CITRUS-SPICE GLAZED HAM

- Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Cover and bake until a thermometer reads 130°, 2-1/2 to 3 hours., Meanwhile, in a small saucepan, combine 1/4 cup orange juice and Chinese five-spice powder; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 1-2 minutes. Stir in brown sugar and honey. In a small bowl, mix cornstarch and remaining orange juice until smooth; stir into brown sugar mixture. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. , Remove ham from oven. Brush with half of the glaze. Bake ham, uncovered, until a thermometer reads 140°, 15-20 minutes. Just before serving, stir fruit into remaining glaze; heat through. Serve with ham.

- Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern. Cover and bake until a thermometer reads 130°, 1-3/4 to 2-1/4 hours., Meanwhile, in a large saucepan, combine grapefruit and orange juices. Bring to a boil; cook until liquid is reduced by half, 6-8 minutes. Stir in remaining ingredients; return to a boil. Reduce heat; simmer, uncovered, until thickened, 12-15 minutes ., Remove ham from oven. Brush with 1/3 cup glaze. Bake, uncovered, basting occasionally with remaining glaze, until a thermometer reads 140°, 15-20 minutes longer.

CITRUS JALAPENO GLAZED HAM

- Let the ham sit at room temperature 30 minutes. Preheat the oven to 325 degrees F. Trim off any skin from the ham if needed. Score the ham through the fat in a diagonal crosshatch pattern without cutting into the meat. Place the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch of water into the bottom of the pan. Roast the ham until it reaches an internal temperature of about 130 degrees F, about 2 1/2 hours or 15 minutes per pound.
- Meanwhile, whisk together the lemon and lime juices, pepper jelly, Worcestershire sauce and jalapeno in a small saucepan. Bring to a simmer and reduce until thickened to about 3/4 cup, about 20 minutes.
- Remove the ham from the oven when it has reached 130 degrees F internally. Increase the oven temperature to 425 degrees F. Spoon or brush half of the glaze all over the ham. Add water as needed to the bottom of the pan. Return the ham to the oven and roast, basting every 10 minutes with the remaining glaze until glossy, glazed and well browned, about 45 minutes more.

CITRUS CHERRY GLAZED HAM
My favorite way to eat ham. The mixture of orange juice and cherry pie filling makes a great sauce that is not too sweet. The recipe is from Sawgrass and Pines, a Florida Cookbook.

- Preheat oven to 325 °F.
- In a medium saucepan, combine apple cider and water, bring to a boil, then set aside.
- You will use this mixture to baste ham as it cooks.
- Remove skin from ham.
- Place ham, fat side up and score fat into diamonds and stud with cloves.
- Coat top of ham with brown sugar.
- Place ham fat side up in a shallow baking pan.
- Insert meat thermometer (make sure it is not touching bone or fat portion).
- Bake for@ 2 hours or 22-25 minutes per pound.
- Meat thermometer should read 160 °F.
- Baste every thirty minutes with cider mixture.
- Combine remaining ingredients in a sauce pan.
- Bring to a boil, simmer for 5 minutes, stirring.
- Serve over ham slices.

- Preheat oven to 325 degrees F. Place ham in a large roasting pan & sprinkle with allspice. Pour cola into pan & bake uncovered for 45 minutes, basting occasionally with pan juices.
- Meanwhile, in a medium saucepan, combine remaining ingredients & cook over medium heat 3 - 5 minutes, or until cherry preserves are melted.
- Remove ham from oven & brush top & sides with glaze. Return ham to oven & cook an additional 45 minutes, or until a meat thermometer inserted in thickest part of ham registers 140 degrees F.; brushing with glaze every 15 minutes. Remove ham from oven & let rest 15 - 30 minutes before slicing. Serve warm or cold.

- Trim the fat on the ham to 1/4" thickness; score in a diamond pattern.
- Insert the cloves into the ham and place it in a 9x13" pan.
- Combine the soft drink, marmalade, brown sugar and mustard; pour over the ham.
- Basting every 20 minutes with pan juices, bake the ham at 350 degrees for approximately 2 1/2 hours.
- Let the ham rest for 15 minutes before serving.
