This easy cinnamon streusel topping recipe (or crumb topping, as it's sometimes called) will spruce up a batch of muffins or a fruit-filled pie.

1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup unsalted butter, cold
1/2 teaspoon ground cinnamon

Steps:

  • Gather the ingredients.
  • Combine all the ingredients in a food processor and pulse until crumbly. Alternatively, you can mash the ingredients together in a bowl using a fork . Don't use your fingers, since the warmth of your fingers will soften the butter and cause the crumb texture to become mealy.
  • Sprinkle the topping over muffins, pies, or coffee cake immediately before baking.
  • Bake muffins, pies, or coffee cake.

Especially good on apple or peach pies. My original recipe says it make enough for 2 8-inch pies but a lot of times I use the whole thing on one 10-inch.

1/2 cup butter
1 cup brown sugar
3/4 cup flour
3/4 cup oatmeal (any type but instant)
1/2 teaspoon cinnamon
1/4 teaspoon salt

Steps:

  • In a large mixing bowl combine all the ingredients except the butter.
  • Cut butter into mixture with a pastry blender until mixture resembles coarse bread crumbs.
  • Spread crumbs over prepared fruit mixture of your favorite fruit pie.
  • Do NOT add top crust.
  • Bake as directed in your fruit pie recipe.
  • If crumbs become too dark while baking, cover loosely with foil, but remove foil the last few minutes of bakings so the topping will crisp.
  • Note: when using this topping there is no need to dot the fruit with butter, if your recipe calls for that.

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

6 apples - peeled, cored, and sliced
2 tablespoons white sugar
½ teaspoon ground cinnamon
1 cup brown sugar
¾ cup old-fashioned oats
¾ cup all-purpose flour
1 teaspoon ground cinnamon
½ cup cold butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Toss apples with white sugar and 1/2 teaspoon cinnamon in a medium bowl to coat; pour into a 9-inch square baking dish.
  • Mix brown sugar, oats, flour, and 1 teaspoon cinnamon in a separate bowl. Use a pastry cutter or 2 forks to mash cold butter into the oats mixture until the mixture resembles coarse crumbs; spread over the apples to the edges of the baking dish. Pat the topping gently until even.
  • Bake in preheated oven until golden brown and sides are bubbling, about 40 minutes.
