NEW ENGLAND CLAM CHOWDER (DAIRY-FREE AND LOW-FAT)



New England Clam Chowder (Dairy-Free and Low-Fat) image

I'm posting this for my mother. We recently returned from a trip to Cape Cod, where we were both very disappointed about not being able to eat the cream-filled clam chowder as a result of our IBS. This recipe is from my favorite cookbook, Eating for IBS by Heather van Vorous, and is completely dairy-free and delicious!

1 tablespoon olive oil
1 large onion, diced
2 large carrots, scraped and diced
1/2 cup flour
2 cups clam broth
3 cups plain soymilk or 3 cups rice milk
2 (6 1/2 ounce) cans chopped clams or 2 (6 1/2 ounce) cans minced clams
1/2 teaspoon white pepper
1 tablespoon dried parsley
3/4 teaspoon salt
1/2 teaspoon crushed thyme
1 bay leaf
1/4 teaspoon ground black pepper
4 cups baking potatoes, peeled and diced into 1 inch cubes
salt and pepper, for serving
fat-free saltine crackers, for serving

Steps:

  • In a large stockpot, heat the oil over medium heat. Add the onions and carrots and saute until softened.
  • Gradually sift in the flour, stirring thoroughly and scraping bottom of pan.
  • Very gradually stir in the clam broth, scraping sides and bottom of pan to make sure flour is thoroughly incorporated without clumping.
  • Stir in rice milk until mixture is smooth.
  • Add the clams and spices, bring soup to a boil, then cover and reduce heat. Simmer for 30 minutes.
  • Add diced potatoes, cover and simmer for an additional 30 minutes.
  • Taste and adjust seasoning with salt and pepper.
  • Serve with crushed Saltines.

I have not eaten clam chowder for over 22 years. I was vegan and now that I eat meats again I crave my favorite foods and clam chowder was one of them. This is, to me , a simple recipe once you have prepped all the ingredients. I truly love cooking. It taste good cold too.

Number Of Ingredients 15

2 or 4 slice bacon
2 can(s) bumble bee chopped clams in clam juice
1/2 yellow onion chopped
2 stick celery chopped with leaves
2 carrots, chopped
1 large potato cubed small
1 bay leaf
1/2 tsp sea salt
1 or 2 clove garlic minced
1/2 tsp thyme
1 tsp parsley
a few grinds of black pepper
2 Tbsp olive oil
1 1/2 c unsweetened plain silk almond milk
1 Tbsp flour or starch to thicken

Steps:

  • 1. Fry the bacon till crispy in a pan, set bacon aside to cool on plate with paper towel. Add the olive oil to the pan of bacon grease and cook onions till they are soft.
  • 2. Strain the clam juice into a 1 cup measure. If you do not get 1 cup clam juice just add water to make it 1 cup.You can rinse the clams in water to get any sand out then put in the fridge for the last step
  • 3. Put all the veggies,chopped up bacon and seasonings and onions with all the oil and bacon grease(no butter is needed in this recipe) into a pot add the clam juice and cook covered for 15 minutes, stir occasionally.
  • 4. After the 15 minutes add the milk mixed with the 1 Tbls flour, stir mix well take off the heat add your clams and enjoy.
