CILANTRO COLE SLAW

Number Of Ingredients 15

2 large granny smith apples, julienned
1 large red pepper, stem, seeds and membrane, removed and julienned
1 large green pepper, stem, seeds and membrane, removed and julienned
1 large yellow bell pepper, stem, seeds and membrane, removed and julienned
1 small head of green cabbage, julienned thin
1 small head of red cabbage, julienned thin
4 yellow corn tortillas julienned thin and fried
4 red corn tortillas julienned thin and fried
4 blue corn tortillas julienned thin and fried
1 bunch cilantro leaves, whole
1/2 cup canola oil
4 cloves garlic, minced
1/4 bunch of cilantro, chopped fine
Juice of 3 limes
Salt to taste

Steps:

  • Combine all ingredients, except tortillas, into a bowl and mix well. Add dressing and tortillas and mix lightly being careful not to break up tortillas too small.

1 medium jicama, peeled and sliced
1 small red pepper, stem, seeds and membrane removed and julienned
1 small green pepper, stem seeds and membrane removed and julienned
1 small yellow bell pepper, stem, seeds and membrane removed and julienned
1 small head of red cabbage, julienned thin
2 yellow corn tortillas, julienned thin and fried
2 red corn tortillas, julienned thin and fried
2 blue corn tortillas, julienned thin and fried
1/4 cup canola oil
2 cloves garlic, minced
2 shallots, minced
1/2 bunch cilantro leaves
2 tablespoons champagne vinegar
2 limes juiced
2 tablespoons honey
Salt
Cracked black pepper

Steps:

  • For the salad: Combine all ingredients, except tortillas into a bowl and mix well.
  • Mix the dressing ingredients and add to salad with tortillas. Toss lightly being careful not to break up tortillas too small.

Number Of Ingredients 8

1/2 small clove garlic
Kosher salt
1 medium lime
3 Tbs. mayonnaise
1/4 medium head Savoy cabbage, cored and thinly sliced (about 2 cups)
2 scallions, thinly sliced
2 Tbs. chopped fresh cilantro leaves
Freshly ground black pepper

Steps:

  • Chop the garlic, sprinkle it with a pinch of salt, and mash it into a paste with the side of a chef's knife. Finely grate the zest from half of the lime and then juice the whole lime. In a medium bowl, whisk the garlic, lime zest, 1 Tbs. of the juice, and the mayonnaise. Toss in the cabbage, scallions, and cilantro. Season with 1/4 tsp. salt and several grinds of pepper. NOTE: I used a different ratio of mayonnaise/lime juice more 1:1 .I did NOT double the garlic and scallions when I doubled the recipe and it was JUST right
