3/4 cup sugar
1/2 cup butter or margarine, softened
1 container (6 oz) Greek fat-free honey vanilla yogurt
2 eggs
2 cups Gold Medal™ all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon vanilla
1/2 teaspoon salt
1 apple, peeled, coarsely chopped (about 1 cup)
1/3 cup chopped walnuts
1 pouch Nature Valley™ oats 'n honey crunchy granola bars (from 8.9-oz box), crushed

Steps:

  • Heat oven to 325°F. Grease bottom only of 8x4-inch loaf pan with shortening or cooking spray; lightly flour.
  • In large bowl, beat sugar, butter, yogurt and eggs with electric mixer on medium speed until light and fluffy. On low speed, beat in flour, cinnamon, baking powder, vanilla and salt. Stir in apples and walnuts. Spoon batter into pan. Sprinkle crushed granola bar evenly over top of batter, pressing lightly into batter.
  • Bake 1 hour 5 minutes to 1 hour 10 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Loosen sides of loaf from pan; remove from pan to cooling rack. Cool completely, about 1 hour. Use serrated knife to cut loaf into 16 slices. Wrap tightly and store in refrigerator.

2 cups old-fashioned oats
3/4 cup whole almonds, halved
1/2 cup sweetened flaked coconut
1/2 cup raw cashews
1/3 cup (packed) brown sugar
1 1/2 teaspoons ground allspice
1 teaspoon ground cinnamon
1/4 cup (1/2 stick) unsalted butter
2 tablespoons honey
1 cup (packed) pitted dates, each cut crosswise into thirds

Steps:

  • Preheat oven to 300°F. Mix first 7 ingredients in large bowl. Melt butter with honey in heavy small saucepan over low heat. Pour over granola mixture and toss well. Spread out mixture on baking sheet. Bake 20 minutes, stirring occasionally. Add dates; mix to separate any clumps. Continue to bake until granola is golden brown, stirring frequently, about 15 minutes longer. Cool. Do ahead Can be made 2 weeks ahead. Store airtight at room temperature.

Steps:

  • Preheat oven to 300°F. Mix first 7 ingredients in large bowl. Melt butter with honey in heavy small saucepan over low heat. Pour over granola mixture and toss well. Spread out mixture on cookie sheet. Bake 20 minutes, stirring occasionally. Add dates; mix to separate any clumps. Continue to bake until granola is golden brown, stirring frequently, about 15 minutes longer. Cool (Can be made 2 weeks ahead. Store airtight at room temperature.)

4 cups rolled oats
1 to 1 1/2 cups nuts, coarsely chopped if necessary
1 cup seeds (sesame, flax, millet, chia, hemp, pumpkin, sunflower, or any combination)
1/2-2/3 cup brown sugar
1/2 cup extra virgin olive oil
1/2 cup real maple syrup or honey
1 T vanilla
1 t cinnamon (optional)
1 t salt (optional)

Steps:

  • Preheat oven to 325. Put parchment paper or foil on large rimmed baking sheet (15x17). Mix together oats, nuts, and seeds. Whisk together remaining ingredients and pour over oat mixture. Pour into prepared pan and pat down evenly and very firmly. Bake 35 minutes or so, until golden. Remove from oven and press down again while warm. Let cool then break into chunks. Millet - gives crunch and contains protein and iron. Chia - great source of Omega 3 and calcium. Hemp - great source of Omega 3 and complete protein.

1/2 cup canola oil
1/2 cup honey
3 cups rolled oats
1 cup sliced almonds
1/3 cup unsalted roasted sunflower seeds
1/3 cup sesame seeds
1/3 cup flax seed
plain low-fat yogurt, for serving

Steps:

  • Preheat the oven to 300F and position a rack in the center.
  • Line a large rimmed baking sheet with parchment paper; spray the paper with vegetable oil spray.
  • In a small saucepan, combine the brown sugar, oil and honey. Cook over low heat until just warmed through.
  • In a large bowl, stir the honey mixture into the rest of the ingredients until evenly distributed.
  • Spread the mixture on the prepared baking sheet and bake until golden, about 45 minutes.
  • Transfer the baking sheet to a rack and let the granola cool.
  • Invert the baking sheet onto a work sur­face and tap out the brittle. Peel off the parchment paper. Break the granola into chunks.
  • Return it to the pan and cool on a wire rack. Serve with the yogurt.
  • The granola can be stored in an airtight container for up to 4 days.

6 cups old-fashioned oats
1 1/2 cups sunflower nuts
1 1/2 cups slivered almonds
1 cup Gold Medal™ whole wheat flour
3/4 cup packed brown sugar
1 teaspoon salt
3/4 cup vegetable oil
1/2 cup honey
1/2 cup water
1 bag (7 oz) dried mixed fruit, chopped

Steps:

  • Heat oven to 300°F. In very large bowl, mix oats, sunflower nuts, almonds, flour, brown sugar and salt. In small bowl, beat oil, honey and water with wire whisk until well blended. Add liquid ingredients to dry ingredients, stirring until dry ingredients are moistened.
  • Spread on 2 ungreased large cookie sheets with sides. Place both cookie sheets in oven on 2 separate oven racks, one below the other.
  • Bake 20 minutes, stirring after 10 minutes. Reverse position of cookie sheets in oven; bake 10 to 20 minutes longer, stirring every 10 minutes, until golden brown. Cool completely on cookie sheets, about 30 minutes.

1 orange, zest of
1 tablespoon cinnamon
nutmeg
ginger
allspice, and
cardamom
1 tablespoon coconut oil (or butter)
4 cups rolled oats (NOT instant)
2 cups puffed cereal (or clustered cereal)
1/4 cup flax seed
1/2 cup slivered almonds, taosted
1/2 cup sweetened coconut (if using unsweetened add 1/4 cup brown sugar)
1/4 cup honey
1 teaspoon vanilla
1/4 cup dried blueberries
1/4 cup dried cranberries
1/2 cup currants or 1/2 cup raisins
1/2 cup salted peanuts

Steps:

  • preheat oven to 325.
  • combine juices, spices, zest, and oil in a small saucepan, bring to a boil, simmer and reduce by half (about 20 mins).
  • while that simmers combine the next 5 ingredients in a large bowl.
  • cool juice mixture 5 minutes then add honey and vanilla.
  • combine wet with dry ingredients and spread on 2 greased baking sheets in a thin, even layer (everything in but the dried fruit).
  • bake 30 minutes until golden and crunchy, stirring once
  • cool slightly and stir in dried fruit.
