Stuffed with turkey, this wrap is crunchy from the coleslaw, juicy from the tomatoes, smoky from bits of bacon, zesty from crumbled Feta cheese, and has a little zing thanks to the sweet purple onion. Number Of Ingredients 11

4 individual flat breads (use your favorite)
1/2 pkg coleslaw mix, 8 ounces (this is enough to make 4 wraps)
2-8 tsp Athenos tomato and basil crumbled Feta cheese (use 2 teaspoons per wrap)
1/4 c mayonaise
1 tsp balsamic vinegar
1 individual Sweet n Low packet or sugar to taste
12 slice oven roasted turkey
1 medium purple onion, sliced
1 medium tomato, sliced
2-8 tsp crumble real bacon bits (use 2 teaspoons per wrap)
salt and pepper, to taste

Steps:

  • 1. Put coleslaw mix in a bowl. In a small bowl, place mayonnaise, balsamic vinegar, and Sweet n Low packet (or a little sugar to taste). Mix well.
  • 2. Add to coleslaw mix and mix well.
  • 3. Salt and pepper to taste. This is enough to make 4 wraps; set aside.
  • 4. Place your wraps on a flat surface and place one scoop full of coleslaw mix per wrap.
  • 5. Add 2 teaspoons of bacon bits and 2 teaspoons of feta.
  • 6. Then add 3 slices of turkey, sliced tomatoes, and a little purple onion onto each wrap.
  • 7. Wrap tight.
  • 8. Cut diagonally... ready to serve and enjoy.

4 slices low-sodium bacon, each cut into 4 pieces
1 cup feta cheese, cut into 1/2-inch cubes
toothpicks

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil or parchment paper.
  • Wrap bacon around feta cheese cubes and secure with a toothpick; arrange on the prepared baking sheet.
  • Broil in the preheated oven for 3 minutes. Turn pieces and continue broiling until bacon is crispy, about 2 minutes.

1 large turkey breast
½ teaspoon dried oregano
½ teaspoon ground cumin
salt and ground black pepper to taste
1 cup fresh spinach, or to taste
¼ cup crumbled feta cheese
12 slices reduced-sodium bacon, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice turkey breast down the middle and lay it flat. Sprinkle oregano, cumin, salt, and pepper on the inside of turkey. Arrange spinach leaves in 1 layer on 1 of the pieces of turkey and top with a layer of feta cheese. Repeat layering with spinach and feta cheese. Fold the other turkey breast half over the feta layer so the filling is sealed. Wrap the entire turkey breast with bacon. Place wrapped turkey in a baking dish and season with salt and pepper.
  • Cook turkey breast until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Turn on oven's broiler and broil wrapped turkey until bacon is crisp on each side, about 2 minutes per side. Let turkey rest for 10 minutes before slicing.
