CINNAMON SWIRL QUICK BREAD
While cinnamon swirl bread is a natural for breakfast, we love it so much we enjoy it all day long. This is a nice twist on traditional cinnamon swirl yeast breads. -Helen Richardson, Shelbyville, Michigan

Steps:
- Preheat oven to 350°. In a large bowl, combine flour, 1 cup sugar, baking soda and salt. Combine buttermilk, egg and oil; stir into dry ingredients just until moistened. In a small bowl, combine cinnamon and remaining sugar. , Grease the bottom only of a 9x5-in. loaf pan. Pour half the batter into pan; sprinkle with half the cinnamon-sugar. Carefully spread with remaining batter and sprinkle with remaining cinnamon-sugar; cut through batter with a knife to swirl., Bake 45-50 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pan to a wire rack to cool completely. Combine confectioners' sugar and enough milk to reach desired consistency; drizzle over loaf.

Steps:
- Preheat oven to 350°F.
- In a large mixing bowl, beat together butter, 1 cup sugar, and egg.
- Combine the flour, baking powder, baking soda, and salt.
- Add the flour mixture to the egg mixture alternately with the buttermilk.
- In a small bowl, combine the cinnamon and remaining 1/3 cup sugar.
- Pour a third of the batter into a greased 8X4X2-inch loaf pan.
- Sprinkle a third of the cinnamon sugar on top of batter.
- Repeat layers twice.
- Bake for 45-50 minutes, until a toothpick inserted near the center comes out clean.
- Cool in pan for 10 minutes.
- Remove from pan to a wire rack to cool completely.

EASY CINNAMON SWIRL QUICK BREAD
This recipe is from a Company's Coming cookbook it goes back a long time and is one of my son's all time favorite cakes, and it is sooooo easy to make just mix and bake! These can also be baked in mini loaf pans, but adjust the baking time, they also freeze very well. I most always double the topping mixture!

- Set oven to 350 degrees F.
- Grease a 9 x 5-inch loaf pan.
- In a small bowl mix together all topping ingredients (you can double the amounts if desired for more cinnamon swirl).
- In a large bowl combine all the cake ingredients and mix until well combined.
- Transfer the batter to the prepared baking dish.
- Sprinkle the topping mixture over the batter, then run through with a knife to create a swirl pattern.

LOWER-FAT CINNAMON SWIRL QUICK BREAD
This is an easy and DELICIOUS cinnamon swirl bread. My family loves it...it's hard to keep on the shelf for long! This is lower fat because my recipe substitutes applesauce for most of the oil, but you cannot tell..it makes it better I think. We also don't make the glaze all the time- and love the bread even without it!

- Preheat oven to 350 degrees.
- Combine 1/2 cup sugar and cinnamon; set aside.
- Combine flour, baking soda, salt, and remaining 1 cup of sugar.
- In a separate bowl, combine buttermilk, egg, applesauce, and oil. Stir into dry ingredients JUST until combined. (Do not overmix.). (If you do not have buttermilk, buttermilk substitutes work. I use lemon juice and milk method.).

CINNAMON SWIRL PUMPKIN QUICK BREAD

- Preheat oven to 350^. Grease 2 - 9x5-inch loaf pans and line the bottoms with waxed paper.Spray paper. Set aside.
- In a small saucepan add cream cheese, butter and evaporated milk; heat until cream cheese is melted. Whisk until smooth. Remove from heat , set aside to cool. In a large bowl combine flour, baking powder, soda, salt, cinnamon, ginger and cloves. Set aside.
- In a large mixer bowl combine pumpkin,brown sugar, and eggs. Add cream cheese mixture and blend well. Add flour mixture slowly and mix until well blended. Stir in nuts.
- Pour batter into prepared pans 1/2 way, sprinkle filling mixture over batter and swirl in with a knife. Pour remaining batter equally over filling; then sprinkle topping evenly over loaves. Bake at 350^ for 45 to 50 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Cool in pan 15 minutes, remove and cool completely. When cool remove waxed paper from bottom of loaves.
- FILLING: Combine ingredients and stir to dissolve sugar. --- TOPPING: Combine all ingredients and using a fork or your hands, work the butter into the other ingredients until it resembles coarse sand.

CINNAMON SWIRL QUICK BREAD

- Heat oven to 350 degrees. Grease a loaf pan. Combine ingredients for swirl in small bowl and set aside. Combine sugar, flour, baking powder, baking soda and salt in large bowl. In another bowl mix the rest of the wet ingredients. Combine the wet into the dry ingredients. Pour 1/2 of batter in loaf pan. Sprinkle on swirl ingredients. Top with remaining batter. Bake for 40-50 minutes. Cool in pan for 10 minutes. Remove to wire rack to cool completely.

- 1. In a large bowl add the flour, sugar, xanthan gum and salt.
- 2. In a medium bowl add the buttermilk, oil and egg. Blend well with a mixer and set aside. Note: If you don't have buttermilk put 1 tbsp. lemon juice or white vinegar into a one cup measure. Fill with milk to the 1 cup mark. Let sit until it curdles.
- 3. Add wet ingredients to the dry and mix until combined.
- 4. Mix the sugar and cinnamon in a bowl. This is for the toppings.
- 5. Spray a loaf pan with non-stick spray. Add 1/2 the batter to the loaf pan and sprinkle 1/2 the sugar/cinnamon mixture on the batter. Add the rest of the batter and add the rest of the sugar/cinnamon mixture on top of the batter. Run a scewer through the batter to make a swirl pattern.**
- 6. Bake at 350'F for 45-50 minutes in the center of the oven until done. Cool for a few minutes in the loaf pan, then turn it out onto a wire rack until cold. Do not slice until cold otherwise the bread might fall apart.
- 7. ** According to GF Kitchen the batter may have varied results depending on the elevation at which you live as well as the humidity of the flour. If your batter is very thick and you are unable to swirl the cinnamon in the batter try this trick: Spread 1/2 the batter into the loaf pan, using your finger poke holes through out the batter then sprinkle have the sugar on the batter, then spread the remaining batter on top and poke more holes in the batter then sprinkle the rest of the cinnamon sugar on top. Bake as usual.
