zest. Serve with whipped cream or coconut yogurt, if you like. Will keep in an airtight container for up to five days.

50g soft brown sugar
2 tbsp rum , optional
6 canned pineapple rings
6 glacé cherries
140g butter , softened
140g caster sugar
2 large eggs , beaten
140g self-raising flour
1 tsp baking powder
50g desiccated coconut
6 tbsp milk
custard , to serve

Steps:

  • First, make the topping. In a small pan heat the butter, sugar and rum (if using), on a low heat until dissolved, bubble for a few mins until slightly thickened. Divide between 6 really well-greased, 200ml ramekins. Add a pineapple ring with a glacé cherry in the middle to each.
  • Heat oven to 180C/160C fan/gas 4. Beat together the butter and sugar with an electric whisk until pale and fluffy. Gradually beat in the eggs, then fold in the dry ingredients. Finally stir in the milk and divide the mixture between the ramekins. Put them on a baking tray and cook for 25-30 mins until risen, golden and springy to the touch.
  • To serve, turn the ramekins upsidedown onto a plate or a bowl and tap gently to release. Serve with custard.

Steps:

  • Set oven to 350 degrees.

  • Add in half and half and vanilla; beat for about 5 minutes on high speed.
  • Spread the cake batter over the coconut mixture in the pan.
  • Bake for 30-40 minutes, or until cake is golden brown, and a toothpick in the middle comes out clean when inserted in center of the cake.
  • IMMEDIATELY invert pan on a serving dish/plate.
  • Serve with a topping/dollop of whipped cream.

2 tablespoons cornstarch
2 egg yolks
2 tablespoons butter

1 cup flaked coconut
2 cups whipping cream
1/4 cup powdered sugar
1/2 cup flaked coconut, toasted
Pecan halves, if desired

Steps:

  • Heat oven to 350°F. Grease 3 (8-inch) round cake pans with shortening; lightly flour.
  • In large bowl, beat cake mix, coconut milk, oil, egg whites and coconut extract with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Stir in chopped pecans. Pour batter into pans.
  • Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.
