1 1/2 ounces mandarin orange sections
1 1/2 ounces pecans, brittle
1 1/2 pippin apples, cut 1/4-inch dice
3/4 ounce raisins
1/4 avocado, cut 1/4-inch dice
3/4 ounce dried cranberries
1/8 ounce green onion, sliced 1/4-inch
3/4 ounce blue cheese, crumbled

Steps:

  • Toss ingredients together.
  • Serve chilled with 2 oz Citrus Dressing.

6 ounces cleaned spinach leaves
3 ounces pecans, brittle (6 tablespoons)
1 ounce fried angel hair pasta (2 tablespoons)
1 ounce frozen wonton (fried and cut into strips 2 tablespoons)
1 ounce feta cheese (2 tablespoons)
1 ounce diced red onion (2 tablespoons)
1 ounce crispy bacon bits (2 tablespoons)
1 ounce shallots and green onion, fried crisp (2 tablespoons)
2 pinches toasted sesame seeds
6 roma tomatoes, wedges

Steps:

  • lace all ingredients with the exception of the Roma tomatoes in a mixing bowl and toss with 1/2 cup citrus dressing.
  • Place the salad in the serving bowls and garnish with the Roma tomatoes.

2 cups apple eider vinegar
1 cup corn syrup
3/4 cup honey
3 tablespoons sugar
12 ounce dehydrated onion
1 1/2 teaspoons dry tarragon
2 teaspoons dried thyme
2 teaspoons fresh garlic
2 teaspoons kosher sail
2 teaspoons ground black pepper
1/4 teaspoon onion powder

Steps:

  • Combine ingredients well and refrigerate to meld flavors. Before serving, whisk well to combine again.
