I got this from a friend, it is to die for! I love to serve it with jasmin rice and steamed broccoli.

6 chicken breast fillets
1 cup almonds, finely chopped
1 cup shredded coconut
1 (6 ounce) can coconut milk
salt and pepper
8 ounces apricot preserves
1 tablespoon extra virgin olive oil
1 scallion, minced
2 garlic cloves, minced
2 teaspoons curry
1/4 teaspoon ginger
2 tablespoons honey
1 teaspoon soy sauce

Steps:

  • Preheat oven to 350.
  • Combine chopped almonds and.
  • coconut in shallow dish: set aside.
  • Pour coconut milk in a shallow dish.
  • Salt and pepper both sides of chicken breast fillets.
  • Dip fillets into coconut milk and then the almond coconut mixture.
  • Place onto lightly oiled baking sheet.
  • Bake for 25 minutes, turning once.
  • Sauce: In a medium saucepan, heat oil over medium heat.
  • Saute scallion and garlic until golden.
  • Add curry and ginger and cook for one minute.
  • Add apricot preserves, honey and soy sauce. Cover and simmer,stirring occasionally, for 10 minutes.
  • Poor sauce over chicken over Jasmine Rice.
  • I've made this without the coconut milk before -- I.
  • just dipped the chicken into 1 lightly beaten egg.

olive oil (to spray the pan)
1/2 cup almond flour
1/2 cup sweetened flaked coconut
12 garlic flavor Club crackers
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon fresh ground pepper
5 tablespoons butter
10 chicken tenderloins (or 4-5 boneless, skinless chicken breasts cut into fingers)

Steps:

  • Preheat oven to 475°F Spray a baking sheet with olive oil.
  • Place almond flour, coconut, crackers, paprika, garlic powder, dry mustard, salt and pepper in a food processor; process until the crackers are finely chopped and the paprika is mixed throughout, about 1 minute. Transfer the mixture to a shallow dish.
  • Melt butter in a second shallow dish. Add chicken tenders and turn to coat. Transfer each tender to the crumb mixture; turn to coat evenly. (Discard any remaining butter and almond mixture.) Place the tenders on the prepared tray.
  • Bake the chicken tenders until golden brown, crispy and no longer pink in the center, about 30 minutes, carefully turning once.

Delicious crispy chicken dish I found on www.shakeoffthesugar.com. Low carb with plenty of taste. We experimented with sauces to add some extra flavor.

1/3 cup almonds
1/3 cup unsweetened coconut (dried or fresh)
1/8 teaspoon curry powder
1 pinch salt
4 large chicken breast halves (skinless)
1/3 cup butter, melted

Steps:

  • Preheat oven to 350 deg. Spray a 9x13 inch baking dish with non-stick spray or grease it with butter.
  • Chop the almonds in a food processor and place in a shallow dish. Add the grated coconut, curry powder and salt. Set aside.
  • Prepare the chicken by rinsing it under cool water. Remove any fat deposits and pat dry with a paper towel. Lay on a paper towel while you melt the butter.
  • Place the melted butter in a small bowl or melt the butter in the bowl in a microwave.
  • Dip each piece of chicken in the melted butter, then in the almond coconut mixture. Place the coated chicken in the baking dish in a single layer. drizzle any leftover butter over the chicken and sprinkle with remainder of the coconut almond mixture.
  • Bake for 45 minutes to 1 hour until the chicken is thoroughly cooked through.

1/4 teaspoon pepper
1/4 teaspoon red pepper
2 tablespoons almonds, chopped

Steps:

  • Combine almond butter, coconut milk, 1/4 cup lime juice, and curry paste in a medium bowl, stirring until smooth. Place 1/2 cup almond butter mixture in a small bowl; reserve. Add chicken to remaining almond butter mixture; toss to coat. Refrigerate 15 minutes.

3 cups Thinly sliced English cucumbers
1 cup Thinly sliced red bell pepper
1/4 cup Minced fresh cilantro
1/4 teaspoon Black pepper
1/4 teaspoon Crushed red pepper
2 tablespoons Unsalted roasted almonds, chopped

Steps:

  • Combine the almond butter, coconut milk, 1/4 cup lime juice, and curry paste in a medium bowl, stirring until smooth. Place 1/2 cup almond butter mixture in a small bowl; reserve. Add chicken to remaining almond butter mixture; toss to coat. Refrigerate 15 minutes.

1 cup Coconut Milk (or store-bought)
1 large onion, coarsely chopped
1 tablespoon chickpea flour
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
6 quarter-size slices peeled fresh ginger
1 to 3 fresh green chili pepper, such as serrano, stemmed
20 to 25 , shelled raw almonds, , coarsely chopped
3 tablespoons vegetable oil
1 teaspoon salt, or to taste
2 1/2 to 3 pounds chicken, skinned and cut into serving pieces (discard the back and wings)
1/4 cup , sliced raw almonds
2 tablespoons small raisins
1 cup nonfat plain yogurt, whisked until smooth
1 to 2 tablespoon minced fresh mint leaves

Steps:

  • 1. Prepare the coconut milk. Then, in a small food processor, process together the onion, chickpea flour, cinnamon, and cloves until smooth. Remove to a bowl, then process together the ginger, garlic, green chili peppers, chopped almonds, 1 tablespoon oil, and salt to make a smooth paste.2. Place the chicken in a large non-reactive bowl. Add the ginger-garlic-almond paste and mix well, making sure all the pieces are well-coated with the marinade. Cover with plastic wrap and marinate at least 4 and up to 24 hours in the refrigerator.3. Heat the remaining 2 tablespoons oil in a large nonstick wok or saucepan over medium heat and cook the sliced almonds and raisins, stirring, until the almonds are golden, about 1 minute. Drain well and remove to a bowl.4. To the same oil, add the marinated chicken and cook, stirring occasionally, until lightly browned, about 10 minutes. Add the onion paste, then add the yogurt, a little at a time, stirring constantly to prevent it from curdling. -1 lb boneless, skinless chicken breasts
