3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 eggs
2 cups sugar
1-1/4 cups vegetable oil
1 teaspoon vanilla extract
1/4 cup orange juice
2 cups chopped peeled tart apples
1 cup chopped walnuts
1 cup sweetened shredded coconut

Steps:

  • Combine flour, baking soda, salt and cinnamon. In a bowl, beat eggs, and sugar; add oil, vanilla and orange juice. Gradually stir in flour mixture. Stir in apples, nuts and coconut. Turn into a greased 13-in. x 9-in. baking pan. Bake at 325° for 60 minutes or until cake tests done.

1 Tablespoon Orange Juice
3 Cups Peeled Apples, Granny Smith, finely chopped
3 Cups All-purpose Flour
1 Teaspoon Baking Soda
1 Tablespoon Ground Cinnamon
1/4 Teaspoon Salt
3 Large Eggs, room temperature
2 Cups Granulated Sugar
1 1/2 Cups Canola Oil
1/4 Cup Orange Juice
1 Cup Sweetened Coconut Flakes, toasted
1 Cup Chopped Pecans, toasted
Buttermilk Glaze:
1/2 Cup Unsalted Butter, 1 stick
1 Cup Granulated Sugar
1/2 Cup Buttermilk, shaken
1/2 Teaspoon Baking Soda
1 Teaspoon Vanilla Extract

Steps:

  • 1. Preheat the oven to 325 degrees/ 315 convection. Generously butter a 10" tube pan with a removable bottom. Line with a cutout of parchment paper and then butter again. Sprinkle with flour and remove any excess. Place the tube pan on a large cookie sheet. 2. PREPARE THE APPLES: In a large mixing bowl add the tablespoon of orange juice. Peel, core and chop the apples; toss in the orange juice. Set aside 3. MAKE THE BATTER: In a large mixing bowl, sift together the flour, baking soda, cinnamon and salt. Set aside. 4. With an electric mixer on medium speed, beat the eggs, sugar, canola oil and orange juice until smooth and lighter in color; about 3 minutes. 5. Lower the speed and slowly add the flour mixture. Beat just until smooth and incorporated. 6. By hand, fold in the coconut and pecans (make sure they are cooled). Gently fold in the apples. The batter will be very thick. 7. Spread the batter evenly into the prepared tube pan and smooth the top. Bake for about 1- 1 1/2 hours or until a tester comes out clean. Remove from the pan after cooling 15 minutes. 8. MAKE THE GLAZE: While the cake is baking make the glaze. In a large saucepan over medium-high heat, melt the butter and then stir in the sugar. Whisk in the buttermilk, baking soda and vanilla and bring to a rolling boil; stirring constantly for about 1 minute. Pour the sauce over the warm cake. Let cool 1 hour before serving. NOTE: You can bake the cake 1 day in advance (store wrapped at room temperature)-- then make the glaze and pour over the cake; let stand 1 hour before serving.

1 1/2 cups vegetable oil
2 cups white sugar
3 eggs
3 cups plain flour
3 cups diced apples
1 cup dark raisin
1 cup finely grated coconut
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla extract
3/4 cup chopped pecans (optional)

Steps:

  • Cream oil, sugar, and eggs with an electric mixer until it is well-blended.
  • Sift together flour, salt, baking soda and cinnamon.
  • Add dry ingredients to the creamed oil, sugar, and eggs, and mix thoroughly.
  • Blend in apples, coconut, raisins, pecans, and vanilla extract.
  • Mix the entire mixture very well.
  • Bake in a greased and floured "Bundt" pan at 350 for 1 hour and 15 minutes.

When I was doing the baking for the Autism gala back in October, I also wanted to give something to the coordinator of the event who has asked me each year to donate! I adapted this apple and coconut cake from glutenfreegoddess.blogspot.com/2010/09/coconut-flour-apple-cake.html to use up the GFCF starches and flours I had and the outcome was decadent!

3 tablespoons ground flax seeds
1/4 cup hot water
1/2 cup sorghum flour
1/2 cup rice flour
1/2 cup organic coconut flour
1/2 cup cornstarch
1 teaspoon guar gum
1/2 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon pumpkin pie spice
1 cup brown sugar
1/2 cup coconut oil
1 cup coconut milk
2 teaspoons bourbon vanilla extract
2 apples, peeled and chopped small
1/4 cup shredded unsweetened coconut
1 apple, peeled and sliced medium-thick
1 teaspoon raw sugar

Steps:

  • Preheat the oven to 350 F and line the bottom of a 10" spring form pan.
  • In a small bowl, whisk together the flaxseed and hot water. Set aside.
  • Whisk together flours, starch, guar gum, baking powder, baking soda, salt and spice. Set aside.
  • In a large bowl, beat together flax mixture, brown sugar, oil, coconut milk and vanilla until the batter is smooth.
  • Fold in the chopped apples and coconut.
  • Spread in the prepared pan and lightly press sliced apple pieces in a decorative pattern on top.
  • Sprinkle the top of the cake with raw sugar.
  • Bake 55 - 60 minutes. Do not open the oven door before 45 minutes.
  • Cool in the pan twenty minutes, then loosen the sides of the cake from the pan and remove the ring. Cool completely before slicing (although this is delicious gently reheated).

1 1/4 cups applesauce
1 cup old-fashioned oats
1/2 cup butter or margarine, softened
1 cup sugar
1 teaspoon vanilla
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon fresh ground nutmeg
3/4 cup flaked coconut
1/2 cup packed brown sugar
1/4 cup butter, melted
3 Tablespoons milk

Steps:

  • Heat applesauce in a one-quart saucepan over medium-high heat until boiling. Stir in oats and let stand 20 minutes. Preheat oven to 350 degrees F. Beat butter and sugar in a large bowl with an electric mixer until light and fluffy. Beat in applesauce mixture just until mixed. Stir in flour, baking soda, salt, cinnamon and nutmeg; until just combined. Pour into a greased 9x9-inch square pan and bake 40-50 minutes or until toothpick inserted in the center comes out clean. Remove from oven and turn oven to broil. Meanwhile, mix together the coconut, brown sugar, butter and milk. Spread mixture over the hot cake and place cake back in the over and broil, six inches from the heat for 1-2 minutes or until top is golden and bubbly. Cool slightly and serve warm.

Well the Pizza pan apple coconut pie worked out great -so I thought I would try one in a cake pan with a custard filling. That worked out wonderful too- again you can use other fresh fruit in this recipe. I want to try canned pineapple chunks next..Oh I think that will be the best one yet..

FILLING:
4 cup(s) crisp apples,peelings can be on or off, cube apples
1 medium lemon juiced
1 1/2 cup(s) granulated sugar
1 teaspoon(s) ground cinnamon
2 teaspoon(s) apple pie spice
1 1/2 cup(s) sweetened shredded coconut
5 ounce(s) can evaporated milk, such as carnation or pet
1 large egg
2 teaspoon(s) vanilla extract
CRUST:
1/2 cup(s) butter, melted
1 1/2 cup(s) all purpose flour
1/4 teaspoon(s) salt
To make: - using the small bowl of mixer combine all ingredients and press into bottom of 9x13-inch baking dish.set aside.

Steps:

  • Preheat oven to 350^. Make crust;set aside. In a small bowl combine 1 cup of the sugar and the cinnamon;set aside. --- In separate bowl combine apple pieces and lemon juice, stir to coat; pour evenly over crust. Sprinkle the cinnamon sugar mixture over apples. Bake for 20 minutes.
  • Meanwhile combine the coconut, remaining sugar, evaporated milk, vanilla and egg. When the pie has baked-remove from oven and spoon the coconut mixture over apples evenly. Bake for another 20 minutes or until slightly brown and bubbly.Remove to cool on wire rack. Serve cool with vanilla ice cream.
