Mix up a clover cocktail - a refreshing summer tipple made with gin, dry vermouth, lemon and raspberries and featuring a fabulous foam topping

Number Of Ingredients 8

50ml gin
1 tbsp dry vermouth
5 fresh raspberries
25ml raspberry cordial (see tip, below)
25ml lemon juice
1 tbsp egg white
handful ice
3 raspberries and a mint sprig skewered on a cocktail stick

Steps:

  • Put all of the ingredients except the ice in a cocktail shaker. Shake hard for 1-2 mins to froth up the egg white.
  • Add the ice, then shake again until the outside of the shaker feels ice-cold.
  • Double-strain into a chilled coupe glass, then add the raspberry and mint garnish.

2 tablespoons lime juice
1 egg white
3 or 4 ice cubes

Steps:

  • Combine all ingredients in a cocktail shaker and shake vigorously. Strain into a cocktail glass.

The Clover Club is rooted in Philadelphia's pre-Prohibition history. A group of distinguished gentlemen would gather at the Bellevue-Stratford hotel to drink this pretty pink cocktail of gin, lemon juice, and raspberry syrup.

Number Of Ingredients 6

1/2 ounce freshly squeezed lemon juice
1/2 ounce raspberry syrup, muddle equal parts fresh raspberries and simple syrup, then strain
1/2 ounce dry vermouth, Dolin preferred
1 1/2 ounces gin, Plymouth preferred
1/4 ounce egg white
Raspberries, for garnish

Steps:

  • Put lemon juice, raspberry syrup, dry vermouth, gin, and egg white in a cocktail shaker. Cover and shake (this is called a "dry shake," because there's no ice). Remove cover and add ice; then cover and shake again. Pour through a Hawthorne strainer into a chilled glass. Garnish with several raspberries on a pick.

5 fresh raspberries
1 sprig fresh thyme
1 ½ ounces gin
1 pasteurized egg white
¾ fluid ounce simple syrup
¾ fluid ounce lemon juice
ice cubes
1 pinch ground cinnamon
1 lemon zest curl
1 sprig fresh thyme

Steps:

  • In a cocktail shaker, muddle raspberries and thyme. Add gin, egg white, simple syrup, and lemon juice. Shake until mixture no longer sounds sloshy and you feel a lot of pressure. Add ice to fill shaker half-full. Shake again until very cold. Strain into a coupe or cocktail glass. Dust top with cinnamon, or garnish with lemon zest curl or additional thyme.n
