Number Of Ingredients 9

1 ounce young spinach leaves (1 cup, firmly packed)
2 ounces parsley, stems removed (1 cup, firmly packed)
2 medium cloves garlic
2 ounces cilantro (1 1/2 cups, firmly packed)
1 1/2 teaspoons ground coriander seed
1 teaspoon lemon juice
1 cup light mayonnaise
1/2 cup nonfat plain yogurt
Salt to taste

Steps:

  • Bring enough water to a boil to cover the spinach and parsley, and blanch them for 5 seconds. Drain, and run under cold water; squeeze dry in a dish towel.
  • In a food processor with the motor running, put the garlic through the feed tube, and mince. Add the spinach, parsley and cilantro, and process to chop. Add the coriander, lemon juice, mayonnaise and yogurt, and process until the greens are well blended and the mayonnaise is a bright green. Season with salt. Chill at least a couple of hours or overnight. Use about 2 tablespoons for each serving of salmon.

¾ cup olive oil mayonnaise
½ cup firmly packed fresh cilantro leaves
1 jalapeno, seeds and membrane removed, diced
1 ½ garlic cloves, halved
½ lime, juiced
¾ teaspoon ground cumin
¼ teaspoon salt, or to taste

Steps:

  • Blend mayonnaise, cilantro, jalapeno pepper, garlic, lime juice, cumin, and salt together in a blender or food processor until smooth. Pour mixture into a bowl, cover the bowl with plastic wrap, and refrigerate until flavors blend, at least 1 hour.

4 tablespoons fresh lime juice
1 garlic clove, peeled
1/2 teaspoon hot sauce (recommended: Tabasco)
1 teaspoon Dijon mustard
1 cup fresh cilantro leaves
1 cup mayonnaise
Salt and freshly ground black pepper

Steps:

  • Blend all ingredients in food processor except mayonnaise and salt and pepper. Process until cilantro is fine. Add mayonnaise and process just until blended. Season with salt and pepper, to taste.
