This was handed down to me from my mother. My best friend's kids wouldn't eat meatloaf until I gave her this recipe. She had tried many different ways. Now they won't eat any other meatloaf that's not "Cindy's".

Number Of Ingredients 11

1 1/2 lbs ground beef
1 cup dry breadcrumbs or 1 cup bread, in cubes
1 1/4 cups milk
1 egg, beaten
1/4 cup onion, minced
1 1/4 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon chili powder
1/4 teaspoon dry mustard
1/4 teaspoon minced garlic
1 tablespoon Worcestershire sauce

Steps:

  • Mix all ingredients thoroughly.
  • Spread in an un-greased loaf pan.
  • Bake in a 350 degree oven for 1& 1/2 hours.
  • OPTIONAL: Top with BBQ sauce for the last 1/2 hour.
  • Line bottom of pan with strips of bacon.
  • Divide meat mixture in 2 halves, place 1st half in pan, make a crater (like a dugout), add cheddar or american cheese, top with 2nd half of meat mixture and seal both halves together.
  • Any or all of the options can be combined for a great meatloaf!

1 lb lean ground beef, preferably grass-fed
1 egg, farm fresh
2 Tbsp sweet pickle juice
3 Tbsp ketchup
1/2 c italian bread crumbs
2 pinch salt
2 pinch pepper, ground black
3-4 Tbsp ketchup
2-3 Tbsp brown sugar

Steps:

  • 1. In a bowl, add ground beef, egg, pickle juice, ketchup, bread crumbs, salt and pepper. With clean hands, dig in and knead ingredients, mixing them well through the beef.
  • 2. Form the ground beef into a small loaf, and place into a loaf pan. Using a spoon or fork, make an indented area along the top of the loaf.
  • 3. In a separate bowl, add the remaining ketchup and brown sugar. Mix it well to make a sauce, breaking up any chunks of brown sugar.
  • 4. With a spoon, spread the "sauce" over the top of the meatloaf. Bake at 375 for 45 to 50 minutes. Serve with organic green beans and baked potato for a hearty and satisfying meal!

CLASSIC MEATLOAF

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.
