1 lb lean ground beef
1 cup onion, chopped
2 garlic cloves, minced
1 (32 ounce) jar meatless sauce
1 cup chicken broth
1 teaspoon dried oregano leaves
1 (16 ounce) package ziti pasta, cooked and drained
2 cups shredded mozzarella cheese
1 cup grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees F.
  • In a large skillet, cook ground beef, onions, and garlic over medium-high heat for 6 to 8 minutes or until beef is browned; stirring frequently.
  • Stir in spaghetti sauce, chicken broth, and oregano.
  • Reduce heat and simmer for 10 minutes.
  • Stir 1 cup of the sauce into the cooked ziti noodles.
  • Spoon 1/2 of the ziti mixture into a 13x9x2-inch baking dish.
  • Sprinkle with 1 1/2 cups mozzarella cheese and 1/2 cup Parmesan cheese.
  • Top with 2 cups sauce, then remaining ziti mixture and remaining sauce.
  • Cover and bake 20 minutes.
  • Sprinkle with remaining mozzarella and Parmesan cheese.
  • Return to oven and bake uncovered for 10 minutes or until heated through.

16 ounces Mueller's Ziti
1 pound lean ground beef
1/2 cup onion, chopped
2 cloves minced garlic or 1/2 teaspoon garlic powder
6 cups meatless spaghetti sauce, divided
1 cup pasta water, reserved from cooking Ziti
2 cups Mozzarella cheese, shredded
1 cup Parmesan cheese, grated and divided

Steps:

  • Slightly undercook Ziti, about 8 minutes. Drain, reserving 1 cup of the pasta cooking water, cover and set aside. Preheat oven to 375 degrees fahrenheit. In large skillet over medium heat cook beef, onion and garlic; stirring frequently 6-8 minutes or until beef is browned. Drain excess fat. Stir in 5 cups of sauce and pasta water. Reduce heat and simmer 10 minutes. Mix meat/sauce mixture with Ziti. Spoon 1/2 of Ziti mixture into 13x9 baking dish. Sprinkle with Mozzarella and 1/2 cup Parmesan cheese. Top with remaining Ziti mixture and remaining 1 cup Spaghetti sauce. Sprinkle with remaining 1/2 cup Parmesan cheese. Bake 25-30 minutes or until heated through.

8 ounces ziti rigate (ridged) or other short pasta
1 cup part-skim ricotta
1 large egg, lightly beaten
3/4 cup finely grated Parmesan
1 cup shredded part-skim mozzarella
1 jar (24 to 26 ounces) best-quality tomato sauce (about 3 1/2 cups)
1/2 loaf Italian bread (5 ounces)
2 tablespoons butter, melted
2 garlic cloves, minced
1 tablespoon sherry vinegar or red-wine vinegar
1 tablespoon olive oil
1 head Belgian endive, stem end trimmed, thinly sliced
2 bunches arugula (3 1/2 ounces total), thick stems removed

Steps:

  • 1. Preheat oven to 450 degrees. Bring a large pot of salted water to a boil. Cook pasta until al dente, according to package instructions; drain and reserve. 2. In a small bowl, combine ricotta, egg, 1/4 cup Parmesan, and half the mozzarella; season with salt and pepper. 3. In the bottom of a shallow 2-quart casserole dish, spread half the tomato sauce. Top with ziti, then ricotta mixture and remaining sauce. Sprinkle with remaining 1/2 cup Parmesan and remaining mozzarella. Place casserole on a rimmed baking sheet, and bake until top is browned and sauce is bubbling, 20 to 25 minutes. 4. Meanwhile, prepare garlic bread: Make deep, even cuts into the bread, about 1/2 inch apart, without cutting through the bottom. In a small bowl, combine butter and garlic; season with salt and pepper. Brush garlic butter between cuts in bread. 1 pound 1% cottage cheese
2 large eggs, lightly beaten
3 ounces grated parmesan cheese (about 1 1/2 cups)
1 pound ziti or other similar pasta (like penne)
2 tablespoons olive oil
5 medium garlic cloves, finely minced (about 5 teaspoons)
1 (28-ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes
1 teaspoon dried oregano
1 tablespoon dried basil (use 1/2 cup fresh basil if you have it but add it to the sauce after it has simmered and you take it off the heat)
1 teaspoon sugar
Black pepper
3/4 teaspoon cornstarch
1 cup heavy cream (or substitute whole milk but increase the amount of cornstarch to 2 teaspoons and the cooking time in step 3 by 1 to 2 minutes)
8 ounces mozzarella cheese, cut into 1/4-inch cubes

Steps:

  • Adjust an oven rack to the middle position and heat the oven to 350 degrees. Whisk the cottage cheese, eggs and 1 cup of the paremsan cheese together in a medium bowl; set aside. Bring 4 quarts of water to boil in a large pot over high heat. Stir in 1 tablespoon salt and pasta; cook, stirring occasionally, until pasta begins to soften but is not yet cooked through, about 7 minutes (the pasta will finish cooking in the oven). Drain pasta and leave in colander. Do not wash the large pot.
  • While the pasta is cooking, heat oil and garlic in a large skillet over medium heat until the garlic is fragrant but not browned, about 2 minutes. Stir in the tomato sauce, diced tomatoes, sugar, basil and oregano; simmer until thickened, about 10 minutes. Take off heat and season with salt and pepper to taste.
  • Stir cornstarch into heavy cream and transfer mixture to the now-empty large pot the pasta cooked in. Set the pot over medium heat. Bring to a simmer and cook until thickened, 3 to 4 minutes. Remove pot from heat and add cottage cheese mixture, 1 cup of the simmered tomato sauce, and half of the mozzarella cubes, then stir to combine. Add pasta and stir to coat thoroughly with sauce.
  • Transfer mixture to a 9X13-inch baking dish and spread remaining tomato sauce evenly over pasta. Sprinkle remaining mozzarella cubes and remaining 1/2 cup parmesan cheese over the top. Cover the baking dish with foil that has been lightly sprayed with cooking spray and bake for 30 minutes.
  • Remove foil and continue to cook until the cheese is bubbling and beginning to brown, about 30 minutes longer. Cool for 10 minutes. Serve.
