8 cups chopped peeled tart apples (about 3-1/2 pounds)
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
2 teaspoons vanilla extract

Steps:

  • In a Dutch oven, combine apples, brown sugar and cinnamon. Cover and cook over medium-low heat 30-40 minutes or until apples are tender, stirring occasionally. Remove from heat; stir in vanilla. Mash apples slightly if desired. Serve warm or cold.

2 lbs granny smith apples, peeled, cored, and chopped
1 cup packed brown sugar
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cardamom
1 dash ground cloves
1 dash fresh ground black pepper

Steps:

  • Combine cider and apples in a large saucepan; bring to a boil over medium-high heat.
  • Cover, reduce heat, and simmer 20 minutes or until apples are tender, stirring occasionally.
  • Stir in sugar and remaining ingredients; simmer 12 minutes, stirring occasionally until mixture is thick. Cover and chill.
