2 3/4 Cups All Purpose Flour
2 Eggs
2 Tsp Ground Cinnamon
1/2 Cup Unsalted Butter
1 1/2 Cups White Sugar
1/2 Cup Vegetable Shortening
1/2 Tsp Salt
2 Tsp Cream of Tartar
1 Tsp Baking Soda
1 Tsp Vanilla Extract

Steps:

  • Preheat oven to 400°F.
  • Line a baking sheet with parchment paper.
  • Using an electric mixer, beat butter, eggs, shortening, vanilla, and 1 1/2 cups sugar at medium speed until creamy.
  • Combine flour, baking soda, salt, and cream of tartar. Sift into butter mixture and mix to combine.
  • In a separate bowl, mix cinnamon and 2 Tbsp of sugar.
  • Scoop 1 tablespoonful of dough and roll into a ball. Toss in cinnamon sugar mixture and place on baking sheet.
  • Bake for 8 to 10 minutes or until golden brown. Cool completely before serving.

These are yummy cinnamon cookies made with graham cracker crumbs. If you want a little variation, throw in a bag of butterscotch chips. My kids love them plain. I find it easiest to freeze the dough in logs, then slice and cook them as I want them. Enjoy!

2 cups graham cracker crumbs
1 ½ cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup butter
¼ cup white sugar
1 ¼ cups packed brown sugar
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Stir together graham cracker crumbs, flour, cinnamon, baking soda, and salt in a mixing bowl; set aside.
  • Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Beat in the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Mix in vanilla. Mix in the flour mixture. Scoop the dough out onto ungreased baking sheets by rounded spoonfuls.
  • Bake in the preheated oven until slightly browned at the edges, 9 to 11 minutes.

¾ cup butter, softened
½ cup white sugar
½ cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 cup graham cracker crumbs
½ teaspoon salt
½ teaspoon baking soda
¾ cup candy-coated milk chocolate pieces
2 cups semisweet chocolate chips
½ cup chopped pecans

Steps:

  • Beat together margarine and sugars until light and fluffy. Blend in egg and vanilla. Add combined flour, graham cracker crumbs, baking soda and salt. Mix well. Stir in chocolate chips , M & M's, and nuts.
  • Drop dough by heaping tablespoonfuls onto greased cookie sheets about 3 inches apart . Press 2 or 3 additional M & M candies on top of cookies if desired.
  • Bake in pre-heated oven 375 degrees F (190 degrees C) for 8-10 minutes or until lightly browned. Cool on sheet about 3 minute and remove to wire racks.

Number Of Ingredients 17

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm 2% milk (110° to 115°)
1/4 cup sugar
1/4 cup shortening
1 egg
1 teaspoon salt
4 cups all-purpose flour
FILLING:
1/2 cup sugar
1/2 cup packed brown sugar
1/4 cup butter, melted
1 teaspoon ground cinnamon
TOPPING:
1/4 cup butter, melted
1 cup sugar
1 teaspoon ground cinnamon
1/2 cup chopped pecans

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add the sugar, shortening, egg, salt and 2 cups flour; beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise until doubled, about 1 hour., Combine filling ingredients; set aside. Punch dough down; divide in half. On a floured surface, roll each portion into a 12-in. square. Spread filling over dough. Roll up tightly jelly-roll style; pinch to seal., Cut into 1-in. slices; place on greased baking sheets (four slices per sheet). Cover with waxed paper; flatten slices with palm of hand into 3-in. circles. Cover and let rise until doubled, about 30 minutes., Cover with waxed paper and flatten or roll into 5-in. circles. Brush with butter. Combine the sugar, cinnamon and pecans; sprinkle over butter. Cover with waxed paper; roll or flatten again. Discard waxed paper., Bake at 400° for 10-12 minutes or until browned. Serve warm.
