OVEN FRIED SOUTHERN STYLE CINNAMON HONEY CHICKEN

While watching FoodTV, I saw a piece about Amy Ruth's restaurant in New York where the owner made fried chicken dipped in a honey cinnamon mixture. It looked so good I began searching on the web for a recipe which approximated it... and after much browsing of webpages I put together a recipe that I thought might taste something like it. I don't fry my chicken, so here's a baked version, tweaked to my own tastes.

3 lbs chicken, jointed in 8 pieces (make sure to use good quality chicken!)
1/2 cup flour
2 teaspoons salt
3/4 teaspoon good quality cinnamon
1/4 teaspoon turmeric
1/4 teaspoon black pepper
1 pinch freshly ground nutmeg
1 egg
2 tablespoons milk
1/3 cup dried crushed breadcrumbs
cooking spray
2 tablespoons oil (optional)
1/4 cup butter
1/2 cup honey
2 pinches finely ground cinnamon
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a large roasting pan lightly with cooking spray.
  • Combine the flour with the salt, cinnamon, turmeric, black pepper, and a pinch nutmeg.
  • Coat the chicken pieces well with the flour mixture (you can use chicken with or without skin on - it's up to you).
  • Beat together the egg and milk; dredge the flour-coated chicken pieces in the egg mixture, then into the breadcrumbs.
  • Arrange pieces skin side up (if using pieces with skin) in the sprayed roasting pan, making sure that the pieces are not touching each other (if possible) to ensure they bake crispy; spray chicken pieces with oil spray or sprinkle with 2 tablespoons oil and place the chicken in the oven to bake.
  • While the chicken is baking, in a saucepan over medium low heat combine the butter, honey, pinches of cinnamon, and lemon juice.
  • After the chicken has baked for 25 minutes, pour the butter and honey mixture generously over the pieces.
  • Bake for an additional 15 minutes or until the juices run clear and the chicken is crisp and brown.
  • Note: if you'd like to add a bit of kick to the recipe, you can try a pinch or two of cayenne (to taste) in the honey sauce, or perhaps some red pepper flakes!

I actually came up with this standing in the kitchen, deciding on what to eat. It was phenomenal! I paired mine with bacon-seared corn and brown rice. If you need a sauce for dipping, try a sweeter sauce (caramel-infused BBQ sauce comes to mind).

1 egg
1 egg white
2 tablespoons heavy whipping cream
1 tablespoon garlic salt
1 cup all-purpose flour
1 ½ teaspoons cocoa powder
1 ½ teaspoons cinnamon sugar
1 ½ cups vegetable oil
8 ounces boneless chicken breasts, cut into strips

Steps:

  • Whisk egg, egg white, heavy cream, and garlic salt together in a small bowl.
  • Combine flour, cocoa powder, and cinnamon sugar in a separate small bowl.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Place half of the chicken into the egg mixture; let sit for 2 minutes. Remove chicken from egg mixture and place in the flour mixture, turning to coat all sides. Place the coated chicken pieces onto a paper towel. Repeat dipping the the remaining chicken in the egg mixture and the flour mixture.
  • Gently place the first batch of coated chicken in the hot oil; fry until chicken is cooked through and floats to the top, about 5 to 8 minutes. Transfer cooked chicken to a plate lined with fresh paper towels. Repeat frying with the second batch of chicken. Let chicken rest for 5 minutes before eating.

Now anyone who watched Little House On The Prairie, has heard of Cinnamon Chicken. I looked for a recipe, but could not find any. I found chicken roasted with cinnamon sauce, but no fried chicken. So this is the recipe I came up with, years ago and my family loves it.

1/2 tsp poultry seasoning
3/4 Tbsp sea salt
3/4 Tbsp freshly ground pepper
1 Tbsp freshly ground cinnamon
1 tsp paprika, sweet mild
3 organic egg whites, slightly beaten with a little water
1 1/2 c flour
1 organic cut up chicken
crisco or a good cooking oil

Steps:

  • 1. Wash your chicken and set it aside to drain.
  • 2. Mix the flour and spices together.
  • 3. Heat a frying pan with the crisco or oil on low to medium heat.
  • 4. Dip your chicken in cold water and shake the excess off. Place in the egg whites to coat. Shake off excess egg white. Roll the chicken to coat all sided, shake off excess and place on rack to dry slightly.
  • 5. Place your chicken in the hot oil carefully and brown on all sides. Lower heat and cook uncovered until done..about 45 minutes. Sometimes I don't want a crispy chicken, so I leave te lid a jar.
  • 6. When the chicken is done. Drain all the fat and return 2-3 tablespoons of fat to the frying pan. Add the same amount of flour and stir to make a Roux. Add milk to make a gravy and cook to the thickness you like. If it's too thick add a little more milk. Sorry folks forgot to say, you serve this in the gravy.

2 lbs fryer, cut up
2 teaspoons cinnamon
1 tablespoon sugar
1 1/2 teaspoons pepper
1 teaspoon oregano
1 tablespoon salt
1 cup flour
vegetable oil

Steps:

  • Line a large baking pan or cookie sheet with foil.
  • Place chicken in a single layer on the pan.
  • Mix together cinnamon,sugar,pepper,oregano and salt.
  • Sprinkle evenly over chicken.Cover and store in refrigerator overnight.
  • Before frying,dredge chicken in flour.
  • Cook slowly in oil for 25 minutes or until chicken is done. I did not put in prep time as its a over night in the frig.
