1/2 cup vegetable oil
1/2 cup sour cream
2 large eggs
1 tsp vanilla extract
1½ cups flour
¾ cup white sugar
2 tsp baking powder
1 tsp cinnamon
½ tsp baking soda
Pinch of salt
1 cup red apple, peeled and diced (*1 large or 2 small)
¼ cup white sugar
1 tbsp melted unsalted butter, cooled
1 tsp cinnamon
1/4 cup powdered sugar
2-3 tsp milk, to taste, depending on desired thickness

Steps:

  • Preheat the oven to 35o degrees. Coat a 9-inch round cake pan with cooking spray.
  • Make the cake by combining the oil, sour cream, eggs, and vanilla in a small bowl; whisk until combined.
  • In a separate bowl, combine the flour, sugar, baking powder, cinnamon, baking soda, and salt together until well combined. Add the apples and mix until evenly coated.
  • Gradually add the wet ingredients to the dry ingredients until just combined. Pour batter into the prepared cake tin and spread out evenly with a rubber spatula. The batter will be very thick.
  • Make the cinnamon topping by combining the cooled melted butter with the sugar and cinnamon until well combined. Sprinkle evenly over the top of the cake.
  • Bake the cake for 30-35 minutes, making sure to turn halfway through baking, until a tester inserted in the center comes out clean. Transfer to a wire rack to cool.
  • Make the glaze by combining the powdered sugar and milk together until creamy, smooth, and your desired thickness.
  • Drizzle the glaze over the cooled cake. Slice and serve with ice-cold milk. Enjoy!

3 cups (375g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
3 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 and 1/4 cups (300ml) canola or vegetable oil
1/2 cup (120g) plain yogurt or sour cream, at room temperature
1 and 1/4 cups (250g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
3 large eggs, at room temperature
1 Tablespoon pure vanilla extract (yes, 1 full Tablespoon)
3 cups (360g) peeled and chopped apples, about 2-3 large apples
1 cup (200g) packed light or dark brown sugar
1/4 cup (57g) unsalted butter
1/2 cup (120ml) heavy cream
1/2 cup (60g) confectioners' sugar, sifted

Steps:

  • Preheat oven to 325°F (163°C). Spray a 10-12 cup Bundt pan with nonstick spray. Set aside.
  • Whisk the flour, baking soda, cinnamon, nutmeg, and salt together in a large bowl until combined. Set aside. In a medium bowl, whisk the oil, yogurt, brown sugar, granulated sugar, eggs, and vanilla together until combined and creamy. Pour the wet ingredients into the dry ingredients and slowly whisk until no large lumps remain. Try to avoid over-mixing. Carefully fold in the apple chunks. If you feel 3 large apples is too much, feel free to cut down to 2 apples. I like a lot of apple chunks in my cake!
  • Spoon/pour the thick batter into the prepared bundt pan. Bake for 55-75 minutes or until a toothpick inserted in the cake comes out clean. The baking times may vary depending on your oven, if you used a 10 cup bundt pan or 12 cup, or if you used less apple chunks. Keep your eye on the cake after 55 minutes. Feel free to cover the cake loosely with aluminum foil about halfway through to prevent heavy browning on top. Allow the cake to cool in the pan set on a wire rack, then invert onto a serving plate once cooled and ready to serve.
  • As the cake cools, prepare the brown sugar glaze. Combine the butter, brown sugar, and heavy cream in a medium saucepan over medium heat. Stir constantly as the mixture comes to a simmer and then a rapid boil. Once boiling, stop stirring and allow to boil for 1 minute. Turn the heat down to low, give it a quick stir, and let simmer for 1 minute. Remove from heat and whisk in the sifted confectioners' sugar. Allow glaze to cool and slightly thicken for at least 10 minutes. Spoon glaze over the cake right before serving. If your glaze thickens up too much before serving the cake, warm in the microwave for 15 seconds and stir until smooth.
  • I like this cake warm, at room temperature, and even cold. Cover leftovers and store at room temperature for 3 days or in the refrigerator for up to 5 days. Flavor is outstanding on day 2!

This is a great recipe to use for a beautiful dessert. This recipe was given to me by a friend, but changed a little by me.

ORIGINAL RECIPE:
1/2 c granulated sugar
1/4 c cinnamon red hots (candy)
1 c water
4 large roman beauty apples or your favorite

Steps:

  • 1. Peel and core apples. Set aside. In a saucepan combine remaining ingredients. Bring to a boil and stir until candies are dissolved; add the apples slowly, one at a time. Cook them gently until they are tender. Test with a fork. Remove from the syrup, Fill the hollows with blanched almonds or other nut meats, and raisins are optional. --- Note: Boil the syrup until it falls heavily from a spoon. Pour over the apples. Chill. --- My version: Glazed Apples 1 cup sugar 1 cup water 2 Tablespoons cinnamon candies 3 oz. package strawberry jellO 10 of your favorite apples, peel and slice --- Combine and bring ingredients, except apples, to a boil. Stir until cinnamon and jello are dissolved. Peel the apples, core, and cut into wedges. Butter or spray a 9x13-inch baking dish- place apple slices or wedges in dish. Pour hot mixture over apples, bake in 350^ oven until apples are fork tender, about 35 minutes. This can be served warm or cold for dessert. I like to sprinkle chopped walnuts and golden raisins over top with a nice scoop of vanilla bean ice cream or a dollop of whipped cream. --- Note: This mixture works good as a dump cake too. Sprinkle dry white or yellow cake mix over apple mixture in pan then pour 1/4 cup of melted butter over top. and bake as directed above. This is real good like this. I have even made it with pineapple cake mix and nuts and butter on top.

6 large tart apples
2 Tbsp lemon juice
1/2 c packed brown sugar
1/2 c sugar
2 Tbsp all purpose flour
1 tsp ground cinnamon
1/4 tsp ground nutmeg
6 Tbsp butter, melted
vanilla ice cream

Steps:

  • 1. Peel, core, and cut each apple into eight wedges; transfer to a 3-qt. slow cooker. Drizzle with lemon juice.
  • 2. Combine the sugars, flour, cinnamon and nutmeg in a small bowl; sprinkle over apples. Drizzle with butter.
  • 3. Cover and cook on LOW for 3-4 hours or until apples are tender.
  • 4. Serve in dessert dishes with ice cream.
