Old fashioned hamburger gravy is a classic recipe that's tasty, versatile and so satisfying!

1 pound lean ground beef
½ small onion (diced)
2 cloves garlic (minced)
1 tablespoon Worcestershire sauce
3 tablespoons flour
1 cup milk
1 cup beef broth
1 bouillon cube

Steps:

  • Brown ground beef, onion and garlic until no pink remains. Do not drain.
  • You should have some fat in the bottom of the skillet, if not, add 1 tablespoon butter or oil. Stir in Worcestershire.
  • Stir in flour and allow to cook 2 minutes.
  • Add remaining ingredients and stir. Cook over medium heat until thickened and bubbly. Season with salt & pepper to taste.
  • Serve over biscuits or mashed potatoes.

1 bag of giblets from a turkey (gizzards, liver and neck)
Turkey drippings from a freshly cooked turkey
6 tablespoons all-purpose flour, plus more if needed
4 cups low-sodium chicken stock, plus more if needed
Kosher salt and freshly ground black pepper

Steps:

  • Place the giblets in a saucepan, cover with water and bring to a boil. Cook until the giblets are cooked through, 20 to 25 minutes. Remove the pan from the heat and let the giblets sit in the water, allowing them to cool.
  • Remove the giblets from the saucepan and chop the liver and gizzards. Pick the meat from the neck bone and discard the bones. Save the giblet broth.
  • Pour the turkey drippings from the roasting pan into a pitcher. Allow the fat to rise to the top, leaving the stock juices at the bottom. Ladle or pour the fat into a separate container.
  • Place the roasting pan on the stove over medium heat. Add 1/4 to 1/2 cup of the reserved fat. Sprinkle over the flour and whisk to combine, scraping the brown bits from the bottom of the pan. If it is too oily, sprinkle in another 1 to 2 tablespoons of flour. If it is too dry, add more fat and stir until the flour and fat are combined. Continue to cook the roux until it is golden brown, 4 to 5 minutes.
  • While whisking, pour in the chicken stock. Cook, whisking gently, until the mixture begins to thicken. Pour in the stock juice drippings from the pitcher and continue to cook, stirring, until thick, 4 to 5 minutes. Thin as needed with the giblet stock and additional broth if needed. Stir in the giblets and season to taste with salt and black pepper. Cook for another 5 minutes or so until the giblets are warmed through, then serve.

This is a simple but very tasty hamburger gravy that has been passed down from my grandma long time ago. It's especially a great comfort food, served with fresh mashed potatoes. The secret to the flavor of this gravy is the simmering, simmer low heat 1 hour!! PS. This gravy is NOT greasy at all!!!

1 lb gr. beef
1 medium onion, chopped
4 c water
1 tsp salt,or to taste
1 1/2 tsp pepper, i use shallot pepper, or to taste

Steps:

  • 1. Add the ground beef to a 2-quart saucepan, over medium-high heat until beef is thoroughly cooked, breaking the beef into small pieces, stirring frequently. Thoroughly drain the grease from pan. Return to the heat, add the onions and cook 1-2 minutes longer, or until the onions are soften.
  • 2. Add water, enough to cover 2'' over beef mixture. Add the seasonings. Stirring, bring to boil, cover and reduce the heat and simmer for 1 hour.
  • 3. After the hour of cooking, remove lid and thicken the beef gravy; combine in a small jar 1/4-cup flour and 1/4 cup very cold water. Cover and shake the jar to remove lumps. Slowly pour into the hamburger gravy while constantly stirring the gravy. At this time, I taste the gravy and adjust the spices as needed. Cover the gravy, and simmer another 30 minutes, stirring occasionally. * Remember, the amount of flour/water mixture you add, the thicker the gravy will become. NOTE: This gravy is NOT greasy at all!

1 pound ground beef
1 egg
¼ cup bread crumbs
⅛ teaspoon ground black pepper
½ teaspoon seasoned salt
½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon Worcestershire sauce
1 tablespoon vegetable oil
1 cup thinly sliced onion
2 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon cooking sherry
½ teaspoon seasoned salt

Steps:

  • In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.
  • Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.
  • Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. Season with seasoned salt. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes.

1/2 cup milk
1 can (4 ounces) mushroom stems and pieces, drained

This is one of my favorite 'cheap meal' recipes that I learned from my Southern cookin' Dad. Creamy hamburger gravy with just the right blend of spices is perfect served over homemade biscuits, mashed potatoes, rice, fried potatoes.. just about anything!

2 pounds lean ground beef
½ onion, finely chopped
5 cups milk
2 tablespoons chicken bouillon granules
2 tablespoons butter or margarine
1 teaspoon ground sage
salt and pepper to taste
½ cup all-purpose flour

Steps:

  • Crumble the ground beef into a large deep skillet over medium-high heat. Cook and stir until evenly browned. Drain most of the grease, leaving just enough to coat the pan. Add the onions, and cook for a few more minutes.
  • Pour 4 cups of the milk into the pan, and stir to scrape up any bits of food that could burn on the bottom of the pan. Mix in the bouillon, butter, sage, salt and pepper. Bring to a boil, and cook for 5 minutes, stirring frequently.
  • Mix the flour into the last cup of milk until smooth. Slowly pour into the skillet, stirring constantly. Simmer for a few minutes to thicken. If the gravy is too thick, thin with a little bit of milk. If it is too thin, simmer longer, or add more flour. Taste and adjust seasonings before serving.

2 lb ground beef chuck
4 teaspoons Worcestershire sauce
2 teaspoons kosher (coarse or sea) salt
2 teaspoons cracked black pepper
4 hamburger buns, split
4 lettuce leaves
4 large tomato slices
4 red onion slices
Mustard and mayonnaise, if desired

Steps:

  • Heat gas or charcoal grill. Place meat in large bowl; pour Worcestershire sauce over beef and gently mix with hands. Divide meat into 4 very loose balls, then gently shape into patties 1/2 to 3/4 inch thick and about 1/2 inch in diameter larger than your hamburger buns. Slightly press center of each patty.
  • Sprinkle 1/4 teaspoon salt and 1/4 teaspoon pepper on 1 side of each patty. Place patties, seasoned side down, on grill over medium heat. Sprinkle top of each patty with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cover grill; cook 10 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.
  • Serve burgers on buns with lettuce, tomato, onion, mayonnaise and mustard.
