These shortbread sugar cookie bars are an easy, tasty variation on the traditional cookie.

2 cups all-purpose flour
1 cup butter, softened
½ cup confectioners' sugar
¼ teaspoon salt
¼ teaspoon baking powder
2 tablespoons cinnamon sugar, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix flour, butter, confectioners' sugar, salt, and baking powder together in a bowl using an electric mixer on medium speed until well blended. Pat dough into a 9-inch square baking pan. Sprinkle with cinnamon sugar.
  • Bake in the preheated oven until edges are golden, 30 to 35 minutes. Cut into bars while still warm.

2 cups butter, room temperature
1 cup powdered sugar
3 1/2 cups flour
1/2 cup cornstarch
1/4 cup sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 325 degrees.
  • In the bowl of a stand mixer, beat together the butter and powdered sugar until light and fluffy.
  • Mix in the flour and cornstarch until well combined.
  • Pat into an ungreased 10x15 rimmed baking sheet. Prick all over with a fork.
  • In a small bowl, combine the sugar and cinnamon. Sprinkle evenly over the dough.
  • Bake for 40 minutes or until the edges are lightly golden and the cookie is set.
  • Cut into bars while still warm.

1 1/2 cups all-purpose flour
3/4 cup powdered sugar
1/2 cup cake flour
1 cup butter, softened
1/2 teaspoon cinnamon
1 tablespoon sugar
1/8 teaspoon cinnamon

Steps:

  • Preheat oven to 350°.
  • Combine all the ingredients for shortbread in large mixing bowl.
  • Beat at low speed just until a soft dough forms.
  • Press dough evenly onto bottom of a lightly greased 13x9 baking pan.
  • Stir topping ingredients in small bowl; sprinkle over shortbread.
  • Prick all over the top with a fork.
  • Bake 20-30 minutes or until light golden brown.
  • Cool slightly and cut ito squares while shortbread is still warm.

I just love shortbread cookies..don't you if you don't have a shortbread mold, just use 2 9" pie pans..prick all over..sprinkle with cinnamon sugar and score each pan into 8 wedges..do not cut all the way through...bake as directed..cool on rack and finish cutting wedges

  • press evenly on bottom of 2 9" shortbread molds --
  • prick all over with fork --

  • invert onto wooden board.
