These are cinnamon and date cookies easily made from a cake mix. They've got a good cinnamon flavor and the dates provide just the right amount of extra sweetness, without making the cookie super-sweet. Chopped walnuts can be added for that extra nutty flavor.

cooking spray
1 (21.5 ounce) package cinnamon swirl cake mix (with cinnamon flavoring packet)
1 cup chopped dried dates
1 cup chopped walnuts
½ cup egg white substitute
½ cup olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet with cooking spray.
  • Mix cinnamon cake mix, flavoring packet, dates, walnuts, egg white substitute, and olive oil together in a large bowl.
  • Drop heaping tablespoonfuls of cake mixture onto the prepared baking sheet.
  • Bake in the preheated oven until bottoms start to brown, 12 to 15 minutes. Let cool on the baking sheet, about 10 minutes.

2 cups pitted dates
3 cups self rising flour
4 eggs, beaten
1 cup light golden brown sugar
2 teaspoons ground cinnamon
1 teaspoon baking powder
3/4 cup butter

Steps:

  • Preheat oven to 350 degrees.
  • In a small saucepan, place dates and add water just to cover. Bring to a boil and remove from heat. Drain dates and place in food processor. Blend until dates have a paste-like consistency.
  • In a large bowl add all dry ingredients and mix gently with a fork. Add butter, eggs, and warm dates. Beat with hand mixer until all ingredients are thoroughly blended.
  • Pour ingredients into a greased and lightly floured metal pan. Bake for 40 minutes or until inserted knife or skewer comes out clean.
