Great for leftover ham. This is easy to make with ingredients you probably already have in the kitchen. Try adding peas or other vegetables, if desired.

2 cups cooked egg noodles
1 cup cubed, cooked ham
½ cup cubed Cheddar cheese
1 (10.75 ounce) can condensed cream of mushroom soup
½ (10.75 ounce) can milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the noodles, ham, cheese, soup and milk in a 9x9 inch casserole dish and mix well.
  • Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes.

1/2 cup onion, finely chopped
1 cup celery, finely chopped
3 tablespoons butter
3 tablespoons flour
1 tablespoon mustard
1 1/2 cups milk
2 cups cooked ham (chopped fine or shredded)
1 cup frozen green pea, thawed
8 ounces egg noodles, cooked and drained
salt and pepper, to taste
breadcrumbs
butter

Steps:

  • Saute the onion and celery in the 3 tablespoons of butter.
  • Add the flour and mustard and heat for a couple of minutes until the flour is cooked.
  • Gradually add the milk, stirring constantly, and continue heating until thickened.
  • Stir in the ham and peas and then toss in the noodles.
  • Season to taste with salt and pepper.
  • Pour into a greased casserole dish.
  • Sprinkle the top with bread crumbs and dot with butter.
  • Bake at 350°F for about 45 minutes.

1 Tbsp vegetable oil or canola oil
1 Tbsp unsalted butter
2 cups cooked ham, diced
1/2 cup onion, chopped
1 cup frozen peas (do not thaw)
1 cup frozen diced carrots (do not thaw)
1 (12-oz) can(s) evaporated milk
1 cup milk (or a splash or two more, for added creaminess)
1/2 cup sour cream
1 Tbsp dry mustard powder (or 2 tsp prepared yellow mustard)
1 cup shredded swiss cheese
1 cup shredded sharp cheddar cheese
1 (12-oz) pkg extra wide egg noodles, cooked according to package directions and drained
1 to 2 tsp salt
1 to 2 tsp black pepper

Steps:

  • 1. In a large skillet or 4-quart saucepan heat the oil and butter over medium heat. When the butter is melted, add the ham and onion, and sauté for about 3 minutes. Add the peas and carrots, and toss well until coated and glistening with the butter and oil.
  • 2. Stir in the evaporated milk, milk, sour cream, and mustard powder. Bring the mixture to a boil. Once it reaches a boil, reduce the heat to medium-low. Add both cheeses, and stir until cheese is melted and smooth. Remove from heat, cover, and set pan aside.
  • 3. Cook the noodles according to package directions until al dente or about 6 or 7 minutes; do not over-cook. Drain the noodles, then add warm noodles to the creamy ham and cheese mixture. Heat everything through until bubbling. (If the sauce is too thick side, stir in a few tablespoons of milk to thin it out a bit). Season with salt and black pepper, and serve immediately while still hot.

1 cup water
3 cups uncooked dumpling egg noodles (5 oz)
2 boxes (10 oz each) frozen broccoli, cauliflower, carrots & cheese flavored sauce
2 cups cubed (1/2 inch) cooked ham

Steps:

  • In 3-quart saucepan, heat broth and water to boiling. Add noodles; return to boiling. Reduce heat to medium-low; cook 8 to 10 minutes or until noodles are tender and most of liquid is absorbed, stirring occasionally (do not drain).
  • Meanwhile, cook vegetables as directed on box.
  • Gently stir vegetables in cheese sauce and ham into noodle mixture. Cook over medium-low heat 3 to 4 minutes or until hot, stirring occasionally.
