Nonstick vegetable oil cooking spray
8 large eggs
1/2 cup whole milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 ounces thinly sliced ham, chopped
1/3 cup freshly grated Parmesan
2 tablespoons chopped fresh Italian parsley leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Spray 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.

1 Italian turkey sausage link (about 4 ounces), casing removed
1-1/2 cups frozen shredded hash brown potatoes, thawed
1/2 cup chopped onion
1 garlic clove, minced
1 teaspoon canola oil
1/3 cup water
1/2 teaspoon salt
1/2 to 1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon pepper
3 large eggs
2 large egg whites
1 cup buttermilk
2 tablespoons all-purpose flour
1/4 cup shredded Parmesan cheese
3/4 cup salsa

Steps:

  • In a nonstick skillet, cook sausage over medium heat until no longer pink. Remove with a slotted spoon to paper towels. Discard drippings., In the same pan, saute potatoes, onion and garlic in oil until potatoes are golden brown, about 5 minutes. Add water, seasonings and sausage; cook and stir over medium heat until the water has evaporated, about 1 minute., In a bowl, combine the eggs, egg whites, buttermilk, flour and Parmesan cheese. Stir in sausage mixture. Fill muffin cups coated with cooking spray three-fourths full., Bake at 350° for 20-25 minutes or until a knife comes out clean. Carefully run a knife around the edge of cups to loosen frittatas. Serve with salsa.

These mini sausage and cheese frittatas are super easy to fix and bake. The mini frittatas are baked in standard muffin cups.

Number Of Ingredients 8

1/2 pound breakfast sausage (divided or about 1 cup of cooked crumbles)
4 large eggs
1/4 cup milk
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
2 teaspoons chopped fresh parsley leaves
Optional: a few drops Tabasco sauce
2/3 cup shredded cheddar cheese or a cheddar and Monterey jack blend (divided)

Steps:

  • Heat the oven to 375 F.
  • Spray 8 muffin cups with nonstick cooking spray.
  • In a large skillet over medium heat, brown the sausage, breaking it up into small chunks as it cooks. With a slotted spoon remove the sausage to paper towels to drain thoroughly.
  • In a medium bowl, whisk the eggs and milk until well blended. Add the salt, pepper, parsley, and Tabasco . Mix well.
  • Add about three-quarters of the sausage and about 1/2 cup of the shredded cheese and mix to blend.
  • Fill the prepared muffin cups about two-thirds full. Sprinkle the remaining sausage and cheese over the filled muffin cups.
  • Bake for 18 to 22 minutes, or until the frittatas have puffed and set. Remove the pan to a rack and use a knife or spatula to loosen the sides. Lift them out onto a plate.
  • Serve these mini frittatas with a little ketchup, salsa, or marinara sauce, or serve with sliced tomatoes on the side.

Canola oil to cook
2 potatoes, peeled and diced 1/4-inch thick
2 lapchongs (Chinese sausages), sliced 1/8-inch thick
1 large red onion, julienned
1 red bell pepper, julienned
6 scallions, sliced 1/8-inch thick
10 large eggs, beaten
Salt and black pepper to taste
2 cups shredded cheddar cheese

Steps:

  • Preheat an oven to 350 degrees. Coat a large, hot oven-proof skillet (can be non-stick) with oil and saute potatoes, lapchong, onions and peppers for about 6 minutes. Add scallions and eggs and season. Stir around for 30 seconds, top with cheese then place in the oven. Bake for 20 minutes or until a knife inserted in the center comes out clean. If top is not brown and crusty, turn on broiler to brown the cheese, about 2 minutes. Let rest 3 minutes before slicing into pie wedges and serving.
