COCONUT LOAF CAKE

115g butter, cut into small pieces, plus extra for greasing
225g self-raising flour
115g demerara sugar
100g desiccated coconut, plus extra for sprinkling
2 large eggs, lightly beaten
4 tbsp milk

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease a 900g loaf tin and line with baking paper.
  • Sift the flour and a pinch of salt into a mixing bowl and rub in the butter with your fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar, coconut, eggs and milk and mix to a soft dropping consistency.
  • Spoon the mixture into the prepared tin and smooth the surface with a palette knife. Bake for 30 mins.
  • Remove the cake from the oven and sprinkle with the extra coconut. Return the cake to the oven and bake for an additional 20-25 mins, until well risen and golden and a skewer inserted into the centre comes out clean. Leave the cake to cool slightly in the tin, then turn out onto a wire rack to cool completely.

1 cup white sugar
½ cup butter, melted
1 cup mashed bananas
½ teaspoon almond extract
1 ½ cups all-purpose flour
½ cup flaked coconut
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts
½ cup maraschino cherries, chopped

Steps:

  • Mix together flour, coconut, baking powder, baking soda, salt, chopped walnuts, and cherries.
  • Break eggs in a mixing bowl, and beat until light and frothy. Add sugar and melted butter or margarine. Beat well. Stir in mashed banana and flavoring. Add flour mixture, and stir just to combine. Spoon into greased 9x5x3 inch loaf pan.

1 1/2 cups sweetened shredded coconut
1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
1 1/2 cups all-purpose flour, (spooned and leveled), plus more for pan
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
3 large eggs
1 cup sour cream
1 can (20 ounces) pineapple chunks in juice, drained well

Steps:

  • Preheat oven to 350 degrees. Spread coconut on a rimmed baking sheet. Bake until lightly toasted, tossing occasionally, 6 to 10 minutes; set aside. Butter and flour a 9-by-5-inch (8-cup) loaf pan; set aside. In a medium bowl, whisk together flour, baking soda, and salt; set aside.
  • Using an electric mixer on high speed, beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Reduce speed to low, and alternately add flour mixture in three parts and sour cream in two, beginning and ending with flour mixture. Mix just until combined (do not overmix).
  • Using a rubber spatula, fold pineapple and 1 cup coconut into batter. Spoon into prepared pan, and smooth top; sprinkle with remaining 1/2 cup coconut. Bake until a toothpick inserted in center comes out clean, 65 to 70 minutes (cover pan with foil halfway through). Let cake cool in pan 15 minutes. Remove from pan, and transfer to a wire rack to cool completely.

1/4 cup rum
1/2 to 1 pineapple (depending on size), peeled and sliced into 1/2-inch pieces, rinse and reserve nice leaves, for garnish
2 tablespoons butter, melted
2 tablespoons butter, melted
2 Australian lobster tails
1/4 teaspoon Bijol (Cuban spice mix)
Salt and freshly ground pepper
1/2 mango, peeled and diced small
1/3 papaya (Hawaiian), diced small
2 ounces water chestnuts, julienned
1 small red bell pepper, diced small
1/2-ounce carrots, shredded
1-ounce bamboo sprouts, quartered

Steps:

  • Preheat the oven to 500 degrees F. Mix vanilla seed, sugar, and rum together in a large bowl. Add the pineapple and marinate for 15 minutes. Cook pineapple with melted butter in large pan over medium-high heat in batches until pineapple has caramelized. Cool and cut into small diced pieces. Set aside.
  • Cut tails lengthwise and crack shell. Pull out meat but keep tail attached at tail end. Season with Bijol, salt, and pepper. Brush with butter. Roast until cooked, approximately 15 minutes, basting with butter a few times. Cool and dice.
  • Combine lobster, pineapple, mango, papaya, water chestnuts, red pepper, carrots, bamboo shoots, chives, and cabbage and mix gently with 1/4 cup of the Lime Mango dressing.
  • Preheat a grill: Cut sugar cane into 4 skewers, about 4 to 5 inches long. Season with Bijol, salt, and pepper. Mix butter, zest, and fruit juice then brush shrimp with butter mixture. Grill, basting with butter mixture until shrimp is fully cooked.
  • Place 3 to 4 pineapple chips on bottom of plate and place coconut in center of chips. Fill coconut with salad. Garnish with lengthwise chips and pineapple leaves. Spoon a tablespoon of dressing on each plate. Lean shrimp skewer against coconut and plate at an angle.
  • Start by adding everything from lime juice to cilantro and blend.using a burr mixer, hand held electric mixer or whisk. Slowly add in oil while continuing to blend. Season with salt and pepper.
  • Preheat the oven to 200 degrees F. For the pineapple chips: Peel and cut the pineapple in half width-wise. Cut small wedges out of the pineapple to create thin flower slices. Cut other half lengthwise to remove the core. Dip into simple syrup and place on a silicone mat or parchment paper on a sheet pan at 200 degrees in oven for about 4 hours until dried out to create chips.
  • Bring all ingredients to a simmer in a small saucepan. When the sugar is dissolved, remove from the heat and allow to cool. Remove the vanilla bean.

½ cup vegetable oil
1 cup white sugar
1 cup grated zucchini
½ teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking powder

½ teaspoon ground nutmeg
½ cup flaked coconut
½ cup chopped walnuts
½ cup currants

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  • In small pan boil one cup water. Add currants or raisins, and boil for two minutes. Drain.
  • In mixing bowl beat egg, oil, and sugar. Stir in zucchini and vanilla.
  • In another bowl, measure flour, baking powder, soda, salt, cinnamon, nutmeg, coconut, walnuts, and currants or raisins. Stir to combine thoroughly. Pour all at once over batter in mixing bowl. Stir to moisten. Turn into greased 9x5x3 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour until an inserted toothpick comes out clean. Cool in pan 10 minutes. Turn out on rack. Cool and wrap.

1 cup sour cream
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder

½ cup flaked coconut
¼ cup packed brown sugar
2 teaspoons ground cinnamon

Steps:

  • In a small bowl, stir together coconut, brown sugar, and cinnamon.
  • Measure flour, baking powder, baking soda, and salt into a bowl; mix well.
  • In a mixing bowl, beat eggs until frothy. Beat in oil and sugar. Blend in sour cream. Add flour mixture, and stir until combined. Put 1/2 of the batter in the bottom of a greased 9 x 5 x 3 inch loaf pan. Sprinkle 1/2 of the cinnamon mixture over batter. Top with remaining batter by putting dabs here and there.   • Using rubber spatula, fold pineapple and 1 cup coconut into batter. Spoon into prepared pan and smooth top; sprinkle wiht remaining coconut. Bake until a toothpick inserted into center comes out clean, 65-70 minutes (cover pan halfway thorugh). Let cake cool in pan 15 minutes. Remove from pan and transfer to a wire rack to cool completely. To store, keep at room temperature, wrapped in plastic for up to 2 days.

185g butter softened, plus extra for the tin
185g coconut milk, whisked
250g caster sugar
250g self-raising flour
3 large eggs
1 tsp coconut extract (optional)
25g desiccated coconut
100g butter, softened
250g icing sugar
2 tbsp coconut milk
½ tsp coconut extract (optional)
25g coconut chips or desiccated coconut
white chocolate truffles or large white sprinkles, to decorate (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 900g loaf tin (ours measured 10 x 21 x 5cm) and line the base with a long strip of baking parchment that overhangs the sides.
  • Put the butter, coconut milk, sugar, flour, eggs, coconut extract (if using) and desiccated coconut in a large bowl and beat with an electric whisk until combined. Scrape into the prepared tin and level the top with a spatula or the back of a spoon. Bake for 55 mins-1 hr, or until the cake is risen and golden brown and a skewer inserted into the middle comes out clean. If any wet cake mixture clings to the skewer, bake for another 5-10 mins, then check again. Leave to cool in the tin for 10 mins, then lift the cake out onto a wire rack, using the parchment to help you. Leave to cool completely. The cooled cake will keep in the freezer, well wrapped, for up to two months.
  • To make the icing, beat the butter, sugar, coconut milk and coconut extract, if using, in a bowl until smooth and creamy. Spread over the top of the cake using a palette knife or the back of a spoon, then scatter over a generous layer of coconut chips. Decorate with white chocolate truffle 'snowballs' or large white sprinkles, if you like.

RASPBERRY AND COCONUT BREAKFAST LOAF

Coconut oil, for greasing
175g almonds or ground almonds (about 1 1/4 cups whole or 1 3/4 cups ground)
25g (about 1/4 cup) desiccated coconut, plus extra to serve
1 lemon, zested
2 tsp baking powder
3 free-range eggs
5 tbsp honey, plus extra to serve
150g raspberries (1 1/4 cups), plus extra to serve
Sea salt

Steps:

  • Preheat the oven to 180°C/350°F/Gas Mark 4. Grease and line a 450g (1lb.) loaf tin. Blitz the almonds in a food processor to a flour-like consistency (if you are using ground almonds, skip this step).
  • In a mixing bowl, mix together the ground almonds, desiccated coconut, lemon zest and baking powder with a pinch of sea salt.
  • In another bowl, whisk the eggs until fully combined, then add the honey. Add the wet mixture to the dry mixture, then gently fold in the raspberries. Carefully pour the mixture into the lined tin, gently pressing in the extra raspberries. Bake in the hot oven for 50 to 60 minutes, until cooked through and a knife inserted comes out clean, covering with foil for the final 20 minutes.
  • Brush with honey and sprinkle with the extra desiccated coconut. Transfer to a wire rack to cool, then slice and serve.

BANANA, PECAN AND COCONUT LOAF

My tins were super cute and small so I've used some ramekins too, of course to please all the gobblers around the house, especially the little munchkins. Bananas have to be nicely ripe in fact they're best when their skin has brown dots or marks. Increase the sugar amount by 30-40g (1-1.3oz) if you like this loaf extra sweet...

280 g banana mashed 3 bananas + 1 to add on top
190 g sugar i used cane sugar unrefined
4 eggs medium room temperature
50 g desiccated coconut
50 ml olive oil any other oil will be good
3 tbsp chia seeds
280 g self-raising flour i used wholemeal organic
70 g pecan nuts toasted
1/4 tsp salt i have used pink himalayan

Steps:

  • 1. Preheat the oven at 185C or 325°F. Grease two small loaf pans or one regular size.
  • 2. In a bowl combine the flour, baking powder, chia seeds, desiccated coconut and salt.
  • 3. In a separate which can be the bowl of an electric mixer, mix the sugar and the 4 eggs. Beat until it becomes a light and fluffy mixture. This should be done at a medium speed for about 4-5 minutes.
  • 4. While still mixing, add the oil little by little or pouring it in continuously until all is in.
  • 5. Add the mashed bananas and mix at low speed for 30 seconds, just enough to incorporate these.
  • 6. Using a spatula, fold in the flour mixture gently. Add the chopped and toasted pecans.
  • 7. Pour the batter into the already prepared loaf pans. Peel one banana and cut into two lengthwise. Add on top.
  • 8. Bake for about 40 minutes or so until golden brown. Use a wooden skewer to make sure it's done.
  • 9. When ready, take out of the oven. Allow it to cool for 10-15 minutes and then take out and cool completely, ideally this should be done on a wire rack.
  • 10. Can be served warm or cold with a nice dollop of creme fraîche, ice cream or a nice Greek yoghurt. Enjoy!

LIME AND COCONUT DRIZZLE LOAF

A great, rich and moist cake bursting with Caribbean flavours! I found the recipe while surfing the net looking for coconut & lime recipes - very happy I came across this one as it's yummy!! Reportedly the recipe is originally from the BBC Good Food magazine.

14 ounces golden caster sugar, divided (375 g)
4 ounces butter, softened (120 g)
6 ounces self raising flour (175 g)
1 teaspoon baking powder
2 eggs
3 limes, juice and zest of
400 g coconut milk, divided

Steps:

  • Preheat oven to 180°C.
  • Butter and line the base of a loaf tin with baking parchment.
  • Put 6 oz (175g) of the sugar in a bowl with the butter, flour, baking powder, eggs, and the zest of 2 limes.
  • Split the coconut milk in half and set one half aside for the topping.
  • Add most of the other half to the bowl and beat the mixture together until well blended. Add enough extra coconut milk to make a dropping consistency.
  • Spoon the mixture into the prepared tin and level off the top. Bake for 40 mins, or until the cake is golden and firm to the touch.
  • Meanwhile make the topping: Tip the reserved half of coconut milk into a saucepan. Add 5 oz (150g) of sugar.
  • Bring to the boil and continue to boil for 5 minutes, or until syrupy and you can see the bottom of the pan when you stir. (For some reason this took me nearly 20 minutes!).
  • Stir in the lime juice and set aside.
  • With a pestle and mortat, crush the remaining sugar with the remaining lime zest, until you have a damp green paste. Set aside.
  • When the loaf is done, remove from the oven and pour the syrup over the top, a little at a time, waiting for the cake to absorb it before adding more (it will come up the sides of the tin in the end).
  • Leave cake until completely cold. Sprinkle the lime sugar over the top.

  • Heat oven to 350 degrees. Coat 9x5x3 inch or similar sized loaf pan with cooking spray.
  • Sift flour, baking powder, cinnamon, baking soda, and salt into bowl.
  • In a larger bowl beat eggs, sugar, and vegetable oil. Add buttermilk, ripe bananas, and vanilla. Beat until combined. Add flour mixture in slowly and continue to combine.
  • Fold in coconut, nuts, and chocolate chips. Transfer to baking pan.
  • Bake in oven for about an hour, or until wooden pick inserted into center comes out almost clean. Let cool on rack for 10 minutes. Then, if desired, turn loaf out onto rack and let cool completely.
