CINNAMON CRISPS COOKIES [SNICKERDOODLES]
This is a European version of the snickerdoodle. This cookie has the softest dough and makes a bakery-style cookie that will impress you. (Recipe from Chef Express: Home Baking translated cookbook) Tip: You can make caster sugar by putting granulated sugar in your blender and pulse for about 1-2 minutes. The sugar should be reduced to half. It doesn't take long.. be careful not to turn it into sugar powder. However, most supermarkets do carry 10X sugar aka SuperFine sugar.

Steps:
- Place butter and 3/4 cup of sugar in a bowl and beat until light and fluffy. Add egg and beat well.
- Sift together flour, baking powder, baking soda. Now, stir into butter mixture.
- Turn dough onto a lightly floured surface and knead briefly. Wrap in plastic food wrap and refrigerate for 30 minutes or until firm.
- Place cinnamon and remaining 1/4 cup of sugar in a small bowl and mix to combine. Roll dough into small balls, then roll balls in sugar/cinnamon mixture.
- Place 2 inches apart on lightly greased baking trays and bake at 350 degrees for 4-8 minutes or until golden.
- Remove to wire racks to cool.
CINNAMON SWIRL SUGAR COOKIES (A.K.A. SNICKERDOODLES)
This recipe is as close to foolproof as I have ever made. I have never made an edible cookie, and my wife of 32 years has always had difficulty makeing sugar cookies, so when I found this recipe in Cook,s Illustrated, I was amazed with how well this worked. I made some tweeks to lower the sugar amount and added cinnamon to change the flavor and look. Please enjoy!

- Adjust oven rack to middle position, heat oven to 350 degrees. Line 2 large baking sheets with parchment paper. Whisk flour, baking soda, baking powder and salt together in a medium bowl, then set aside.
- Put 1 1/2 cups sugar & room temperature cream cheese in a bowl, pour warm melted butter over the sugar & cream cheese and mix to combine. Whisk in oil, then add egg, milk and vanilla until smooth. Add flour and mix with a rubber spatula until a soft dough forms.
- Take @ 1 tablespoon of the dough and roll into a dough ball(about the size of a ping pong ball) Put the 2 tablespoons sugar and 2 teaspoons cinnamon in shallow pie tin, using your hands gently roll dough in the sugar / cinnamon mixture to coat. Place dough ball on a cookie sheet, and gently flatten the top.
- Bake 1 tray at a time until the edges are set and just beginning to brown, @11-14 minutes. Cool 5 minutes on the baking sheet, then transfer to cooling rack until room temperature. ENJOY!

Steps:
- In a large mixing bowl beat togethor the 3/4c sugar, butter, egg, and vanilla.
- In a small bowl stir togethor the flour, salt, baking soda, and cream of tartar.
- Stir into the butter mixture until well mixed.
- Cover and refrigerate the dough for several hours.
- In a small bowl combine the 2T of sugar and the 2t of cinnamon.
- Grease a cookie sheet with non-stick spray, shortening, etc.
- Shape the cookie dough into 1-inch balls; roll each in the cinnamon-sugar mixture.
- Place the cookies on the cookie sheet making sure they are 2-inches apart.
- Bake for 8-10 minutes at 375 degrees.
- Remove with a pancake turner or something else and place on a cooling rack.
APPLE CINNAMON SNICKERDOODLES
I got this recipe from an old friend of mine. It's a different twist of a Snickerdoodle cookie. Hope you enjoy it as much as my family and friends do.

- 1. Line cookie sheets with parchment paper. Set oven to preheat at 350.
- 2. Stir together the following dry ingredients in a large bowl: flour, cornstarch, baking soda, salt, nutmeg, and cinnamon. Set aside--
- 3. In the mixer bowl, cream the butter until light and fluffy. Add both sugars and mix until fully incorporated. Next, add the eggs, one at a time, and beat until the batter looks well blended. Add the dry ingredients in sections, mixing well after each addition. Remove the bowl from the stand and gently stir in the diced apples.
- 4. Measure the dough by approximately 1 tablespoon each and roll in the cinnamon sugar mixture until completely coated. Place the balls 2 inches apart on the parchment lined cookie sheets. Flatten slightly .
- 5. Bake 9 minutes, then turn pan around and bake another 9 minutes. Allow cookies to cool in baking pan ---- Enjoy!!

- Preheat oven to 400 degrees F.
- Spray 3 baking sheets w/ nonstick cooking spray.
- In a large bowl, beat cake mix, eggs, 1.4 cup vegetable oil & 1/4 teaspoon cinnamon with a wooden spoon until it forms a soft dough.
- In a small bowl, combine sugar and remaining cinnamon; mix.
- Form small ( 1 inch) balls w/ cake mixture then roll in sugar mixture.
- Place dough balls, spaced well apart, on baking sheets.
