1 14 1/2-ounce can low-salt chicken broth
1 13 1/2- to 14-ounce can unsweetened coconut milk
1/2 tablespoon curry powder
1 jalapeño chili, seeded, minced
4 boneless skinless chicken breast halves, cut into 3/4-inch pieces
2 tablespoons fresh lime juice
1/4 cup chopped green onion
1/4 cup chopped fresh cilantro
1 cup freshly cooked white rice
Lime wedges

Steps:

  • Bring chicken broth, coconut milk, curry powder and chili to simmer in heavy medium saucepan over medium heat. Add chicken and simmer until chicken is just cooked through, stirring occasionally, about 5 minutes. Mix in lime juice. Season with salt and pepper.
  • Transfer soup to bowl. Sprinkle green onion and cilantro over. Spoon rice into each bowl. Ladle soup over. Serve, passing lime wedges separately.

2 limes, zested and juiced
2 tablespoons grated fresh ginger root
1 ¾ cups coconut milk

1 tablespoon honey
¼ cup sweetened flaked coconut

Steps:

  • In a glass bowl, mix chicken breast cubes with lime juice, lime zest, and grated ginger. Let marinate for about 20 minutes.
  • In a medium saucepan, combine the coconut milk and sugar over medium-high heat. Bring to a simmer. Stir in the jasmine rice, reduce heat to low, and cook tightly covered for about 20 minutes or until liquid is absorbed. Remove from the heat and fluff rice with a fork; cover, and keep warm.
  • In a large skillet or wok, heat the sesame oil over medium-high heat. Add chicken and marinade. Stir fry until the chicken is nicely browned, about 3 minutes. Drizzle the honey onto the chicken and continue to stir-fry for another minute or so, being careful not to let the honey burn. Remove from the heat and sprinkle with coconut.
  • Serve hot with the coconut rice on the side.

4 large bone-in, skin-on chicken thighs (1½ pounds)

Steps:

  • Heat the oil in a shallow Dutch oven or casserole with a lid over high heat.
  • Season the chicken generously with salt and pepper and add to the hot oil, skin side down. Sear, flipping once, until browned on both sides and the fat renders, about 5 minutes.
  • Push the chicken to one side of the pan, add the thyme and onions to the other side, and reduce the heat to medium-low.
  • Cook, stirring, until the onions get some color, about 4 minutes. Add the garlic, chile, ½ teaspoon salt, and ½ teaspoon pepper. Cook, stirring, for 1 minute, then add the coconut milk and ¼ cup water. Bring to a boil, stirring.

1 tbsp oil
8 skin-on and bone-in chicken thighs
1 large onion , roughly chopped
4 garlic cloves , grated to a purée
3cm piece ginger , peeled and grated
½ tsp turmeric
2 tsp ground cumin
2 green chillies , halved, deseeded and finely chopped
200g butternut squash , peeled, deseeded and cut into slices (prepared weight)
100g cauliflower florets
225g basmati rice
10g bunch coriander , chopped
2 limes , zested and juiced
2 lime leaves
300ml coconut milk
400ml chicken stock

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a 30cm shallow casserole dish or high-sided frying pan. Fry the chicken thighs, skin-side down, just to get some colour on them (they will take on a deeper colour in the oven). Transfer them to another dish. Fry the onion in the pan until soft and pale gold. Add the garlic, spices and chillies. Cook for 2 mins more, then stir in the squash, cauliflower, rice, half the coriander, the lime zest, half the lime juice, the lime leaves and some seasoning. Put the chicken back in the pan, this time skin-side up, and season that as well.
  • Heat the coconut milk and the chicken stock together until just below boiling point. Pour this around the chicken and put the pan in the oven, uncovered. Cook for 40 mins, or until the chicken is cooked through and the liquid has been absorbed by the rice. Squeeze over the remaining lime and scatter with the rest of the coriander. You could gently push the coriander into the rice, so it's not all on top. Serve immediately.

  • Preheat oven to 400 degrees F (200 degrees C). Lightly spray a baking sheet with non-stick cooking spray.

1 cup orange juice
3/4 cup chopped fresh cilantro
1/3 cup minced garlic
1 minced jalapeno or serrano pepper

1 pound skinless boneless chicken breast (or fish), cut into 1-inch cubes
Kosher salt
1 pound red or Yukon potatoes, chopped
1/4 cup vegetable or peanut oil
1 cup chopped red onions
8 ounces mushrooms, sliced
4 ounces carrots, split lengthwise and sliced
5 scallions, sliced on the bias
5 cups chicken stock
Splash lime juice
4 cups canned diced tomatoes or diced fresh tomatoes
One 14-ounce can unsweetened coconut milk
1/4 cup brown sugar, plus more if needed
1 1/2 tablespoons curry powder
Sea salt and lime tortilla chips, for serving
Freshly chopped cilantro, for serving

Steps:

  • For the chicken: In a large bowl, stir together the lime juice, orange juice, cilantro, garlic and chile peppers along with a pinch of salt and some pepper (you are basically making a ceviche mixture). Add the chicken and stir together. Cover and refrigerate.
  • For the stew: Bring a pot of water to a simmer and add salt. Simmer the potatoes until tender, 15 minutes. Drain and set aside.
  • In a 6- to 8-quart stainless steel pot, heat the oil over medium-high heat for 2 to 3 minutes. Add the onions, mushrooms, carrots and scallions and cook, stirring occasionally, until the onions are softened and browning slightly. Add 2 1/2 cups chicken stock, the lime juice and the potatoes and bring to a boil. Boil vigorously 5 minutes, then lower to a simmer and add the chicken ceviche mixture, the tomatoes, coconut milk, brown sugar, curry powder and the remaining 2 1/2 cups chicken stock. Bring to a simmer and cook over medium-low, stirring occasionally, about 30 minutes. Taste and adjust with additional salt and pepper as needed. You may add more brown sugar, 1 teaspoon at a time, to deepen the flavor or knock down any acidity, but don't go too far!
  • Serve with chips and cilantro.

1-2 tbsp Thai green curry paste (depending on how hot you like it)
1 lime, zested and juiced
3 tbsp honey
6 chicken drumsticks

Steps:

  • Mix the coconut cream, curry paste, lime zest and juice and 1 tbsp honey together in a large bowl, then spoon a quarter of the marinade into a second smaller bowl and set aside. Add the chicken to the large bowl and leave to marinate for at least 2 hrs, or chill for up to 24 hrs.
  • Heat the oven to 200C/180C fan/gas 6 and line a baking tray with foil. Arrange the chicken on the tray, and bake for 30 mins, turning the chicken over halfway through.
  • Mix the remaining honey into the reserved small bowl of marinade. Brush half of this over the chicken, then return to the oven for 10 mins more. Turn the chicken over and brush with the rest of the marinade, then bake for another 10 mins. Serve warm or leave to cool completely before packing into a container for a picnic.

1 ½ teaspoons ground nutmeg
1 ½ teaspoons ground ginger
1 teaspoon ground sage
1 teaspoon garlic powder
¾ teaspoon salt
½ teaspoon freshly cracked black pepper
1 cup basmati rice
1 cup reduced-fat coconut milk
1 cup chicken broth
1 lime, juiced
1 teaspoon grated lime zest
½ teaspoon freshly cracked black pepper
¼ cup unsweetened toasted coconut, to garnish

Steps:

  • Marinate chicken pieces in a bowl along with lime juice, orange juice, rum, soy sauce, olive oil and apple cider vinegar. Refrigerate and marinate for 4 hours.
  • Preheat oven to 400 degrees F. Place a rack in the center of the oven and line two rimmed baking sheets with Reynolds Wrap® Non-Stick Foil.
  • Spread bread crumbs across one of the prepared baking sheets and bake until golden brown, about six minutes. Remove from the oven and set aside.
  • Whisk eggs in a medium bowl and set aside.
  • Toss together flour and cayenne pepper in a medium bowl and set aside.
  • Toss together the toasted bread crumbs along with sugar and spices on the rimmed baking sheet.
  • Remove the chicken pieces from the marinade and discard the marinade. Toss the chicken pieces lightly in the flour mixture.
  • Lightly coat the floured chicken pieces one at a time in the egg wash using a pair of tongs.
  • Transfer the coated chicken nuggets to the bread crumb and spice mixture and toss to coat, pressing the bread crumbs and spices into the nuggets. Place on the remaining prepared baking sheet in a single layer.
  • Bake chicken pieces for 13 to 15 minutes, flipping once during baking until cooked through.
  • Make the rice while the chicken bakes. Rinse basmati rice under cool water until the water runs clear. In a medium saucepan bring coconut milk and chicken broth to a simmer. Add the rice, lime juice and zest. Cover and cook until rice has absorbed all of the liquid, about 20 minutes. Remove from the heat and allow to rest for 5 minutes before fluffing. Top with black pepper and toasted coconut.
  • Serve chicken nuggets alongside rice and enjoy!

3 TBS peanut oil
4 (4 oz) skinless chicken thighs
2 cloves garlic, minced
3 TBS red curry paste
2 (13.5 oz) cans coconut milk (do not shake before opening!)
3 TBS brown sugar
2 TBS Thai fish sauce
2 TBS lime juice (~ 1 lime)
1 small sweet potato, peeled and cut into chunks
1 small can pineapple chunks, drained
1/2 cup frozen peas
Fresh, chopped basil or cilantro, for garnish
1 TBS chili-lime salt
2 TBS lime juice (~ 1 lime)

Steps:

  • 1. Open coconut milk. Scrape 2 TBS coconut solids from tops of cans. Add coconut solids and peanut oil to medium saucepan and heat over medium-high heat. Add chicken thighs and cook on both sides until brown and crispy, about 3-4 minutes per side. Remove chicken from pan and set aside. 2. Add minced garlic to skillet and saute one minute. Add curry paste, and saute 2 minutes, blending paste with garlic and oil and scraping up any browned bits. 3. Add remainder of coconut milk and solids to saucepan and mix well, scraping any browned bits. Add brown sugar, fish sauce, and 2 TBS lime juice, mixing well. Bring to a boil, and add browned chicken thighs to pan, making sure curry covers thighs. Reduce heat to low and cover pan. Simmer about 20 minutes. 4. Uncover pan and add sweet potato chunks. Cover pan and simmer another 20 minutes. 5. Remove chicken thighs from pan. Remove meat from bone and cut into large pieces. Return chicken to pan along with peas. Simmer another 5 minutes. 6. To make chili-lime sauce, combine chili-lime salt with lime juice, and put into 4 individual dipping bowls. Serve curry hot with sticky white rice and chili-lime sauce on the side (for dipping chicken pieces into). Sprinkle chopped basil or cilantro over for garnish. Makes 4 servings. Each serving = 16 Weight Watchers points.

2 lemongrass stalks, bottom 4 inches only, thinly sliced
3 tablespoons Asian fish sauce
4 small boneless, skinless chicken breast halves (about 1 1/2 pounds total)
7 ounces glass (cellophane) noodles
1 teaspoon finely grated lime zest plus 2 tablespoons fresh lime juice
2 teaspoons sugar
5 Thai or regular shallots, thinly sliced
2 fresh Thai chiles, thinly sliced
1 1/2 cups packed Thai or regular basil leaves
3 fresh or frozen kaffir lime leaves, thinly sliced

Steps:

  • Bring coconut milk, half of the lemongrass, and 1 tablespoon fish sauce almost to a boil in a large pot over medium-high heat. Add chicken. Reduce to a simmer, and cook, flipping chicken once, until it is cooked through, 5 to 10 minutes per side. Remove from heat. Transfer chicken to a cutting board, and cut crosswise into thin slices. Return chicken to coconut milk mixture; cover, and set aside.
  • Soak noodles in boiling water according to package instructions, 3 to 5 minutes. Drain. Set aside.
  • Stir together lime zest and juice, sugar, shallots, chiles, basil, and lime leaves in a medium bowl. Add noodles, and toss to combine. Divide noodle mixture among 6 serving bowls. Using a slotted spoon, remove chicken, and evenly divide among bowls. Drizzle each bowl with some coconut milk sauce.

An offspring of the recent RSC #9, this recipe was inspired by some leftover light coconut milk. Despite it's odd origins this chicken is light, easy and delicious. You could give it a more Thai feel with the addition of nam pla or a more Caribbean flair by replacing the cayenne with a small amount of finely diced scotch bonnet peppers. While I prepared this on my George Foreman, certain it would work equally well on an outdoor grill. (As per WW Recipe Builder, 3 pts per serving.)
