7 medium McIntosh, Empire or other apples (about 3 pounds)
1/2 cup sugar
1/2 cup water
1 tablespoon lemon juice
1/4 teaspoon almond or vanilla extract

Steps:

  • Peel, core and cut each apple into 8 wedges. Cut each wedge crosswise in half; place in a large saucepan. Add remaining ingredients., Bring to a boil. Reduce heat; simmer, covered, until desired consistency is reached, 15-20 minutes, stirring occasionally.

This baked homemade applesauce is rich, tart and sweet -- almost like apple pie filling -- and a world apart from store-bought.

Number Of Ingredients 4

4 pounds apples (about 10), peeled, cored and cut into 1-inch chunks (I like a combination of McIntosh and Golden Delicious)
3 tablespoons unsalted butter, cut into ¼-inch chunks
¼ cup plus 2 tablespoons light or dark brown sugar, packed
Ground cinnamon, for serving (optional)

Steps:

  • Preheat the oven to 400°F.
  • Place the apples in a 9x13-inch baking dish. Scatter the brown sugar and chunks of butter evenly over top. Cover tightly with aluminum foil and bake for 45 to 50 minutes, tossing once halfway through, until the apples are very tender.
  • Mash the apples with a potato masher or fork. Taste; if the applesauce is too tart, add more brown sugar little by little until the flavors are balanced. (Note that no two batches will ever be the same; the flavor will depend on the tartness of the apples you use.)
  • Make-Ahead/Freezer-Friendly Instructions: The applesauce can be made up to 3 days ahead and refrigerated or frozen in an airtight container for up to 3 months.

3 1/2 pounds McIntosh apples (about 10), peeled, cored, and quartered
3/4 cup fresh lemon juice
3/4 to 1 cup sugar, or to taste

Steps:

  • In a large heavy saucepan combine the apples, 3/4 cup water, the lemon juice, and the sugar, bring the liquid to a boil, and simmer the mixture, stirring occasionally and breaking up the apples, for 20 minutes, or until the apples are tender and the mixture is the consistency of a chunky purée. Increase the heat and boil the mixture, stirring, for 4 minutes, or until it is thickened. (The mixture will spatter.) Serve the applesauce warm or chilled.

1 cup water
1 cup sugar
1/4 cup red-hot candies

Steps:

  • Place apples and water in a 5-qt. saucepan. Cover and cook over medium-low heat for 15-20 minutes or until tender. , Mash until sauce is desired consistency. Add sugar and candies. Cook, uncovered, until sugar and candies are dissolved; stirring frequently. Remove from the heat; cool. Refrigerate until serving.

2 pounds Golden Delicious apples, cored, peeled, sliced
2 cups water
2 tablespoons (or more) fresh lemon juice
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon (generous) ground cardamom

Steps:

  • Combine first 4 ingredients in heavy large Dutch oven; bring to boil over high heat. Reduce heat to medium; cover and simmer until apples are tender, about 20 minutes. Uncover and cook until mixture is thick, stirring frequently, about 10 minutes longer. Mash apples slightly with potato masher until chunky applesauce forms. Stir in sugar and spices. Cool. Add more lemon juice if desired. Transfer to bowl; cover and chill overnight. (Can be made 2 days ahead. Keep refrigerated.)

There is nothing better than homemade applesauce with hand-picked apples, and it is so easy to do! If you want chunky applesauce, use a potato masher to mash the cooked apples. If you prefer smooth apple sauce, run the cooked apples through a food mill. The key is adding a few strips of lemon peel to the apples while cooking. The lemon heightens the apple flavor. Make sure you use a good cooking apple like Golden Delicious, Granny Smith, Fuji, Jonathan, Mcintosh, or Gravenstein. Ready to serve as soon as you're done, either hot or refrigerated. Delicious with vanilla ice cream or vanilla yogurt. Freezes easily, lasts up to one year in a cold freezer.

  • Stir apples, water, brown sugar, white sugar, lemon juice, cinnamon stick, lemon zest, and salt together in a large pot. Place a cover on the pot and bring the mixture to a boil. Reduce heat to medium-low and cook until the apples are soft, 20 to 30 minutes.
  • Remove pot from heat. Remove and discard cinnamon stick and lemon zest strips. Mash apples with a potato masher.
