Cider-Braised Chicken Thighs With Apples and Greens image

In this hearty one-pot dinner, chicken thighs are browned, then braised in chicken broth flavored with mustard, sage, garlic and a triple dose of apple: apple cider, cider vinegar and apple slices. The addition of a few handfuls of greens makes this a complete meal, in need of nothing else but a nice of hunk of bread to soak up the broth and perhaps a glass of dry white wine.

Number Of Ingredients 12

1 1/2 to 2 pounds bone-in, skin-on chicken thighs (about 4 to 6)
Kosher salt and black pepper
2 tablespoons canola or grapeseed oil
1 cup thinly sliced shallots (2 to 3 medium shallots)
2 tablespoons roughly chopped fresh sage leaves
3 garlic cloves, minced
3/4 cup fresh apple cider
2 tablespoons apple cider vinegar, plus more to taste
2 tablespoons Dijon mustard
3/4 to 1 cup chicken broth, preferably low-sodium
1 bunch curly kale (10 to 12 ounces), stemmed, leaves torn into bite-size pieces
1 crisp red apple, such as Fuji, cored and thinly sliced

Steps:

  • Pat the chicken thighs dry and season generously with salt and pepper.
  • In a Dutch oven or heavy pot, heat the oil over medium. Cook the chicken thighs skin-side down, undisturbed, until the skin is golden brown, 6 to 8 minutes. Flip and cook until lightly browned on the other side, about 4 minutes. Transfer to a plate.
  • Pour off all but about 3 tablespoons of fat from the pot, turn the heat to medium-low, then add the shallots and sage. Cook, stirring occasionally, until the shallots are translucent, about 3 minutes. Add the garlic and stir until fragrant, about 30 seconds. Be careful not to let the garlic burn.
  • Add the cider, cider vinegar, mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper and cook, scraping up any browned bits from the bottom of the pan, until the cider has reduced slightly, 2 to 3 minutes. Return the chicken and any accumulated juices to the pot, skin-side up. Pour just enough broth around (not on!) the chicken to cover the sides of the thighs but not cover the skin on top.
  • Bring to a boil, then turn the heat to low. Partly cover and gently simmer until the thighs are cooked through and tender, 20 to 25 minutes. Transfer the chicken to a clean plate or sheet pan (if you'd like to broil the chicken in the next step), raise the heat to medium, and add the kale and apple to the pot. Cook, tossing often, until all the kale is wilted, the apples are just softened and the liquid has reduced slightly, about 5 minutes. While the greens cook, if you'd like to crisp the skin on the chicken, pop it under the broiler for 2 to 3 minutes.
  • Taste for seasoning, and stir in 1 or 2 more teaspoons cider vinegar to taste. Divide the chicken and kale mixture among shallow bowls; serve with crusty bread to mop up broth.

4 chicken legs (thigh and drumstick; about 3 pounds)
1 1/2 teaspoons kosher salt, divided
1/2 teaspoon freshly ground black pepper
1/4 cup plus 1 teaspoon country-style Dijon mustard
3 tablespoons vegetable oil
2 pink-skinned apples, cut into 1/2" wedges
1/2 medium red onion, cut into 1/2" wedges
1 cup dry white wine
1 1/2 cups fresh apple cider, divided
1 large or 2 small bunches curly kale (about 1 pound), stemmed, torn into pieces
1/4 cup heavy cream
1 teaspoon fresh lemon juice
3 tablespoons tarragon leaves (optional)

Steps:

  • Arrange rack in upper third of oven; preheat to 450°F. Season chicken all over with 1 tsp. salt and 1/2 tsp. pepper, then rub with 1/4 cup mustard, making sure to get mustard under skin.
  • Heat 2 Tbsp. oil in a large heatproof high-sided skillet or heavy braising pan over medium-high. Sear chicken, skin side down, until golden-brown, about 8 minutes. Turn chicken, then arrange apples and onion around chicken. Add wine and 1 cup cider, then transfer to oven and roast until an instant-read thermometer inserted into thickest part of thigh registers 165°F, about 20 minutes.
  • Meanwhile, heat remaining 1/2 cup cider, 1 Tbsp. oil, and 1/2 tsp. salt in a large pot over medium; add kale, cover, and cook until wilted. Continue to cook, stirring occasionally, until kale is tender, about 5 minutes. Using slotted spoon, divide kale among plates.
  • Transfer chicken, apples, and onion to plates with a slotted spoon. Heat remaining liquid in skillet over high. Add cream and remaining 1 tsp. mustard and bring to a boil. Cook, whisking constantly, until sauce is thickened, about 5 minutes. Remove from heat and stir in lemon juice.
  • Spoon sauce alongside chicken and kale. Garnish with tarragon, if desired.

CHICKEN WITH BRAISED CELERY & CIDER

1 chicken , weighing about 2kg/4lb 8oz
4 rashers smoked streaky bacon , chopped
1 onion , finely chopped
2 carrots , diced
sprig thyme
2 celery hearts, quartered
150ml dry cider (we used Merrydown)
300ml chicken stock

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Heat the butter in a large casserole dish and brown the chicken slowly on all sides; this should take a good 10-15 mins. (Be patient, it will pay off later.) Take the chicken out of the dish, throw in the bacon and cook for 3-4 mins until starting to crisp, then add the onion, carrots and thyme and continue to cook for 4-5 mins until the vegetables soften. Stir the celery into the dish, then nestle the chicken amongst the veg, breast side down. Pour over the cider and stock, bring to a simmer, then roast the chicken uncovered for 1 hr.
  • Turn the chicken the right way up and give it 30 mins more, by which point the legs should be coming away. Carefully lift the chicken from the dish. Check the seasoning of the vegetables and serve with the chicken.

1 whole chicken (about 3 1/2 pounds), quartered
3 tablespoons olive oil
2/3 cup unfiltered apple cider
1/2 cup dry white wine
1/2 cup heavy cream
1 tablespoon chopped fresh sage
1 teaspoon Dijon mustard

Steps:

  • Sprinkle chicken with 2 teaspoons coarsely ground pepper and 1 teaspoon salt.
  • Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then brown chicken, skin side down first, turning once, 8 to 10 minutes total. Transfer to a plate, discarding oil.
  • Wipe out skillet, then boil remaining ingredients until reduced by half, 3 to 5 minutes. Return chicken to skillet and braise, covered, turning once, until chicken is just cooked through, 25 to 30 minutes. Transfer chicken to a platter. Boil sauce to thicken if necessary. Whisk sauce if separated and season with salt, then pour over chicken.

2 1/2 to 3 lb boneless skinless chicken thighs
Salt
Canola oil
3/4 cup hard apple cider
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 teaspoon ground cumin
2 cloves garlic, smashed
1/2 onion, chopped
2 apples, cored, diced small
1 to 2 jalapeño chiles, seeded, finely diced
1/2 cup finely diced red onion
Juice of 2 limes
Salt to taste
8 Old El Paso™ taco shells
Shredded sharp Cheddar cheese, as desired

Steps:

  • Spray slow cooker with cooking spray.
  • Season chicken thighs generously with salt. Heat 10- to 12-inch skillet over medium-high heat; add about 1 tablespoon canola oil to skillet. Cook chicken thighs until well browned; place in slow cooker (cook in batches if necessary).
  • Pour 1/4 cup of the hard cider into hot skillet, scraping up browned bits from bottom of skillet with wooden spoon as it bubbles. Turn off stove, and add cider from pan to slow cooker along with remaining 1/2 cup hard cider.
  • Add green chiles, cumin, garlic and onion to slow cooker along with a pinch of salt. Stir gently; cover and cook on High heat setting 4 hours.
  • While chicken cooks, in medium bowl, mix Apple Jalapeño Salsa ingredients. Cover and refrigerate until ready to use.
  • Shred chicken with 2 forks. Serve in taco shells with cheese and salsa.

  • Heat the oil in a large skillet over medium high heat. Season the chicken with salt and pepper. Add to the pan and brown on both sides, about 3 minutes per side. Transfer to a plate and cover to keep warm.
  • Add the onion to the skillet and saute for 1 minute. Add the cider and chicken stock, and cook over high heat until the liquid has reduced by half. Add the chicken to the pan, cover, and reduce heat to low. Simmer for 5 minutes.
  • Remove the chicken breasts from the pan, and place on a warmed serving platter. Raise the heat to high and reduce the cider sauce until 1/4 c remains. Stir in the mustard and season with salt and pepper. Pour over the chicken and garnish with parsley.

2 lbs chicken legs
1 tablespoon ground turmeric
1 teaspoon ground ginger

1 cup apple cider or 1 cup apple juice
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • ---Crock Pot Method---.
  • Place spices, tomatoes, and cider in the crock pot and stir to mix.
  • Add the chicken and toss to coat.
  • Set the cooker to low heat and cook for 7-9 hours, or high heat for 3-4 hours.
  • At the end of cooking, remove the chicken from the crock pot, mix the cornstarch with the 2 tbsp of water, and stir the cornstarch mixture into the bottom; set the crock pot to high and cook for 15 minutes to thicken the liquids.

My husband made this, and it was adapted due to ingredients that we had on hand. You can use chicken breast instead of thighs. Sorry about the lack of a photo, we thought it smelled so good that we devoured it before thinking about the camera!

1/2 cup mixed berry (dried)
2/3 cup water
1 tablespoon honey
1 tablespoon oil
1 tablespoon butter
4 chicken thighs (I use boneless)

1/2 cup hard alcoholic cider
1/4 cup chicken stock

Steps:

  • soak berries in water until plump, simmer over low heat until thickened to sauce consistency. remove from heat and stir in honey. set aside.
  • heat oil and butter in deep skillet (with lid). add chicken and brown thoroughly, salt and pepper while cooking.
  • stir in garlic, onion, savory, muchrooms, stock and cider. turn heat to low, simmer covered until chicken is cooked (20-30 minutes).
  • remove chicken from pan, keep warm. increase heat to thicken onion mixture in pan.
  • serve chicken with onion and berry sauces.

4 cups unsweetened apple cider
2 teaspoons dried thyme

Steps:

  • In large skillet over medium high heat, place 2 tablespoons olive oil.
  • Add chicken and cook about 3 minutes per side, until browned. Remove to 9x12-inch baking dish sprayed with cooking spray.
  • In small bowl, whisk together apple cider, thyme, garlic salt and honey; pour over chicken.
  • Place in 350°F oven and bake about 45 minutes or until fork tender. In large skillet, heat remaining 2 tablespoons olive oil over medium high heat.
  • Add onions and saute about 3 minutes or until transparent.
  • Reduce heat to low, cover and cook 30 minutes, stirring occasionally. Remove lid and continue cooking about 5 minutes or until liquid is absorbed.
  • In medium saucepan, place water and bring to rapid boil.
  • Stir in grits, reduce heat to medium low and cover. Cook about 5 minutes or until thickened, stirring occasionally.
  • Reduce heat to low; stir in butter and cheese and continue stirring until melted. Cover and remove from heat.
  • To serve, place equal amounts of grits in 4 shallow bowls. Top with onion mixture and 2 chicken thighs. Garnish with thyme sprigs. Makes 4 servings.

4 Tbsp butter
2 cooking apples (Fuji or Jonagold are perfect for this dish, do NOT use a red delicious), cored and sliced into wedges (you can peel or not)
Flour for dredging
4 whole chicken legs (with thighs)
Salt
1 large onion, peeled, sliced lengthwise (root to top) into wedges
1/2 cup brandy (apple brandy or Calvados if you have it)
2 cups apple cider (the cloudy type)
1 teaspoon dried thyme
1/2 cup cream

Steps:

  • Sprinkle salt over the chicken pieces and let sit for 20 minutes at room temperature. Preheat the oven to 375°F. Heat 2 Tbsp of the butter in a large, oven-proof sauté pan over medium heat. Add the apple slices and sauté until they turn a little brown around the edges, turning occasionally. Sprinkle the apple slices with a little salt. Set aside on paper towels to drain. Dredge the chicken in flour and place the pieces in the sauté pan, skin side down. Add the remaining 2 Tbsp of butter. Fry until golden, about 3-5 minutes on medium to medium-high heat on each side. Remove from pan and set aside. Add the onions and increase the heat to medium-high. Spread the onion slices out in an even layer to cover the pan. Sauté the onions, stirring occasionally, until they just being to brown, about 5-8 minutes. Add the brandy to the pan. Using a wooden spoon, scrape any remaining browned bits off the bottom of the pan. Let the brandy boil until it has reduced by about half. Add the cider and bring it to a boil. Sprinkle in the thyme. Add just a pinch of salt to the cider. Arrange the chicken legs in the pan so the skin faces up and is not submerged by the cider-brandy mixture. Place in the oven and cook, uncovered, for 30 minutes. Remove the pan from the oven. Remove the chicken pieces from the pan and set aside. Place the pan back on a stovetop burner on high heat. Add the apples and boil down the sauce by half. When the sauce reduces to the point where it's a little syrupy, add the cream and turn down the heat. Taste for salt and add some if needed. To serve, spoon some apples and onions on the plate, top with sauce and a piece of chicken.

4 bone-in, skin-on medium chicken thighs (1-1/2 to 1-3/4 lb.)
4 chicken drumsticks (1-1/4 to 1-1/2 lb.)

2 medium apples such as Rome, Spy, or Mutsu, peeled, cored, and cut into sixths
2 cups dry hard apple cider
1/4 cup Dijon mustard
3 large marjoram sprigs
1/4 cup heavy cream
1 Tbs. chopped fresh marjoram

Steps:

  • Position a rack in the center of the oven and heat the oven to 350ºF. Season the chicken pieces generously with salt and pepper. In a straight-sided 10- or 11-inch ovenproof sauté pan with a lid, heat the oil over mediumhigh heat until very hot. Arrange the chicken pieces skin side down in the pan (it'll be crowded), cover with a splatter screen, if you have one, and cook until deeply browned, about 5 minutes. Turn the pieces over and cook until the other sides are deeply browned, 3 to 5 minutes more. Transfer to a plate. Pour out and discard all but 1 Tbs. of the fat from the pan. Set the pan aside to cool for a few minutes. Return the pan to medium-high heat, add the apple pieces, and cook, turning once, until both cut sides are golden brown, about 2 minutes per side. Transfer to a different plate. Carefully pour the cider into the pan and bring to a boil, scraping the browned bits from the bottom of the pan with a wooden spoon. Whisk the mustard into the cider. Return the chicken to the pan, along with any accumulated juices. Add the marjoram sprigs and cover. Transfer the pan to the oven and braise for 10 minutes. Add the apples and continue to braise until the chicken is fork-tender and the drumstick meat starts to come away from the bone, 35 to 40 minutes more.
