Yield Makes 3 1/2 cups

Number Of Ingredients 12

1 (10-ounce) package frozen spinach, thawed, drained
2 tablespoons unsalted butter
1 medium shallot, finely chopped
3/4 teaspoon paprika
14 ounces canned or frozen artichoke hearts (about 2 cups), thawed, drained, coarsely chopped
8 ounces cream cheese
1 cup (or more) heavy cream
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup grated mozzarella
1/4 cup grated Parmesan
1 tablespoon fresh lemon juice

Steps:

  • Squeeze as much liquid out of the spinach as possible with a a clean dishtowel or paper towels. Melt butter in a large pan over medium-high heat. Sauté shallot until soft, 3-5 minutes. Stir in paprika and cook until fragrant, about 30 seconds. Add spinach, artichoke hearts, cream cheese, cream, salt, and pepper and cook, stirring, until warmed through and slightly reduced, 8-10 minutes. Fold in mozzarella and Parmesan and cook until melted; add more cream if needed to reach desired consistency. Remove from heat and stir in lemon juice.

  • Dip can be made 1 day ahead. Store in an airtight container and chill. Warm before serving.

10 ounces frozen spinach, thawed and drained
1 (14-ounce) can artichoke hearts, drained and cut into quarters
2 cups shredded mozzarella cheese
1 cup freshly grated Parmesan cheese
1 cup mayonnaise
1 cup sour cream
3 garlic cloves, minced
1 teaspoon freshly ground black pepper
1/4 teaspoon salt
Special equipment: 1- to 1 1/2-quart baking dish

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 350°F.
  • Using paper towels, squeeze the spinach to remove as much liquid as possible, then finely chop and place in a large bowl. Add the artichokes, mozzarella, 3/4 cup Parmesan, the mayonnaise, sour cream, garlic, pepper, and salt and stir to combine. Transfer to a 1 1/2-quart baking dish. Sprinkle with the remaining 1/4 cup Parmesan, and cover snugly with foil. Bake until the top is golden brown, about 30 minutes.

This one is a fair amount easier to make then the other one I have posted. This made it an ideal thing to make for our after New Years football party. Great hangover food.

14 ounces canned artichoke hearts, drained and chopped
10 ounces frozen chopped spinach, thawed and drained
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup cream cheese
1/4 cup parmesan cheese, grated
1/4 teaspoon garlic, minced

Steps:

  • Preheat oven to 375.
  • In a small baking dish mix together all ingredients and blend well.
  • Cover and bake until hot and bubbly (about 40 minutes).
  • Serve hot with chips or bread of your choice.

1 can or jar of quartered artichoke hearts - drained
1 package of frozen organic spinach - thawed and drained
1 cup mayonnaise
1 cup shredded or grated Parmesan cheese
1 cup sour cream
1 tsp. black pepper
1 tsp. garlic powder
1 tsp. salt
1 package grated mozzarella cheese

Steps:

  • Preheat the oven to 350. Mix all ingredients in an oven-safe bowl, saving some parmesan cheese to sprinkle on top. (I use a small dutch oven from Williams Sonoma.) Bake, covered, for 30 minutes, or until golden brown

1 large bunch fresh spinach, stems removed, chopped
1 package 8 ounce cream cheese
1/2 cup sour cream
1 jar marinated artichoke hearts
1 jar 7 ounces roasted red peppers or pimentos, drained
1/4 cup Parmesan cheese

Steps:

  • Cook spinach until wilted, but not overcooked, about 3-5 minutes. Drain thoroughly. Set aside. In a food processor, combine cream cheese, sour cream, and undrained artichoke hearts. Pulse until blended. Add drained peppers or pimentos and Parmesan cheese. Pulse until fairly smooth, less if you like a chunkier dip. Transfer mixture to a 1-1/2 quart baking dish. Stir in spinach. Microwave on high for 7 minutes until thoroughly heated through and bubbly around the edges. Stir and serve with chips or crackers. This can also be served in a bread bowl. Scoop out center of a round loaf of bread, saving bread chunks for dipping. After heating the dip, pour into bread bowl and serve.
