CITRUS PINEAPPLE COLESLAW
A blue-ribbon recipe, this slaw was a winner in our state fair competition. Alaska is famous for its giant cabbages, but any garden-variety head will taste yummy dressed in citrusy pineapple and marshmallow bits. -Carol Ross, Anchorage, Alaska

Steps:
- In a saucepan, combine the first 6 ingredients until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Stir a small amount into the eggs. Return all to saucepan, stirring constantly. Cook and stir until mixture reaches 160°. Cool for 5 minutes. Stir in cream cheese until melted. Refrigerate. , In a large salad bowl, combine the cabbage, carrots, pineapple and marshmallows. Add dressing; toss to coat. Garnish with carrot curls if desired.

- 1. Place cabbage in a colander over a plate. Sprinkle with sugar and salt; toss to coat. Let stand for 1 hour.
- 2. In a small bowl, whisk the dressing ingredients until blended. Rinse cabbage and drain well.
- 3. Place cabbage in a large bowl. Add dressing; toss to coat. Refrigerate, covered, overnight.

This Coleslaw is a family favorite of mine for anytime of the year. I have a very picky 9 year old son who will not eat any type of salad but he LOVES this recipe....

CITRUS AND FENNEL COLESLAW
Steps:
- Combine coleslaw mix and orange in a large bowl. Combine all dressing ingredients in a small bowl; whisk until blended. Add dressing to coleslaw; toss lightly to coat. Chill at least 30 minutes before serving. Recipe Note: To toast fennel seed, place in small skillet; toast over high heat 1 minute or until fragrant, shaking pan occasionally.
SPRING COLESLAW WITH FRESH HERBS AND LIGHT HONEY CITRUS VINAIGRETTE
Steps:
- Slaw
- Combine the cabbage, arugula, pea shoots, and carrots in a large bowl and toss gently to mix.
- Vinaigrette
- Combine the olive oil, herbs, lime zest and juice, lemon zest and juice, shallot, vinegar, and honey in a bowl and whisk to mix.
- Pour the vinaigrette over the cabbage mixture, season with salt and pepper to taste, and toss gently to mix. Serve at room temperature or refrigerate in an airtight container until ready to serve. (If making ahead of time, wait to add the pea shoots until just before serving.)
- On the Side
- The bright mixture of honey and citrus in the vinaigrette makes this slaw the perfect accompaniment for mild fish, like Grilled Grouper with Heirloom Tomato Salsa (page 102) or Chicken Under a Skillet (page 139).
