HOMEMADE APPLE CINNAMON ICE CREAM



Homemade Apple Cinnamon Ice Cream image

2-1/4 cups heavy cream
1 cup milk
3/4 cup powdered sugar
1 tbsp pure vanilla extract
1 tsp ground cinnamon
1/2 tsp sea salt
2 tbsp unsalted butter
2 large apples, peeled, cored, and chopped into small, bit-sized pieces
1/4 cup (packed) brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves

Steps:

  • In a mixing bowl, whisk together the cream, milk, sugar, vanilla, cinnamon and salt until well-combined. Cover and refrigerate for at least 2 hours until thoroughly chilled.
  • Meanwhile, melt the butter in a skillet over medium heat. Toss the apples with the brown sugar and spices and add to the skillet. Cook, stirring often, until the apples are tender, about 2-3 mins. Remove from the heat and let cool. Cover and refrigerate along with the cream base.
  • Prior to making the ice cream, whisk the cream base a few times, and pour into an 1-1/2 quart capacity ice cream machine. Follow the manufacturer's instructions, and churn until the ice cream is frozen and fluffy, about the consistency of soft-serve (generally 20-25 minutes). About three to five minutes before the ice cream is ready, or when the ice cream looks like it is mostly set up, carefully pour in the cinnamon-apple mixture, and continue churning.
  • Spoon the ice cream into freezer-safe containers, and for a firmer texture, cover and freeze for an hour or two.

1 (4-inch-long) cinnamon stick, preferably a fragrant variety like Ceylon or canela
2/3 cup sugar
2 cups heavy cream
1 cup whole milk
1/8 teaspoon fine sea salt
6 large egg yolks

Steps:

  • Break cinnamon stick into a food processor. Add sugar and process until finely ground.
  • In a small pot, simmer heavy cream, milk, cinnamon sugar and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream.
  • Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer). Remove from heat and allow custard to steep for 30 minutes.
  • Strain through a fine-mesh sieve into a bowl. Cool mixture to room temperature. Cover and chill at least 4 hours or overnight.
  • Churn in an ice cream machine according to manufacturer's instructions. Serve directly from the machine for soft serve, or store in freezer until needed.

1 cup white sugar
1 ½ cups half-and-half cream
2 eggs, beaten
1 cup heavy cream
1 teaspoon vanilla extract
2 teaspoons ground cinnamon

Steps:

  • In a saucepan over medium-low heat, stir together the sugar and half-and-half. When the mixture begins to simmer, remove from heat, and whisk half of the mixture into the eggs. Whisk quickly so that the eggs do not scramble. Pour the egg mixture back into the saucepan, and stir in the heavy cream. Continue cooking over medium-low heat, stirring constantly, until the mixture is thick enough to coat the back of a metal spoon. Remove from heat, and whisk in vanilla and cinnamon. Set aside to cool.
  • Pour cooled mixture into an ice cream maker, and freeze according to the manufacturer's instructions.

Though perfectly delicious on its own, this ice cream also makes a great accompaniment to spiced apple cake or caramelized apple crêpes. Active time: 25 min Start to finish: 12 hr

Yield Makes about 5 cups

Number Of Ingredients 8

1/2 vanilla bean, split lengthwise
2 cups half-and-half
2 cups heavy cream
4 (3-inch) cinnamon sticks, coarsely crushed
10 large egg yolks
3/4 cup plus 2 tablespoons sugar
1/2 cup applejack brandy or Calvados
an ice-cream maker

Steps:

  • Scrape seeds from vanilla bean into a 2- to 3-quart heavy saucepan and add pod, half-and-half, cream, and cinnamon. Heat just to boiling over moderate heat.
  • Meanwhile, whisk together yolks and sugar. Whisk one third of hot cream mixture into yolks to temper egg, then whisk egg mixture into remaining cream mixture and cook over moderately low heat, stirring constantly, just until mixture registers 175°F on an instant-read thermometer.
  • Immediately transfer custard to a metal bowl set in a larger bowl of ice and cold water and cool, stirring occasionally. Chill, covered, at least 8 hours to blend flavors.
  • Pour custard through a sieve into a bowl and stir in brandy. Freeze in ice-cream maker, then transfer to an airtight container and put in freezer to harden.
