CHUNKY HAZELNUT OATMEAL COOKIES

This is a great-tasting cookie. Children love them, and my husband and I like to take them when we go hiking.

Number Of Ingredients 10

3/4 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg
1-1/4 cups all-purpose flour
1 teaspoon baking soda
1-1/2 cups old-fashioned oats
1 cup semisweet chocolate chips
1/2 cup dried cherries
1/2 cup chopped hazelnuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg. Combine flour and baking soda; gradually add to creamed mixture and mix well. Stir in the oats, chocolate chips, cherries and nuts., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 9-12 minutes or until lightly browned. Remove to wire racks.

Number Of Ingredients 11

12 large eggs
1 package (32 ounces) brown sugar
4 cups sugar
2 cups butter, softened
18 cups old-fashioned oats
3 jars (1 pound each) peanut butter
1/4 cup ground cinnamon
1/4 cup vanilla extract
8 teaspoons baking soda
3 cups semisweet chocolate chips
2-1/2 cups milk chocolate M&M's

Steps:

  • In a bowl, combine eggs and sugars. Add butter; mix well. Add oats. Add the peanut butter, cinnamon, vanilla and baking soda; mix well. stir in chocolate chips and M&M's. , Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Flatten if desired. Bake at 350° for 12-14 minutes or until set.

My love of chocolate and Oatmeal Raisin cookies was my inspiration for this cookie recipe. I played with a couple recipes and this is what I came up with.

Number Of Ingredients 11

1 1/2 c sugar
1 c butter, softened
1 large egg
1 tsp pure vanilla extract
1 1/4 c all purpose flour
1/3 c powdered cocoa
1/2 tsp baking soda
1/2 tsp salt
3 c quick cooking oats
1/2 c semi-sweet chocolate chips
1/2 c raisins

Steps:

  • 1. Preheat oven to 350 degrees; prepare a baking stone by lightly spraying with cooking spray
  • 2. Cream butter and sugar in medium mixing bowl
  • 3. Beat in egg and vanilla
  • 4. Add in all dry ingredients and fold in until incorporated; then add chocolate chips and raisins
  • 5. Cookie dough will be very stiff
  • 6. Drop dough by teaspoon full onto your prepared baking stone
  • 7. Bake 12 to 15 minutes (I had to bake for 15 to 17 minutes because I'm having trouble with my oven regulating properly so you may have to adjust your baking time back to 10 to 12 minutes)
  • 8. Remove Cookies from oven and let rest about 5 minutes on the stone then move to a rack and cool completely
  • 9. Delicious warm with a glass of milk or a cup of coffee :0)
