4-6 boneless, skinless chicken breasts (mine were frozen when I put them in the slow cooker)
1 lemon, quartered
1 onion, quartered
1 20 ounce bottle of BBQ sauce (any brand or flavor you prefer)
1 can of Coca Cola

Steps:

  • Peel onion and cut into quarters. Cut lemon into quarters. Place chicken breasts in crock pot. Place onion and lemon quarters on top. Pour in entire bottle of BBQ Sauce and entire can of Coke. Cover and cook on low for 6-8 hours or high for 3-4 hours.

This is a very popular meal where I come from (PERU) and it's quite a success with all ages. Easy to make and sweet to the palate.

2 chicken breasts
1 teaspoon instant minced garlic (to taste)
1 white onion
2 potatoes
3 carrots
2 tablespoons margarine or 2 tablespoons butter
1 bay leaf
1 (750 ml) can Coca-Cola
1 (76 g) oxtail soup mix

Steps:

  • Melt the butter/margarine in the pot at medium heat.
  • Add the garlic.
  • Once the garlic is browning, add your chicken pieces.
  • When chicken is lightly browned on both sides, add the onions diced.
  • Once onions are almost fully cooked, add the oxtail soup.
  • Stir lightly to spread the oxtail over the chicken pieces, then add half the can of coke and continue stirring at medium heat.
  • Boil your potatoes and carrots (seperately) in the meantime. I prefer to do them in the microwave which is fairly quick.
  • When the sauce has begun to thicken, add the potatoes and carrots cut into bite sizes.
  • Simmer at low-medium heat.
  • Add the bay leaf.
  • Taste it, if it's too sour still, add a bit more coke.
  • Serve warm over a bed of rice or pasta.

Like many cooks, I keep a file of recipes I want to try. When I looked through it recently, there were a preponderance of lemon recipes, including one for roasted chicken with lemons and Coca-Cola from Frédérick Grasser-Hermé. Again, the savory and sweet. A food writer who has worked with chefs like Alain Ducasse, Grasser-Hermé is also the wife of the Parisian pastry chef Pierre Hermé. It humored me that a French cook would deign to baste her chicken with Coke. But it makes perfect sense: like many drinks - wheat beer, iced tea, sangria, Vietnamese sugar-cane juice - Coca-Cola is always improved by a wedge of lemon.

Juice of 3 lemons, zest of 2 lemons
One 4 1/2 pound chicken, butterflied
3 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Olive oil, for sautéeing
1 medium onion, thickly sliced
1/4 cup finely julienned ginger
3 cloves garlic, crushed and chopped
1 cup Coca-Cola
1/2 teaspoon white vinegar
1 tablespoon balsamic vinegar

Steps:

  • In a large, rimmed dish, sprinkle the lemon juice over both sides of the chicken. Rub with the salt and pepper, then the lemon zest. Cover and chill for 4 hours.
  • Preheat the oven to 350 degrees. Spread the chicken, skin side up, in a roasting pan. Reserve the lemon juice, diluting it with 1 tablespoon water. Cover the chicken with foil and roast for 30 minutes, basting it with the lemon juice every 5 to 10 minutes.
  • Meanwhile, cover the bottom of a medium sauté pan with a thin film of olive oil. Place over medium heat and add the onion and ginger. Cook until the onions are soft and golden, about 8 minutes, then stir in the garlic. Season with salt and pepper.
  • After the chicken has cooked for 30 minutes, lower the heat to 300 degrees and remove the foil. Begin basting every 10 minutes with the Coca-Cola, until the chicken juices run clear, about 1 hour more. Reheat the onions, adding the vinegars and 2 tablespoons of the chicken juices. Cook for 1 minute. Serve the chicken topped with the onions and pan drippings.

2 Tbsp canola oil
12 chicken wings
salt and pepper
4 clove garlic minced
1/2 c each soy sauce and brown sugar
1 12 oz can coke
2 Tbsp sweet chili sauce

  • 1. Heat a medium size pot on stove top. Add oil. Place the sliced ginger in oil. Season the wings with salt and pepper.
  • 2. Brown the wings in batches until browned well on both sides. Remove ginger slices and discard. Add remaining ingredients. Make sure chicken is covered. Bring to a boil. Reduce to a simmer and simmer 30 minutes or until reduced and thickened.

Brining Mix:
1 qt Coca-Cola
1 tsp Liquid Smoke (optional)
2 1/2 tbsp Worcestershire sauce
1 tbsp Tabasco
3 tbsp ground black pepper
3 tbsp coarse salt
Batter:
1 egg
3/4 cup peanut oil
Dry Mix (well combined):
2 tsp baking powder
2 tbsp coarse salt
4 tsp ground black pepper
1 tbsp cayenne pepper
1 tbsp onion powder
1 tbsp garlic powder
2 1/2 cups flour

Steps:

  • Rinse chicken, drain, and set aside. Blend together brining mix until salt dissolves. Place chicken in brine in a large covered bowl and marinate, refrigerated, for 4 hours. Whisk egg well in a stainless-steel bowl and add peanut oil and 21/2 cups water. Add in dry mix, whisking slowly so batter doesn't clump. To prepare chicken: Fill a large cast-iron skillet halfway with equal amounts peanut oil and lard. Slowly bring temperature to 375 degrees. (Use a candy thermometer.) While oil is heating, remove chicken from brine and place in a colander in sink. Once chicken has drained, pat dry with paper towels (a critical step) and season with salt and pepper. Dip chicken in batter and place (carefully) in hot oil. Adjust heat, as the chicken will bring the oil temperature down dramatically - you want it back up to just above 350 degrees. Turn chicken regularly using tongs to prevent burning. After 8 or 9 minutes, remove a piece, prick it to the bone with a fork, and mash it. If the juices run clear, it's done. Continue cooking if necessary. Serve with pickle-garlic relish. Cover any leftovers with a dish towel and leave out at room temperature. This keeps it crispy.

2-3 lb chicken wings, chicken breasts, or ribs

Steps:

  • 1. In 9x13 cassarole dish combine brown sugar, cola, onions, garlic, soy sauce, salt and pepper. Stir and mix well.
  • 2. mix together the corn starch and water making sure you mix it well. Slowly pour into cassarole dish while stirring. Place chicken wings or ribs in sauce mixture.
  • 3. Bake at 350 degrees for 2 hours. Sauce will thicken as it cooks. Delicious served with rice or noodles.

4 small boneless, skinless chicken breasts (preferably from small chickens, about 1 pound total)
1 12-ounce can Coca-Cola
1 medium white onion, diced
2 cloves garlic, crushed
2 cups Jack's Old South Huney Muney Cluck Rub, or 1 recipe Basic Chicken Rub (page 20)
8 thin slices smoked bacon

Steps:

  • Place the chicken breasts in a shallow dish, and add the Coca-Cola, onion, and garlic. Cover, and refrigerate overnight.
  • When you are ready to cook the chicken, preheat a smoker to 325˚F.
  • Remove the chicken from the marinade and apply the rub liberally. Wrap each breast in 2 slices of the bacon, securing the slices with toothpicks. Place the breasts in an aluminum baking pan. Place the pan in the smoker and cook the breasts for 1 hour, or until their internal temperature reaches 165˚F.
  • Remove the pan from the smoker and let the breasts rest, uncovered, in the pan for 15 minutes. Then slice the breasts and garnish them with any bacon that fell aside. My motto with this dish: Have a Coke and a breast, then smile.

  • 1. In large, rimmed dish, sprinkle lemon juice over both sides of the chicken. Rub with s & p, then the lemon zest Cover and chill for 4 hours. 2. Preheat oven to 350. This Coca Cola Chicken Wings are easy to make. Only one bottle of coca cola is required for the flavoring. Slighty sweet taste.

10 chicken wings (mid joint would be the best)
1 bottle of 250ml regular coca-cola
1 teaspoon vegetable oil
1 tablespoon green onion, finely chopped
1 teaspoon light soy sauce
1 teaspoon cooking wine
1 inch ginger sliced
pinch of salt

Steps:

  • Prepare a bowl; add salt, cooking wine and ginger slices to marinade the chicken wings for about 10 minutes.Transfer out and drain.
  • Heat up some vegetable oil in pan. Then put the chicken wings in to sautéing each side for 3 to 4 minutes until the skin becomes slightly brown.
  • Pour Coca cola in the pan, slow the fire down to help the wings absorb the taste of cola. After 8 to 10 minutes, use high fire to thicken the sauce. Add 1 teaspoon of light soy sauce to dark the color. Stir occasionally.
  • Move out from the pan and sprinkle some chopped green onions.

This recipe is so easy and just as good with pork chops too. Boneless or bone in chicken. Doesn't matter. My children all love this.

4-6 chicken breasts, boneless and skinless
1 c catsup
1 c coca cola
2 Tbsp oil
black pepper

Steps:

  • 1. Wash and pat dry your chicken. Put in a hot skillet with a little oil. Brown quickly on both sides. Remove chicken and pour out any oil in pan.
  • 2. Sprinkle with pepper to your liking. No salt needed as the catsup usually has enough.
  • 3. In the same skillet add the catsup and coca cola. Stir to mix. Bring mixture to a boil. Put the chicken back in pan. Lower heat to simmer and cover the pan.
  • 4. Allow to simmer 15 min. Uncover pan and allow the sauce to thicken at a low boil for 5 min. if it's real thin.

Brining Mix:
8oz Coca-Cola
1/4 t Liquid Smoke (optional)
1/2 T Worcestershire sauce
1/4 T Tabasco
2 t ground black pepper
2 t coarse salt
Batter:
1/4 egg
1/4 cup peanut oil
Dry Mix (well combined):
1/4 t baking powder
1 1/2 t coarse salt
1 t ground black pepper
1 t cayenne pepper
1 t onion powder
1 t garlic powder
5/8 cups flour

Steps:

  • Rinse chicken, drain, and set aside. Blend together brining mix until salt dissolves. Place chicken in brine in a large covered bowl and marinate, refrigerated, for 4 hours. Whisk egg well in a stainless-steel bowl and add peanut oil and 21/2 cups water. Add in dry mix, whisking slowly so batter doesn't clump. To prepare chicken: Fill a large cast-iron skillet halfway with equal amounts peanut oil and lard. Slowly bring temperature to 375 degrees. (Use a candy thermometer.) While oil is heating, remove chicken from brine and place in a colander in sink. Once chicken has drained, pat dry with paper towels (a critical step) and season with salt and pepper. Dip chicken in batter and place (carefully) in hot oil. Adjust heat, as the chicken will bring the oil temperature down dramatically - you want it back up to just above 350 degrees. Turn chicken regularly using tongs to prevent burning. After 8 or 9 minutes, remove a piece, prick it to the bone with a fork, and mash it. If the juices run clear, it's done. Continue cooking if necessary.
