APPLE CINNAMON GRANOLA

Steps:
- In a large bowl, combine the oats, oat bran, and almonds; set aside. In a small saucepan, combine the concentrate, oil and honey. Cook and stir over medium heat for 2-3 minutes or until heated through. Remove from the heat; stir in the cereal, apples, wheat germ, cinnamon and nutmeg. Pour over oat mixture and toss to coat., Transfer to two greased 15x10x1-in. baking pans. Bake at 300° for 30-35 minutes or until golden brown, stirring every 15 minutes. Cool on wire racks. Stir in raisins. Store in an airtight container.

I created this recipe this morning and wow is it good! I'm munching some right now as I type this. ^-^ All of the measurement's are estimations, as I rarely use measuring cups in the kitchen.

Steps:
- Heat oven to 350*.
- Line a 8x10 pan with aluminum foil and lightly oil.
- In a large bowl, mix all ingredients thoroughly.
- The oats should be slightly sticky and clumpy. If not, add more honey.
- Evenly spread oat mixture on pan.
- Bake 20 minutes, stirring every 5 minutes.
- If you like crunchier granola, cook an extra 5 minutes.

APPLE CINNAMON GRANOLA COOKIES
I love baking and experimenting with recipes. A couple of nights ago I had purchased some granola on sale at the store and wondered if I could substitute it for oatmeal. After viewing several recipes for oatmeal cookies, I decided just to put together something myself. The result? Well, lets just say my husband LOVES them!

Steps:
- In a microwavable bowl measure out the applesauce and add butter in slices. Microwave this for about 1 minute. If butter isn't completely melted give it another minute.
- Stir in the brown sugar 1/4 cup at a time. Stir until Smooth.
- Add cinnamon, baking soda and vanilla.
- Beat in the egg.
- Slowly add flour, continuing to mix until smooth again.
- Fold in granola (and almonds).
- Spoon drop batter onto lightly greased baking sheet, about 1 inch apart (cookies will puff but shouldn't spread outward).
- Bake at 350°F for 12-15 minutes - until lightly golden and firm.
- Allow them to cool on a wire rack about a minute or 2.
- Now ENJOY :).

APPLE CINNAMON GRANOLA
I adapted my own version of this from 3 or four other recipes. I wanted a low fat, low cal granola so this is what I came up with. This version isn't real sweet but it has an excellent flavor. I wanted my granola pretty crunchy so I left it in the oven for almost 90 minutes. The only thing is, you have to keep a close eye on it or it could burn. For the first 60 minutes I stirred it every 10-15 minutes. For the last 30 minutes I stirred it about every 5.

Steps:
- Preheat oven to 300 degrees.
- Combine oats, cinnamon, and pecan pieces.
- In a seperate bowl combine honey, egg whites, and applesauce.
- Pour honey mixture over oats and stir to combine.
- Place granola on baking sheet and place in oven for 60-90 minutes. Stir every 10-15 minutes.
- Remove granola from oven when it is crunchy.
- Cool and stir in dried fruit.
- Store in ziploc bags or seal with a food sealer.
