Number Of Ingredients 6

4 cups unsweetened apple juice
1 package (1-3/4 ounces) powdered fruit pectin
6-1/2 cups sugar
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon fresh ground nutmeg

Steps:

  • In a Dutch oven, combine apple juice and pectin. Bring to a full rolling boil over high heat, stirring constantly. In a bowl, combine remaining ingredients. Stir into apple mixture; return to a full rolling boil. Boil and stir for 3 minutes., Remove from heat; skim off foam. Ladle hot mixture into seven hot sterilized half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

1 qt apple cider
2/3 c red hot candies
1 pkg (3/4 oz) powdered fruit pectin
5 c sugar (put into bowl for immediate pouring)

Steps:

  • 1. In LARGE kettle, heat cider, red hots and pectin over HIGH, stirring often. Bring to a full rolling boil (This is a boil that you cannot stir down - that keeps boiling when you stir vigorously).
  • 2. Add sugar (all at once) ; return to a full rolling boil, stirring constantly. After mixture comes to a full rolling boil, then time for exactly 1 minute.
  • 3. Remove from heat; skim off any foam (I have never had any). Pour into hot jars leaving 1/4-inch headspace.
  • 4. Take a damp paper towel and wipe any jelly from rim of jar so caps won't stick. Adjust caps. Turn jars over on toweling and time 5 minutes. Turn jars upright and leave until cool and jelled.
  • 5. This recipe made 8-8oz jars with a little left over which I put into a small glass container to use immediately when cooled.

2 cups apple juice
1/4 cup lemon juice
1/2 cup red cinnamon candies (red hots)
3/4 cup water
1 teaspoon red food coloring
1/4 teaspoon mace
1 box dry pectin
8 whole cloves
1 cinnamon stick
4 cups sugar

Steps:

  • Prepare home canning jars and lids according to manufacture's instructions.
  • Jars must be covered with water and boiled 10 minutes to sterilize.
  • Combine apple juice, lemon juice, red hots, water, food coloring, mace and pectin.
  • Tie cloves and cinnamon stick in a spice bag.
  • Add spice bag to juice mixture.
  • Bring mixture to a boil, stirring constantly.
  • Add sugar, stirring to dissolve.
  • Bring to a rolling boil.
  • Boil hard for 2 minutes.
  • Remove from heat and skin foam, if necessary.
  • Carefully ladle hot jelly into hot jars, leaving 1/4" head space.
  • Wipe jar rim clean.
  • Place lid on jar with sealing compound next to glass.
  • Screw band down evenly and firmly.
  • Do not use excessive force.
  • Process jelly 5 minutes in a boiling water canner.

This is a very good jelly for around Christmas time , I like to pour this over a block of cream cheese and serve with crackers but its great for breakfast too.

1 qt canned apple juice
1 pkg powdered pectin
4 1/2 c sugar
1 - 2 Tbsp red cinnamon candy (red hots)
( i used 4tbs = 1/3 cup )

Steps:

  • 1. Combine the juice and the pectin in a large saucepan ; bring to a full rolling boil.
  • 2. Add sugar and the red hots ; stirring constantly and return to a boil ; boil for 2 minutes. skim foam from top.
  • 3. Pour into sterilized hot jelly jars , filling to within 1/8" of top. Wipe the jar rim with a wet cloth. Top with lid and screw on ring.
  • 4. Process in a boiling water bath for 5 minutes , remove from the water bath and place on a towel and let cool.

I have not tried jelly. I'm posting this for safe keeping. I found this recipe Complete Book Of Small Batch Preserves. This full bodied taste of fresh apple cider spiced with cinnamon is marvelous on toast and hot biscuits. Try heating the jelly and serve over pancakes or french toast. Reserve the cinnamon stick and add a small piece to each jar for an attractive garnish and more intense cinnamon flavor. I plan to use Splenda for the sugar.

2 1/2 cups fresh pressed apple cider (625 ml)
1 cinnamon stick, 4-inches (10 cm)
3 1/2 cups granulated sugar
1 tablespoon liquid fruit pectin (1 pouch)

Steps:

  • Combine cider and cinnamon pieces in a large stainless steel or enamel saucepan. Cover and bring to a boil over high heat, reduce heat and boil gently for 5 minutes. Strain cider through several layers of cheesecloth, reserving cinnamon pieces to add to jars. Rinse saucepan.
  • Measure 2 cups (500 ml) cider and return to saucepan; add sugar. Bring to a full boil over high heat, stirring constantly. Stir in pectin, return to a full boil and boil hard for 1 minute, stirring constantly. Remove from heat.
  • Ladle into sterilized jars, add one piece of cinnamon to each jar and process as directed.

2 teaspoons butter
1 cup red-hot candies
9 cups sugar

Steps:

  • Place the apple juice in a large kettle. Stir in pectin and butter. Bring to a full rolling boil over high heat, stirring constantly. Stir in candies until dissolved. Stir in sugar; return to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat; skim off foam. Pour hot mixture into hot sterilized jars, leaving 1/4-in. headspace. Adjust caps. Process for 5 minutes in a boiling-water bath.

1-3/4 cups bottled apple juice
1/2 tsp. ground cinnamon
3-3/4 cups sugar, measured into separate bowl
1 pouch CERTO Fruit Pectin

Steps:

  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Measure apple juice and cinnamon into large bowl. Stir in sugar. Let stand 10 min., stirring occasionally.
  • Add pectin; stir 3 min. or until sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jelly is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

Number Of Ingredients 6

15 pears, peeled, cored and chopped
½ teaspoon cinnamon
660g of jam sugar (with added pectin for fruits with low pectin levels)
Iced water
3-4 small jars with tight fitting lids
Circles of greaseproof paper cut slightly smaller than the top of each jar

Steps:

  • Wash the jars thoroughly in hot soapy water. Rinse and leave to drain. To sterilise, place them in a cold oven (including metal lids) and turn up to around 120oC for at least 15 minutes. Place chopped pears in a large, heavy-based saucepan with around 1 inch of cold water. Bring to the boil. Once boiling, turn down the heat and leave to cook until soft Blend the cooked pears (with their cooking water) into a puree. Sieve the puree, either using a cheesecloth or a juicer attachment for the blender. This should produce around 500ml of juice. Discard the remaining pear pulp. Place the juice into a large, heavy-based saucepan and heat gently. Stir in the cinnamon. Add the jam sugar while stirring constantly. Bring back to the boil until it reaches a 'rolling' boil (where the liquid does not stop boiling even when stirred). Separately, place a metal teaspoon in a small bowl of iced water and check that the jars in the oven are still hot. Once boiling, cook for a further 4 minutes (or as per jam sugar instructions). Turn off the heat. Take the teaspoon out of the iced water and extract one spoonful of the boiling liquid. Cool it quickly by holding it on the surface of the iced water. Tip the spoon - if the pear jelly sets almost immediately, it is ready. If it does not set, bring the pan back to the boil and test again after another minute. Once the jelly is ready to set, pour it into the hot sterilised jars, almost to the brim. Cover each jar with a circle of greaseproof paper on top of the jelly (ensuring that there are no air bubbles). Place the lids on the jars tightly and leave to cool. Store in a cool, dry, dark place.

4 cups granulated sugar

Steps:

  • Combine apple juice and pectin in a large microwave-safe bowl.
  • Cover with plastic bring to a boil on HIGH setting in the microwae for about 12 to 14 minutes.
  • Stir twice during cooking.
  • Remove from microwave; add sugar and red hots, stirring well.
  • Return to the microwave and cook until the mixture returns to a rolling boil, about 10 or 12 minutes, stirring occasionally.
  • Boil hard for 1 minute.
  • Remove from microwave and skim any foam.
  • Pour into hot sterilized jars, leaving 1/4 inch headspace.
  • Cap and Seal.
  • Process 5 minutes in a boiling water canner.

3 lbs (about 6) firm-ripe pears, stemmed but not cored, and cut into 1 1/2-inch pieces
1 3 1/2-inch cinnamon stick, broken into small pieces
1/4 cup strained lemon juice
1 1 3/8-ounce box powdered pectin
1 tsp unsalted butter
7 cusps sugar
9 3 1/2-inch cinnamon sticks

Steps:

  • Mince pears. Combine with broken cinnamon and 3 1/2 cusps cold water. Simmer 15 minutes. Ladle into jelly bag and drip for 2 hours, scrapping occasionally with spatula. Ad hot water to make 5 cups juice. Combine juice and lemon juice. Add pectin gradually, stirring vigorously and bring to full rolling boil that froths. Stir in butter and sugar and bring to full rolling boil for 1 minute. Remove from heat. Ladle into jars. Insert 1 cinnamon stick into each jar and seal.

2 lbs cranberries (fresh or frozen)
2 cups water
4 cinnamon sticks
2 cups sugar (to each 2 C. juice see recipe)

Steps:

  • In a large saucepan, simmer cranberries, water and THREE of the cinnamon sticks until berries pop.
  • Remove cinnamon sticks, mash berries with potato masher.
  • Spoon berries & liquid into a cheeecloth clipped to a colander, suspended over a large bowl; let juice strain WITHOUT FORCING -- for a few hours or overnight.
  • DO NOT SQUEEZE the bag or the jelly will get cloudy.
  • Measure juice into saucepan, add 2 cups of sugar for every two cups of juice; add remaining cinnamon stick.
  • Stir over low heat until sugar dissolves, the boil rapidly to 200*F (sea level)--stir to prevent sticking and burning.
  • Remove pan from heat; skim foam; remove cinnamon stick.
  • Spoon jelly into prepared jars, seal with two-part lids; process in a boiling water bath for 15 minutes (sea level).
  • Label & store in cool dark place.

CINNAMON ANISE JELLY

This recipe comes from the Ball Blue Book. It sets up beautifully and has such a lovely holiday flavor!! The butter will make skimming the foam unnecessary but don't add more than 1/2 teaspoon as this could raise the ph of the recipe too much and make it unsafe for canning.

2 cups apple juice
2 cinnamon sticks
1 teaspoon anise seed
3 1/2 cups sugar
1 (3 ounce) package liquid pectin
1/2 teaspoon butter

Steps:

  • Break the cinnamon sticks into two or three pieces and tie them and the anise seed in a spice bag (make your own with several layers of cheesecloth and kitchen twine!).
  • Put the apple juice and the spice bag in a large stockpot and simmer for 10 minutes.
  • Add the sugar and the butter, stirring until dissolved.
  • Bring to a boil, stirring frequently.
  • Stir in the liquid pectin and return to a rolling boil. Boil hard for 1 minute, stirring constantly.
  • Remove from heat and discard the spice bag. Ladle the hot jelly into hot jars, leaving 1/4 inch headspace. Adjust two-piece caps.
  • Process 10 minutes in a boiling-water canner (adjust for altitude).
