DUTCH APPLE CAKE
My husband and I came to Canada from Holland more than 40 years ago. This traditional Dutch recipe is a family favorite and has frequently gone along with me to potluck suppers and other get-togethers. —Elizabeth Peters, Martintown, Ontario

- In a large bowl, combine the apples, 3 tablespoons sugar and cinnamon; let stand for 1 hour. , In another bowl, cream butter and remaining sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Add vanilla. Combine flour and salt; gradually add to creamed mixture and beat until smooth. , Transfer to a greased 9x5-in. loaf pan. Push apple slices vertically into batter, placing them close together. , Bake at 300° for 1-1/2 to 1-3/4 hours or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Serve warm.

HOLLANDSCHE APPEL KOEK - DUTCH APPLE CAKE
Use a good baking apple for this old favorite such as Granny Smith, Jonathan, Cortland, Empire or Winesap. Cooling time not included in preparation time. From the Michigan Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

Steps:
- Preheat oven to 350F and butter a 8-inch cake pan.
- Sift flour with baking powder and salt.
- Cut in butter.
- Beat egg, add milk and stir quickly into flour mixture.
- Place apples decoratively in the prepared cake pan, sprinkle with sugar and cinnamon; spread dough over the top.
- Bake for 45 minutes.
- Loosen cake from sides and bottom and turn out onto a cake plate immediately.
- Serve with the dessert sauce of your choice; cinnamon, maple, butterscotch, brandy or lemon.

Steps:
- Preheat oven 375F.
- Grease and flour a 9 in. tart or pie pan.
- In a mixing bowl, combine flour, 2 T sugar and baking powder.
- With a pastry blender or 2 knives, cut in 1 1/2 T margarine.
- Add egg whites, milk and vanilla; beat until smooth.
- Batter will be stiff.
- Spoon into prepared pan and spread batter to fit pan.
- Arrange apple slices, overlapping, in 2 concentric circles to cover batter.
- In a small bowl, combine 3 T sugar and cinnamon; sprinkle over apple slices.
- Dot with 1/2 T margarine.
- Bake 30 min.
- Cool 10 min before serving.

- In large bowl, combine dry cake mix, melted butter and eggs; blend well.
- Spread on bottom of 13 x 9 inch baking pan.
- Spoon pie filling evenly over batter.
- In small bowl, combine brown sugar and cinnamon.
- Cut in softened butter.
- Stir in nuts.
- Sprinkle over pie filling.
- Bake at 350°F for 50 minutes or until cake springs back when lightly touched.

DUTCH APPLE CAKE
Steps:
- This cake has been made at Ballymaloe for years. We even have guests who ask for it specifically every time they visit. The fruit sinks to the bottom as it cooks, leaving a light sponge on top with a lovely sugary crust.
- Preheat the oven to 400 degrees F. Line the sides and base of a 8 by 8-inch square cake pan with parchment paper.
- Using an electric whisk or hand held mixer, whisk the eggs, 6 ounces caster sugar, and vanilla extract in a large bowl, until the mixture is thick and mousse-like, and the whisk leaves a figure of eight pattern, this will take about 5 minutes.
- Melt the butter in a saucepan with the milk, and then pour the mixture onto the eggs, whisking continuously. Sift in the flour, cinnamon, and baking powder, and fold carefully into the batter so that there are no lumps of flour. Pour the mixture into the prepared pan, and smooth the surface.
- Peel and core the apples, and cut them into thin slices, and then arrange them over the batter. They will sink to the bottom. This is meant to happen! Sprinkle the cake with the remaining 1/2 ounce sugar, and bake in the oven for 10 minutes. Reduce the oven temperature to 350 degrees F, and bake until well risen and golden brown, about 20 to 25 minutes.
- Allow the cake to cool in the tin, cut into squares and serve warm. It is delicious with cream!
DUTCH APPLE CAKE
This is another great cake for the fall. When apples are plentiful and delicious there are so many ways to thank mother nature for its bounty. I pick a lot of the wild apples in the fall, and turn them into great desserts.

- Sift flour with baking powder and salt.
- In a large bowl, cream shortening and 1 cup sugar until light. Beat in egg and vanilla until fluffy. Add sifted ingredients to the creamed mixture alternately with milk, beginning and ending with the sifted ingredients. Spread the batter into a greased 7 x 11 inch baking pan.
- Place apple pieces in rows on the batter with the sharp edges pressed in slightly. Sprinkle 1/4 cup sugar and cinnamon on top.
- Bake at 350 degrees F (175 degrees C) for about 50 to 60 minutes, or until the apples are tender and the cake tests done.
